Ginger Powder (a little goes long)
Salt and pepper to taste
1 egg.
Olive oil.
Garlic 1/2 teaspoon
1 Teaspoon of butter.
Several spanish olives.
1 Cup of Frozen Peas (more or less)
1/3 cup of Water (or Chicken Broth- Its all the same to me, you'll only taste shrimp and curry by the time the dish is done)
Uncooked Peeled Shrimp (as much or little as you like)
Scallion (green onion - as much or little as you like)
2 cups cooked white rice. (salt to taste)

Steps:

  • Start by prepping: Chop green onions and seperate the white stalk from the green tops. Finely dice several spanish olives into very small pieces. Chop shrimp into 3-4 pieces depending on size of shrimp. Season shrimp with curry powder, ginger powder, salt and pepper to taste. Make 1 egg scrambled. scramble into very small pieces and set aside. Start by sauteing frozen pees in olive oil along with diced olives at medium heat. add garlic, green onions(white stalk) curry powder and ginger powder to taste. Finish off with the teaspoon of butter and 1/3 cup of water. In a seperate pan (frying pan/Wok) at medium heat add some olive oil just to coat pan and saute shrimp. once turning pink add remaining green onions & cooked egg. Move shrimp mix to one side of pan and add rice to the other. Once the rice is sizzling, add pea mixture to rice and fold shrimp into rice. let rice stir fry for at least 5-7 minutes. add more curry powder to taste or until it has a nice light color but no white is showing. This fried rice is not overwhelmingly curry, but it's your taste, so make it your own.

THAI STYLE FRIED RICE... WITH A CURRY FLAVOR, HMMM!!!

Thai Style Fried Rice... With a Curry Flavor, Hmmm!!! image

My husband once had this Thai fried rice that was not only spicy-hot, but had a distinct curry flavor. After visiting a Thai restaurant in Jacksonville and him exclaiming "That's it!" I knew I had to try and replicate it. We like things spicy-hot, so adjust chilies and red curry paste according to your taste buds!!

Provided by SquadLeader

Categories     One Dish Meal

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 17

4 cups of cold steamed jasmine rice
3 tablespoons peanut oil or 3 tablespoons vegetable oil
1 large onion, finely chopped
1 fresh red chili pepper, seeded and sliced
1 -2 fresh green chile (I use serrano)
1 -2 tablespoon Thai red curry paste (I use Thai Kitchen brand)
1 -1 1/2 teaspoon curry powder
1 pork chops or 1 chicken breast, finely diced
3 -4 garlic cloves, crushed
1 lb raw shrimp, shelled and de-veined (chopped if large) (optional)
2 eggs, beaten with
pepper, and
1 teaspoon soy sauce (I use Kikkoman brand)
2 -3 tablespoons of thai-style fish sauce (for the saltiness, I usually go easy and then let people add more themselves)
1/8-1/2 teaspoon pepper (to taste)
3/4-1 cup chopped green onion, including tops
according to your taste chopped fresh cilantro (coriander) or chopped fresh basil (to garnish)

Steps:

  • Be sure rice is completely cool, better cold!
  • Heat oil in wok over medium heat and stir-fry onions and chilies until soft.
  • Add the the red curry paste along with the curry powder to the pan and fry until the oil separates from the mixture.
  • Along with the garlic, add pork or chicken and fry until cooked.
  • Add shrimp and cook until they turn pink.
  • Add rice and toss thoroughly until coated with curry mixture and heated through.
  • If your wok is large enough, push rice to side and pour eggs into center. Cook and stir until eggs just start to set, then mix with rice, tossing on high until eggs are cooked. (Cook eggs in small fry pan until they just start to set if wok is not large enough, then add to rice.).
  • Sprinkle pepper and fish sauce evenly over top and lightly toss, remove from heat.
  • Now lightly toss the chopped green onions into the rice.
  • Have the fresh chopped coriander and basil available for personal preferences, along with fish sauce, soy sauce, and Thai-style chili sauce!

Number Of Ingredients 12

2 tablespoons sesame oil

1 pound uncooked medium shrimp, peeled and deveined
1 cup frozen peas and carrots
½ cup frozen corn
2 cloves garlic, finely minced, or more to taste

3 tablespoons low-sodium soy sauce, or more to taste
½ teaspoon salt, or to taste

Push vegetables to the side of the skillet, pour eggs into the other side, and cook to scramble, stirring as necessary, 3 to 4 minutes.

SHRIMP FRIED RICE

Shrimp Fried Rice image

Inspired by the fire-kissed flavor of Japanese steakhouse and hibachi fare, especially at the Kani House restaurants in Georgia, this quick fried-rice dish is a veritable comfort. Frying the shrimp first in oil, just until they're cooked, and reserving them to add back at the end means they stay tender. Plus, you're left with the most aromatic shrimp oil in which to fry the rice and vegetables. The shortcut of bagged frozen mixed vegetables comes in handy here, not least because they need only to be thawed by the skillet's high heat. The yum yum sauce, a mayo-ketchup dipping sauce that is ordinarily reserved for grilled hibachi meats, tastes fabulous splattered over the finished rice - not unlike how the artist Jackson Pollock flung paint on canvas.

Categories     dinner, easy, lunch, weeknight, grains and rice, seafood, main course, side dish

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 11

1/4 cup olive oil, plus more as needed
1 pound peeled and deveined medium shrimp, thawed if frozen
Salt
1/2 teaspoon garlic powder
1 medium onion, diced
1 1/2 cups frozen mixed vegetables (any mix of carrots, peas, corn and green beans)
6 cups cooked jasmine or other long-grain white rice, preferably cold and day-old
1/4 cup soy sauce, or to taste
2 tablespoons unsalted butter
4 large eggs
Yum Yum Sauce, for serving

Steps:

  • Heat a very large nonstick or cast-iron skillet over high. Add the olive oil and shrimp, and sprinkle with salt and the garlic powder. Cook, stirring occasionally, until the shrimp is no longer translucent and begins to turn golden at the edges, 2 to 4 minutes. With a slotted spoon, transfer the shrimp to a plate and set aside.
  • Add the onion and mixed vegetables to the shrimpy oil and cook, stirring occasionally, just until the onion loses its raw edge but is still crunchy, and the vegetables are mostly thawed, 1 to 2 minutes. Add the rice and soy sauce and cook, stirring occasionally, until well combined and the rice begins to crisp underneath where it meets the pan, 5 to 7 minutes. Taste and adjust the seasoning with more soy sauce as needed.
  • Scooch the rice to one side of the pan, lower the heat to medium and melt the butter on the empty side of the pan. Crack the eggs into the melted butter, break the yolks and stir vigorously to scramble the eggs, cooking just until they have set but are still tender, about 1 minute. Stir the soft scrambled eggs into the rice, add the reserved shrimp and any accumulated juices, then remove the pan from the heat.
  • Let the fried rice sit for a few minutes so that it can continue to crisp in the pan's residual heat. (If you haven't already made the yum yum sauce, this is the perfect time to do it.)
  • Drizzle most of the yum yum sauce over the fried rice in the skillet, leaving some back, if desired, to serve in a small dish on the side for dipping the shrimp.
