⅓ cup white sugar
1 egg
1 teaspoon vanilla extract
1 ⅛ cups sifted all-purpose flour
½ teaspoon baking soda

1 cup macadamia nuts, chopped
1 ¼ cups semisweet chocolate chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease 2 large cookie sheets with vegetable shortening.
  • Cream the butter and sugars together in a large bowl. Beat in the egg and vanilla extract until well blended. Sift together the flour, baking soda, and salt; gradually blend into the batter. Stir in the chopped macadamia nuts and chocolate chips. Drop by rounded teaspoonfuls onto the cookie sheets, about 2 inches apart.
  • Bake in preheated oven for 10 to 12 minutes, or until the cookies are golden brown. Remove from the oven, and transfer the cookies to cooling racks.

These classic white chocolate macadamia nut cookies are thick and chewy. They're packed full of macadamia nuts and white chocolate, and topped with a sprinkle of sea salt.

6 tbsp unsalted butter (room temperature)
1/2 cup brown sugar (packed)
1/4 cup granulated sugar
1 1/2 tsp vanilla extract
1 egg
1 egg yolk
1 cup +2 tbsp all purpose flour
1/4 tsp baking soda
1/2 tsp kosher sea salt
1/2 cup macadamia nuts (chopped)
1/2 cup white chocolate chips (OR chopped white chocolate)
2 tsp sea salt flakes (optional)

Steps:

  • In a large mixing bowl (with a hand mixer) or the bowl of a stand mixer, combine the butter, sugars and vanilla extract. Beat on medium for 1 minute until light and creamy. Add egg and yolk, mix until combined.
  • In a small mixing bowl, whisk together the flour, baking soda and salt. With mixing speed on low, gradually add the dry ingredients to the wet ingredients, mix just until combined.
  • Using a wooden spoon or rubber spatula, fold in the chopped macadamia nuts and white chocolate. Cover the bowl with plastic wrap or transfer to an air-tight container. Refrigerate for 1 hour.
  • Preheat oven to 350 degrees. Using a standard size cookie scoop, place 12 balls of dough on a lined baking sheet.
  • Place in the oven to bake for 10-12 minutes or until the edges turn golden brown in color. Remove from the oven and sprinkle with a pinch of sea salt (if desired). Let cookies cool on the sheet for 3 minutes before transferring to a wire rack to cool completely.

1/2 cup unsalted butter, (softened)
2/3 cup brown sugar
1/3 cup white sugar
1 egg
1 1/2 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp espresso powder, (optional; espresso powder brings out the flavor of chocolate without adding any coffee flavor)
1 cup + 2 Tbsp all purpose flour
1/3 cup dark chocolate cocoa powder, (regular unsweetened cocoa powder is fine as well)
1/2 cup roasted and salted macadamia nuts, (roughly chopped)
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips

Steps:

  • Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
  • In a large bowl, beat butter (with a hand mixer or standing mixer) until light and fluffy. Add in brown sugar and granulated, beating the mixture until well combined.
  • Next, add in egg and the vanilla extract. Beat until combined.
  • Add in salt, espresso powder, and baking soda; mix until combined.
  • In a separate bowl, mix flour and cocoa powder together. Slowly incorporate the dry ingredients into the wet ingredients, mixing until combined.
  • Add in macadamia nuts, white chocolate chips and semi-sweet chocolate chips. Mix until combined.
  • With a medium cookie scoop (about 2 Tbsp of dough per cookie), scoop the dough and spread evenly on the cookie sheets, about 2 inches apart.
  • Bake for 15-16 minutes, or until cookies are done.

CARAMEL GLAZE:
12 caramel candies
2 tablespoons heavy whipping cream

Steps:

  • In a bowl, cream butter, sugar and vanilla. Add egg. Combine flour, baking powder, baking soda and salt; add to creamed mixture and mix well. Fold in chocolate chips and nuts. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10 to 12 minutes or until golden. ½ cup sweetened flaked coconut
1 cup flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup butter, softened
½ cup light brown sugar
½ cup white sugar
1 egg, at room temperature
½ teaspoon vanilla extract
½ cup white chocolate chips
3 ounces macadamia nuts, coarsely chopped

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Place oatmeal in a blender and process into a fine powder. Transfer to a large bowl and set aside.
  • Place coconut in the blender and process until finely chopped. Add to the bowl with the oatmeal. Add flour, baking powder, baking soda, and salt to the bowl; mix well and set aside.
