Curried Sausages image

Best ever curried sausages recipe. Just like grandma made!

600 grams thin beef sausages ((6 or 7 sausages))
1 medium onion (sliced)
1 tablespoon olive oil
1 carrot (peeled and slice diagonally)
1/2 cup peas
1 apple (grated)
1 banana (chopped into cubes)
1 tablespoon Keen's Curry Powder
3 tablespoon plain flour
1/4 cup desiccated coconut
2 1/2 cups chicken stock ((625 ml))
salt and pepper (to taste)

Steps:

  • Heat half of the oil in a large frying pan over med-high heat.
  • Add the sausages and cook for 5 minutes or until browned. Remove sausages from the pan and slice into pieces diagonally. Set aside.
  • Add the remaining oil to the frying pan and cook onion over medium heat until translucent.
  • Add curry powder and stir over heat until onion is well coated. Add flour and stir over heat for a couple of minutes. Add coconut and stir to combine.
  • Pour stock into frying pan and stir over heat for 30 seconds.
  • Add carrot, peas, apple and banana and simmer for 2-3 minutes.
  • Add sausages and simmer for 10 minutes, or until sauce thickens and sausages are cooked through. Add salt and pepper to taste.

3 tablespoons olive oil
1 tablespoon curry powder
½ teaspoon cumin seeds
1 eggplant, cubed
3 jalapeno peppers, seeded and minced
4 Yukon Gold potatoes, cubed
3 tomatoes, diced
½ teaspoon salt
½ teaspoon chili powder
½ teaspoon ground turmeric
¼ cup chopped fresh cilantro

Steps:

  • In a Dutch oven or large pot over medium heat, heat oil with curry powder and cumin until aromatic. Stir in eggplant, jalapenos, potatoes, tomatoes, salt, chili powder and turmeric. Cover and cook 30 to 45 minutes, adding water if necessary to maintain a stew-like consistency.
  • Sprinkle with cilantro before serving.

3 medium carrots
1 large turnip
1 medium sweet potato
3 tablespoons vegetable oil

Steps:

  • Peel all vegetables and cut into sticks app. 1/2 inch thick by 2-3 inches long.
  • Combine oil, curry paste and ginger. Add vegetables and mix together. Season with salt and pepper.
  • Place vegetables on a baking sheet, in a single layer. Bake at 400 F, stirring once or twice, for 30-35 minutes or until vegetables are browned and cooked through.

1 tbsp olive oil
1 whole large onion, diced
2 1/2 tsp kosher salt, divided
1 tbsp curry powder
1 tbsp brown sugar
1 inch piece fresh ginger, peeled and grated (about 1 tbsp)
3 whole garlic cloves, minced
1/4 tsp black pepper
1/4 tsp cayenne pepper (if you're spice sensitive, omit)
1/2 cup vegetable broth
6 whole baby yellow potatoes, diced
3 1/2 cups chickpeas, (drained and rinsed)
2 whole red bell peppers, (diced)
1 head of cauliflower, (cut into bite sized florets)
28 oz fire roasted tomatoes
10 oz baby spinach or baby kale
13.5 oz coconut milk, (full fat)
Cooked rice, quinoa or grains for serving (optional)

Steps:

  • Heat the oil in the bottom of a large soup pot over medium heat. Add the onion and 1 tsp of salt and sauté until translucent, about 5 minutes.
  • Add the curry, brown sugar, ginger, garlic, black pepper and cayenne and stir until fragrant, about 30 seconds. Pour in 1/2 cup of vegetable broth and scrape up and brown bits from the bottom of the pan.
  • Add the potatoes, chickpeas, peppers, cauliflower, tomatoes (with the juice) and an additional 1 1/2 tsp of salt. Stir to combine and bring to a boil. Cover and simmer over for 45 - 60 minutes, stirring occasionally, until the vegetables are tender.
  • Stir in the coconut milk. Add the baby spinach or kale and stir until the greens have wilted slightly. Add more salt and pepper to taste, if desired. Serve warm as-is or over your choice of cooked rice.

This easy Carrot Curry recipe combines carrots, lentils, coconut milk and warming curry spices to make an Indian dish that can be served over rice, with naan or plain by itself. Vegan and gluten-free.

4 carrots (450g/1lb)
1 onion
2 teaspoons garam masala
3 tablespoons oil (divided)
1 teaspoon mustard seeds (optional)
1 can 15 oz/400ml can of coconut milk
3/4 cup (150g) red lentils (rinsed and drained)
1 ¼ cups (300ml) water
2 tablespoons tomato paste
2 tablespoons curry powder (mild or medium)
½ teaspoon dried chilli flakes (to make it mild, increase for a spicier curry)
Salt and pepper
Juice of ½ a lemon
Cilantro (coriander chopped)
Black onion seeds
Dried chilli flakes

Steps:

  • Preheat the oven to 400F/200C.
  • Peel the carrots and chop into angled pieces, about 5cm thick. Peel the onion and cut into 4 wedges. Add them to a bowl with 2 tablespoons of the oil and the garam masala and toss to coat.
  • Spread out on a baking tray and roast for 25 minutes or until cooked and the edges begin to turn golden.
  • Meanwhile, prepare the remaining ingredients as you'll need to work quickly once the mustard seeds are cooked (or they'll scorch).
  • Heat the remaining 1 tablespoon of oil in a pan. Add the mustard seeds and fry for a minute or until the seeds start to pop.
  • Add the coconut milk, water, lentils, tomato paste, curry powder and chilli flakes and stir well. Bring to a boil, then reduce the heat and simmer for 20 minutes or until the lentils are cooked.
  • Season with salt and pepper and stir in the lemon juice.
  • Save a few carrot pieces to serve, and stir the rest into the curry, along with the onion wedges.
  • Serve the curry topped with the remaining carrots and sprinkled with cilantro/coriander, onion seeds and chilli flakes (if desired). Enjoy with rice, naan or or it's own.

1 jalapeno, seeded
2 cloves garlic
1/2 cup chopped onion
1 tablespoon lime juice
1/2 cup chicken stock
1 cup unsweetened coconut milk
Salt and pepper
