MY DAD'S SAUSAGE AND NOODLES
When my dad threw this dish together, he was living from paycheck to paycheck, and we were a day or two away from the next paycheck. He looked at what he had on hand, and this is the result. *The better you drain your sausage, the drier the dish will be. I prepare it very dry.

Steps:
- Brown sausage in a skillet, just like you would ground beef. Add onion and garlic to sausage as it cooks. When cooked, drain off fat. Set aside.
- At the same time, cook egg noodles according to package instructions.
- After draining noodles, return them to the pot and add the sausage, onion, garlic combination. Stir and mix well.
- Serve, topping with parmesan cheese and seasoning with salt and pepper to taste (I like red pepper flakes).

- In a large pot over medium heat, combine chicken, celery and their tops, carrot, onion and its peel, and pepper. Pour broth over and bring to a boil. Cover, reduce heat and simmer until chicken is tender and falls from the bone, about 45 minutes.
- While chicken is cooking, make noodles. In a large bowl, combine eggs, water, oil, salt and enough of the flour to make a stiff dough.
- Strain chicken stock, reserving meat, celery and carrots. Pull meat from bones and return strained stock and meat, celery and carrots to pot. Bring to a boil. Make noodles by cutting dough from a broth-dipped spoon or using scissors or your fingers to make small, chickpea sized, noodles and dropping them in the boiling water. When the noodles rise to the surface they are done.

DAD'S CHICKEN NOODLE SOUP
This recipe is easy and inexpensive, freezes well, and lasts for days (though in his recipe he says it lasts for 2 days). We keep it in a big pot in the fridge and microwave it all week. My dad posted this at everything2.com back in 2001, but I thought I'd post it here, too! I love it, and it was one of the first things I cooked when I moved away from home, partially because there isn't much skill involved. A college student in a new apartment can definitely handle sticking a chicken in a roasting pan and cutting up some veggies!

Steps:
- Cook one whole chicken. I use a blue roasting pan with lid, wash the chicken, place in pan, cover, into oven at 350° for an hour. Don't forget to flour the liver and cook it too, it's the best part. No need to add water or anything.
- When the chicken is done, set aside to cool.
- Cut up a pound of carrots and boil them for 10 minutes in a saucepan,
- then add six cut up stalks of celery to the boiling carrots and cook for 10 minutes longer.
- Drain the vegetables and rinse with cold water. Careful now, make sure the celery is a little crunchy.
- Start heating 8 cups of water in your large soup pot, when it boils add chicken bouillon in the proper amount and boil for a few minutes. Then set soup pot off heat.
- Add the cut up chicken meat that has been separated from the bones, and skin and other littly icky chicken parts.
- The chicken left over stuff then gets boiled for 10 minutes in a small saucepan with about 4 cups of water to leech out the true essence of chicken. That part isn't really necessary, but it tastes better when you do that step.
- The cooled carrots and celery are now added to the soup pot.
- Boil a 1 pound package of egg noodles, don't cook too long, al dente is the goal. Rinse in cold water and into the soup pot.
- By now the chicken parts are boiled, pour through a strainer and when the liquid cools some, the fat will rise to the top. Skim that off, and add that last 2 cups or so of liquid to the soup pot.
- That's about it. There's enough salt from the bouillon, I guess you could do herbs if you know about that, but I just let it cool a litle while and into the fridge. We microwave it to reheat, it's gone in 2 days. It feels healthy. Bon appetite.

HOISIN SAUCE NOODLES WITH CHICKEN
My father would make this super spicy chicken dish ("Hacked Chicken") where the chicken was gently poached without seasonings and then topped with a super spicy sauce. I always loved that dish; the chicken was like a blank canvas and this jarringly spicy topping just woke it up. In college, I created this dorm room hybrid, bulking it up for my roommates with a pound of pasta, and I randomly added hoisin sauce (because I had a jar of it). The dish looks to recreate that contrast of something searching for flavor and a sauce that offers nothing but. The textures of the pasta only amplify the dish. These are really great eaten right out of the bowl or made and left to marinate for a few hours or overnight. To that end, they make great leftovers, if you have any. A note about the chicken stock: I love enriching stock with chicken, so make sure you reserve and use the poaching stock from this recipe for a soup, risotto or pan sauce.

- Place the sesame seeds in a dry skillet over medium heat and toast until lightly browned, 2 to 3 minutes. Remove from the heat and set aside.
- Cook the chicken. In a medium skillet, bring the chicken stock to a simmer over medium-high heat. Submerge the chicken breasts in the stock, then reduce the heat to low and poach until the meat is completely cooked through and the internal temperature in the thickest part of the chicken breast registers 165 degrees F on a meat thermometer, 8 to 10 minutes. Transfer the chicken to a cutting board and let rest for 5 to 10 minutes. Use a sharp knife to cut the meat into 1/4-inch-thick slices. Set aside. Let the chicken stock cool and reserve for another use.
- Make the pasta. In a medium pot, bring 4 quarts of water to a boil over medium-high heat. Line a sheet pan with a clean kitchen towel and set aside. Season the water with salt until it tastes like sea water. Plunge the pasta in the water and cook until cooked but still chewy ("al dente"), 4 to 6 minutes. Place a colander in the sink. Reserve a little pasta water, then drain the pasta thoroughly. Shake the colander a few times to remove excess water. Spread the pasta on the towel so it cools more quickly. Gently use a second towel to cover and pat the pasta dry. (Removing the excess moisture assures that the sauce will have a full flavor effect on the noodles.)
- Make the sauce. In a large bowl, combine the hoisin sauce, soy sauce, ginger, sesame oil, vinegar and hot sauce. Adjust the seasonings. Stir in half of the scallions. Set aside.
- Add the pasta to the sauce and toss to coat evenly. Add some of the reserved water if necessary. Transfer the pasta and sauce to a large serving bowl. Set aside.
- Arrange the chicken on top of the pasta. Top the pasta with the reserved sesame seeds and remaining scallions.

- Heat oven to 350°F.
- Spray 2-3 quart casserole with non-stick cooking spray.
- Cook noodles as directed on package.
- Brown beef with garlic until cooked through.
- Drain.
- Add salt, sugar and tomato sauce and simmer for 5 minutes.
- Combine sour cream, cream cheese and onion.
- Layer 1/2 of the noodles then 1/2 of the meat mixture in casserole dish.
- Spread with sour cream mixture.
- Top with remaining noodles and the tomato sauce.

- Put water, bouillion cubes& chicken broth in large pot (5 quart Dutch oven or stock pot).
- Place on medium heat& bring to a boil.
- While broth mixture is heating up, chop celery, carrots& onion- add to broth.
- Add garlic, parsley flakes, salt& pepper (taste first before adding the extra salt- bouillion cubes can be very salty!) Bring broth back to a boil& let vegetables cook in the broth for approximately 10 minutes.
- Clean chicken breasts& remove any membranes, fat&/or tendons.
- Cut into 1/2-1 inch pieces.
- Add chicken pieces to broth/vegetable mixture& bring back to a boil.
- When chicken is cooked, add frozen noodles to pot; cover& simmer until noodles are tender& broth is thickened.
- Serve with biscuits- YUMMY!
