1 cup sour cream
2 (16 ounce) cans refried beans
1 (4.5 ounce) can chopped green chiles, drained
1 (1.25 ounce) package McCormick® Taco Seasoning Mix
4 cups shredded Mexican blend cheese, divided

Steps:

  • Preheat oven to 350 degrees F. Microwave cream cheese and sour cream in large microwaveable bowl on HIGH 1 minute or until cheese is softened. Remove from microwave. Mix with wire whisk until smooth. Add refried beans, green chiles, Seasoning Mix and 2 cups of the cheese; mix well.
  • Spread bean mixture into 13x9-inch baking dish sprayed with no stick cooking spray. Sprinkle with remaining 2 cups cheese.
  • Bake 25 minutes or until cheese is melted. Serve with tortilla chips.

Formerly known as 'Neiman Marcus dip,' this million dollar dip tastes just like it sounds. I've had more than a few cheesy dips in my day, but this is by far the richest and most addictive one yet. And it's much cheaper than the name suggests! Served with crackers and garnished with green onions and bacon, this dip is sure to be a huge hit at your next party.

½ cup slivered almonds
6 slices bacon, or more as needed
1 ½ cups mayonnaise
1 (8 ounce) package sharp Cheddar cheese, shredded
½ cup thinly sliced green onions
1 pinch cayenne pepper

Steps:

  • Toast almonds in a saucepan over medium heat until lightly golden.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crispy and evenly browned, 8 to 10 minutes. Drain and cool slightly before chopping into bits.
  • Combine mayonnaise and Cheddar cheese in a mixing bowl. Toss in bacon, green onions, almonds, and cayenne. Stir with a spatula until combined. Wrap and chill in the fridge at least 1 hour before transferring to a serving bowl.

Steps:

  • Cook hamburger, onion and green pepper until hamburger is done. Drain well. Add green chilies, tomatoes, cheese and 1/2 stick margarine. Cook until all the cheese is melted. Serve with tortilla chips. I like this best when it has cooled just slightly because it thickens. One 2-pound piece flank steak
2 cups low-sodium beef broth
1/4 cup Worcestershire sauce
2 tablespoons tomato paste
2 tablespoons balsamic vinegar
4 sprigs fresh thyme plus 1/2 teaspoon leaves, finely chopped
2 cloves garlic, smashed
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
1 small red onion, thinly sliced (about 1 cup)
2 teaspoons all-purpose flour
4 soft hoagie buns, lightly toasted

Steps:

  • 1. Pierce the steak all over with a fork and place in a resealable plastic bag. Whisk 1/2 cup of the beef broth with 2 tablespoons of the Worcestershire, the tomato paste and balsamic vinegar in a small bowl until smooth. Pour over the beef and add the thyme sprigs and smashed garlic. Seal the bag and press the meat so it is covered by the marinade. Marinate, refrigerated, 4 to 6 hours.
  • 2. Preheat the broiler. Line the bottom of a broiler pan or rimmed baking sheet with heavy-duty aluminum foil. If using a baking sheet, place a rack over the foil. Remove the meat from the marinade and discard. Pat the meat dry and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Pour the remaining 1 1/2 cups beef broth into the bottom of the pan and place the meat on top of the broiler pan or rack. Broil about 6 minutes per side for medium-rare, or until a thermometer inserted in the center registers about 125 degrees F. Let the meat rest on the rack for 5 minutes, and then transfer to a cutting board and let rest an additional 5 minutes. Reserve the juices in the bottom of the broiler pan or baking sheet.
  • 3. While the meat rests, heat 1 tablespoon of the butter in a medium skillet over medium heat. Add the onions, chopped thyme and 1/4 teaspoon salt and cook, stirring, until the onions are very soft and lightly browned, about 10 minutes. Spoon into a bowl and return the skillet to medium heat. Add the remaining 1 tablespoon butter and cook until melted. Stir in the flour and continue to cook until lightly browned and smooth, 1 to 2 minutes. Pour in the reserved juices from the broiler pan and the remaining 2 tablespoons Worcestershire sauce and cook until smooth and hot.
  • 4. Thinly slice the meat against the grain and lightly season the slices with salt. Divide the sliced meat and sauteed onions among the hoagie rolls. Serve with the pan sauce on the side for dipping.

I have no idea why my mom named this 'dirt dip' but it is one of my favorites. I hate black olives and still scarf this down. Every time I make it, it is gone in a flash. It looks like a salsa, and is good on tortilla chips, but doesn't tase like any salsa you've ever tried.
