2 onions, halved crosswise
1 head of garlic, halved crosswise
5 whole cloves
3 bay leaves
2 tablespoons kosher salt
1 tablespoon coriander seeds
4 teaspoons yellow mustard seeds
2 teaspoons dill seeds
2 teaspoons whole allspice
1 teaspoon black peppercorns
1 teaspoon crushed red pepper flakes
1/2 teaspoon cayenne pepper
1 lemon, halved
5 dashes (or more) hot pepper sauce, preferably Crystal
1 1/2 pounds unpeeled large shrimp (about 30)

Steps:

  • Combine first 12 ingredients and 8 cups water in a large pot; bring to a boil. Reduce heat to medium and simmer 20 minutes. Squeeze in juice from lemon; add lemon to pot. Add hot sauce and shrimp. Simmer, stirring occasionally, until shrimp are just cooked through, about 3 minutes.
  • Turn off heat, add 4 cups ice cubes, and steep for 5 minutes. Remove shrimp with a slotted spoon and place on a newspaper-lined baking sheet. Serve with additional hot sauce, if desired.

1 small onion, sliced
1 lemon, sliced
1 clove garlic, sliced
1 gallon water
1/2 cup salt
5 pounds shrimp, fresh or frozen
------------------------------
Peppy Seafood Sauce:
1/2 cup chili sauce
1/2 cup ketchup
3 tablespoons freshly squeezed lemon juice
1 tablespoon horseradish
1 tablespoon mayonnaise or salad dressing
1 teaspoon Worcestershire sauce
1/2 teaspoon grated onion
1/4 teaspoon salt
3 drops Tabasco
1 Dash of pepper

Steps:

  • Tie shrimp boil, onion, lemon, and garlic in a piece of cheesecloth. Place water in large container. Add salt and bag of seasonings. Cover and bring to boiling point over a hot fire. Add shrimp and return to boiling point. Cover and cook 5 minutes or until shrimp are tender. Drain. Note: If shrimp is to be used for salad or cocktails, cook as above, remove from water, peel, devein, and chill. Peppy Seafood Sauce: Mix ingredients well. Serve with shrimp.

1 lemon, quartered
5 tablespoons Creole or Cajun seasoning
2 1/2 teaspoons cayenne, divided
2 Turkish bay leaves or 1 California
4 garlic cloves
8 small boiling potatoes (about 2 inches)
4 ears of corn, shucked and halved
1 1/2 pounds large shrimp in shell
1/3 cup ketchup
1/3 cup mayonnaise
1 1/2 tablespoons bottled horseradish

Steps:

  • Squeeze lemon juice into 4 qt water in a 6- to 8-quart pot, then stir in lemon quarters, Creole seasoning, 2 teaspoon cayenne, bay leaves, garlic, potatoes, and 2 tablespoons salt (omit salt if it is the first ingredient in seasoning).
  • Bring to a boil, then simmer, partially covered, until potatoes are almost tender, 10 to 12 minutes.
  • Increase heat to high, then add corn and simmer, partially covered, 4 minutes. Stir in shrimp and cook until just cooked through, 2 to 3 minutes.
  • Meanwhile, stir together ketchup, mayonnaise, horseradish, and remaining 1/2 teaspoon cayenne.
  • Drain shrimp, potatoes, and corn and serve with sauce.

2 tablespoons coriander seed
2 tablespoons mustard seed
1 tablespoon red pepper flakes
1 tablespoon dill weed
1 tablespoon allspice
1 tablespoon salt
3 dried bay leaves
3 qt water
8 small red skin potatoes
3 ears corn, cut into thirds
4 smoked sausages, such as kielbasa, cut into rounds
2 lb shell-on shrimp
Juice of 1 lemon
fresh parsley, chopped
1 cup cocktail sauce, to serve
butter, melted, to serve

Steps:

  • In a small bowl, combine the coriander seeds, mustard seeds, red pepper flakes, dill weed, allspice, salt, and bay leaves.
  • Add the spice mix to a large pot with 3 quarts of water, then add the potatoes. Bring to a boil and cook for 15 minutes.
  • Add the corn and boil for 10 minutes. Add the sausage and cook for another 5 minutes.
  • Remove a potato from the pot and check to see if it's fully cooked. If not, continue to cook them until the potatoes are done.
  • Stir in the shrimp and lemon juice. Place the lid on the pot and cook for 3 minutes, or until the shrimp are pink and cooked through.
  • Drain the ingredients from the pot. Serve the shrimp boil on a newspaper-lined table, sprinkled all over with parsley, with cocktail sauce and garlic butter on the side.
