Steps:
- In a medium pan over low heat, cook bacon until just crisp, turning occasionally. Remove bacon from pan, and let drain on paper towels. Reserve some of the fat and chop the bacon.
- To make the vinaigrette, finely chop anchovies and garlic and transfer to a medium bowl. Add mustard, vinegar, salt, olive oil, 1 tsp bacon or pancetta fat, olive oil, salt, and black pepper and whisk until combined. Taste for balance and add more oil or vinegar if desired.
- In a large bowl combine greens and vinaigrette and toss until greens are well coated. Top with hard boiled eggs, 1/4 cup of the chopped bacon, and croutons or bread and serve.

- Cut greens into 1 1/2-inch lengths and transfer to a large bowl.
- Cook bacon in a large heavy skillet until golden and crisp, then transfer to a cutting board, reserving fat in skillet. Finely chop bacon.
- Whisk together shallot, vinegar, salt, and pepper in a small bowl, then whisk in 3 tablespoons hot bacon fat. Toss greens with enough warm dressing to coat and sprinkle with bacon. Serve immediately.

Steps:
- Gather your dandelion greens and wash them thoroughly, then drain off excess water.
- Place your eggs in a pot with cold water and bring to a boil. Cook them for about 10 minutes, until hard-boiled. Drain and cool, then peel and slice.
- Cook potatoes with peel on in a pot of water. Once cooked through, drain them, peel and slice them.
- In a pan, fry bacon strips until crispy on both sides. Remove from pan and place on a paper towel to drain. Once cooled, crumble into smaller pieces.
- To the same pan, add the sliced potatoes and roast them on the bacon grease on both sides, until slightly crispy.
- Combine your salad: in a bowl, place your dandelion greens, add sliced hard-boiled eggs, fried bacon crumbles, and potatoes. Season to taste with salt and pepper and dress with vegetable oil and balsamic vinegar.
- Toss to combine and serve.

ROASTED BEET AND DANDELION GREENS SALAD

- Preheat oven to 400 degrees. Place beets on foil lined with parchment. Drizzle with 1 tablespoon oil; season with coarse salt. Wrap foil into a sealed pouch. Roast beets on a rimmed baking sheet until easily pierced with a skewer, about 45 minutes. Carefully open pouch; when beets are cool enough to handle, rub off skins with paper towels. Halve beets (or quarter, if desired).
- Arrange beets and dandelion greens in a serving dish. In a skillet, bring remaining 3 tablespoons oil and cumin seeds to a simmer; toss with beets and greens. Sprinkle with sea salt and serve.
