DANISH OATMEAL COOKIES

Steps:
- Preheat an oven to 325 degrees F (165 degrees C).
- Line a baking sheet with parchment paper.
- In a bowl, mix the flour, baking soda, and salt.
- In a separate large bowl, mix the butter, 1 cup confectioners' sugar, and vanilla until the mixture is smooth and creamy.
- Stir in the flour mixture; gently stir in the oatmeal and pecans and lightly mix until combined.
- With a spoon, drop about 1 scant tablespoon of dough per cookie onto the prepared baking sheet.
- Bake in the preheated oven until lightly browned, about 20 minutes.
- Let cool completely before sprinkling cookies with confectioners' sugar.

Steps:
- Cream butter and sugar together well.
- Slowly mix in milk.
- Add remaining ingredients.
- Mix well.
- Chill for 1 hour.
- Roll out fairly thin on lightly floured board.
- Cut into 2 1/2-inch rounds.
- Place on ungreased baking sheets.
- Bake in 350°F oven for 8-10 minutes.
- Cool.
- Fill with Date Filling, to form a sandwich.
- For date filling: combine dates, sugar and water in saucepan.
- Bring to a boil.
- Simmer, stirring often, until mushy and thickened.
- Add more water if too dry, or simmer longer if too runny.
- Cool and spread between cookies.
DANISH GROD | CHIA OATS PORRIDGE
Steps:
- In a medium size saucepan, combine milk, oats and salt. Bring to a boil, lower the heat to medium-low and cook stirring constantly, about 3~5 minutes.
- Stir in the chia seeds and cook stirring for another 3~5 minutes, or until the mixture thickens.
- In a small saucepan, combine berries, maple syrup and ground cardamom. Cover and cook till the berries are warmed through and turn soft, about 3~5 minutes.
- To serve, divide the oats porridge equally between the two bowls, top with the berries and Enjoy!!
