A traditional refreshing raita that uses coconut milk in place of yogurt!It will be a little thinner than yogurt raita-do not use reduced fat coconut milk and make sure you chill it!If you make homemade coconut milk make it thick and creamy.From the Everything Indian Cookbook by Monica Bhide.Cook time is chill time and yield is approximate.

- Finely chop onion and tomato.Mince cilantro ,and peel and finely mince or grate fresh ginger.Combine all ingredients,adding salt to taste.

If you love the smell and taste of coconut than you'll love this dairy-free coconut rice pudding! And if dairy products upset your stomach, this is a lovely healthy alternative to using milk or cream. Sprinkle with cinnamon, add fruit or nuts, or serve plain.

Steps:
- Combine coconut milk, sugar, and vanilla extract in a medium pot and stir until combined. Add rice and bring to a boil over medium heat, about 5 minutes. Cook, gently stirring, until rice has softened and mixture has a slightly soupy but not too drippy consistency, about 20 minutes.
- Spoon into small serving dishes. Serve warm or place in refrigerator to chill.

- Grate the cucumber into a bowl. Sprinkle with 1 tsp of salt and set aside for 5 minutes. Then drain in a fine-mesh strainer and squeeze out any excess liquid with your hands. Set aside.
- Add the non-dairy yogurt to another bowl (*see recipe notes for tips on a thicker consistency). Then add in squeezed cucumber, pressed garlic, grated ginger, chopped coriander or parsley and mint and stir to combine. Season with cumin, salt, pepper, and lime or lemon juice to taste. Cover and refrigerate to marinate or serve immediately.
- Garnish with fresh mint and serve as a dip or sauce to Indian Samosas or your favorite dishes (see blog post above for serving suggestions).
LAUKI KA RAITA RECIPE (GHIYA RAITA) - WHISKAFFAIR

- Wash the lauki and peel it using a vegetable peeler. Peel it until you reach the soft flesh. Cut it into half and discard any big seeds. Grate the lauki using the middle hole of a box grater.
- Add the grated lauki to a pressure cooker. Add ½ cup water and pressure cook for 2 whistles on high heat. Remove the cooker from heat and add let the pressure release naturally. You can also cook the lauki in a pan over the stovetop or in an Instant Pot. Strain the lauki using a soup strainer and let it cool completely.
