Steps:
- Rinse and dry the potatoes thoroughly. Cut into fine slices with the skin still attached. Rinse again and pat dry with kitchen paper.
- Heat the fat in a wide saucepan or deep fryer. It is hot enough when small bubbles appear on a submerged wooden spoon. Fry the potato slices for 2-3 minutes in a frying basket or a sieve. Do not allow them to brown. Remove from the fat and drain on absorbent paper.
- Increase the temperature of the fat slightly and fry the potato slices again for about 2 minutes, until golden brown and crispy. Remove, drain, season with salt and serve immediately.

DAD'S FAVOURITE FRIED POTATO SLICES
This is really my Dad's recipe which he taught me to make here in Orlando, FL - USA! We were too tired to cook anything fancy, so this seemed to be what dad wanted to eat with Potato Bread from Walgreens and some Heinz Tomato Ketchup on the side. I am amazed at how simple this recipe is and yet, how nice it tastes! In my opinion, this is the best thing you can make quickly when guests topple in all of a sudden. I also feel this makes for a nice picnic snack. This is a popular appetiser too in India! Enjoy!

Steps:
- Wash, peel and slice a medium-sized potato into thin concentric circles.
- Make sure you slice the potato thin and not thick.
- Pour 2 1/2 cups of water in a bowl.
- Add salt to taste (2-3 tsps) and mix well.
- Add the potato slices to this salted water.
- Mix well.
- Keep aside for 10 minutes.
- In a medium sized bowl, make a thick batter with your besan flour, red chilli powder, baking soda, salt and 1 cup of water.
- Now drain out the water from the potato slices.
- Dip the slices of potato in the gramflour batter.
- Allow the slices to be coated with the batter on both sides.
- Heat oil in a frying pan while you are doing this.
- Once the oil is hot, and the slices are ready, drop them gently into the oil.
- I ALWAYS make it a point to lower the flame/heat when adding the slices of potato to the hot oil.
- I dont want ANY MORE spillovers or kitchen fires!
- Let the slices fry in the oil.
- Once the slices are golden brown on one side, turn over and allow them to fry the same way till they are golden brown on the other side.
- Remove from the pan once fried and drain the excess oil on a clean paper kitchen towel.
- Transfer to a serving plate.
- Serve immediately (HOT) with Tomato ketchup and white/potato bread.
- You can also serve this with green chutney.
- Enjoy!
- NOTE: The secret of making this very well is to slice the potato thin and not thick.
- If you slice the potato thick, then, the potato will not cook and remain raw even once fried!

OVEN-BAKED POTATO SLICES
I created this recipe by accident. After already starting dinner one night I realized I didn't have enough potatoes on hand to make mashed, so I improvised and came up with these baked potato slices. It's quick and easy and they are delicious. Just line your cookie sheet with nonstick foil and clean up is a snap! Enjoy!

DAD'S KENTUCKY HOME FRIES
Yummy fried potatoes with the flavor of Kentucky. Easy to make while camping or at home. Leftovers store great in the fridge for a microwave breakfast on the go. For an East Coast twist, add diced green pepper.

Steps:
- Scrub your potatoes and slice each potato into 1/2-inch rounds, but keep them together in the potato shape.
- Place one potato on each foil square and top with one onion round each, and then the butter pat on top of the onion (the size of your pat of butter is up to you, but mine are about 1 1/2 tablespoons each.
- Now the fun part. I line up all of my spices in front of me and shake on as much as I like to each potato. Be very liberal--potatoes can take a lot of flavor.
- Then put each foil square in front of you with the potato lengthwise. Grab the front flap and the back flap and pull them together over the potato and then roll them down together until you get close to the potato. Then grab the sides and roll them upward so that none of the butter spills out during baking.
- Place them on a baking sheet in a 350-375° oven for about an hour, depending on how big your potatoes are and how thick you sliced them. You can check their doneness by sliding a knife into one through the foil--if it goes in smoothly, it's done.
- Enjoy!
