CARNE CON PAPAS
Carne con papas is a traditional Cuban dish, with tender succulent meat and potatoes bursting with flavors.

Steps:
- In a large hot skillet with oil, add pepper and onion. Sauté for 5 minutes, then add the garlic, paprika, cumin and salt. Cook for another 3 minutes.
- Add meat and brown on all sides for 5 minutes.
- Pour the tomato sauce and stir. Add the wine, water (or beef broth) and simmer, covered for at least 90 minutes, or until meat is tender.
- Add the potatoes, and capers. Cook for another 30 minutes or until the potatoes are tender.
- Serve by itself or with white rice.
CUBAN ROPA VIEJA
This is great shredded beef served on tortillas or over rice. Add sour cream, cheese, and fresh cilantro on the side.

Steps:
- Heat vegetable oil in a large skillet over medium-high heat. Brown the flank steak on each side, about 4 minutes per side.
- Transfer beef to a slow cooker. Pour in the beef broth and tomato sauce, then add the onion, bell pepper, garlic, tomato paste, cumin, cilantro, olive oil and vinegar. Stir until well blended. Cover, and cook on High for 4 hours, or on Low for up to 10 hours. When ready to serve, shred meat and serve with tortillas or rice.

FRITA CUBANO
Steps:
- For the quick mojo aioli: Whisk together the mayonnaise, sour cream, Dijon mustard, cumin, paprika, onion powder and garlic powder. Cover and refrigerate until ready to dress the burgers.
- For the burgers: Mix the ground beef, chorizo, cumin, onion powder, paprika, cayenne, salt and pepper in a large bowl, folding it over itself until thoroughly mixed. Let the meat rest 15 minutes at room temperature or for up to 4 hours refrigerated. Shape the meat into 12 balls all the same size, then lightly press them into chubby round patties.
- Preheat a large cast-iron skillet over medium-high heat and add the oil. When the oil is shimmering, add the onions and sweat until translucent, 3 to 4 minutes. Add the patties on top of the onions and press the patties onto the onions using a spatula. Let cook, 3 to 4 minutes; the onions will continue to cook and caramelize in the patty juices, adding flavor to the patties. Flip the patties and cook until firm, 2 to 3 more minutes. Remove from the heat and top with the Swiss cheese.
- Spread 1 tablespoon mojo aioli on the bottoms of each Hawaiian roll, then top with a patty and a generous handful of the Mini French Fries. Serve.
- Peel the potatoes, then shred them on the largest holes of a box grater. Soak in cold water to remove starch and prevent browning, 5 minutes. Strain in a colander and dry on paper towels.
- Heat the oil in a Dutch oven or deep skillet over medium-high heat until the temperature reaches 375 degrees F.
- Fry the potatoes in batches, moving the potatoes gently with a spider to keep them separated, until brown and crispy, about 4 minutes. Remove to a bowl, season with salt and toss to ensure all the fries are thoroughly seasoned.
CARNE FRIA AL ESTILO DE CUBA - (COLD MEATLOAF CUBAN STYLE)
This is another recipe that my friend Vicky Gomez gave me - it is for a type of meatloaf. She makes it by poaching it(wrapped in foil)and then serves it cold and sliced very thin on crackers or toasted pita or cocktail breads. I used most of her ingredients but instead of poaching it - I made it in the oven. We use this as an appetizer or canapés as well. Didn't allow for chilling or cooling times, which is approximately 10-12 hours.

Steps:
- Preheat oven to 300ºF.
- Mix all ingredients well by hand except for breading ingredients.
- Divide into 3-4 portions and roll each into a cylinder or log about 1-1/2"-2" in circumference.
- Place in plastic wrap; shape into logs and refrigerate for about 2 hours, until the meat is firm to the touch.
- First, roll the logs in beaten egg and then in Italian seasoned breadcrumbs or cracker meal or dry bread crumbs.
- Roll each log separately and wrap in foil making sure the seams are well sealed.
- Place on an ungreased baking sheet.
- Bake for an hour.
- Remove from oven DO NOT open foil.
- Allow to cool until it reaches room temperature.
- Refrigerate for 8 hours or overnight.
- Cut into thin slices and serve cold with toasted pita chips, Carr's water biscuits, or Parmesan rosemary crisps.
- As a nice topping, you can use a slice of hard boiled egg and a strip of red pimento on top.

- Pour out whatever fat you may render.
- Turn heat down to low; add tomato sauce and wine.

- Heat oil in a large skillet over medium heat. Add potato and carrot; saute for 3 minutes. Remove to a bowl.
- Add onion and garlic to the hot skillet and saute until slightly brown, 5 to 7 minutes. Add ground beef; cook and stir until browned and crumbly, 5 to 7 minutes. Add potato-carrot mixture back to the skillet with water, soy sauce, salt, and pepper. Cover and simmer until potatoes are tender, 5 to 8 minutes.
- Add bell pepper, raisins, and peas; cook until heated through, about 2 minutes. Serve over hot rice.
