Steps:
- Cut dates and prunes into small pieces. Boil dates, prunes, raisins, and water for 5 minutes. Add margarine. Mix and set aside to cool.
- Preheat oven to 350 degrees F (180 degrees C).
- Mix the eggs, vanilla and nuts. Add to the fruit mixture. Sift the flour, baking soda and salt and add to the fruit mixture. (If you want a spicy bar add 1/2 tsp. Cinnamon and 1/4 tsp. Nutmeg to the flour.)
- Spread in 7 x 11 inch pan and bake for 25-30 minutes.

- In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

Steps:
- In 2-quart saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.
- Heat oven to 400°F. Grease bottom and sides of 13x9-inch pan with shortening.
- In large bowl, stir brown sugar and butter until well mixed. Stir in flour, oats, baking soda and salt until crumbly. Press half of the crumb mixture evenly in bottom of pan. Spread with filling. Top with remaining crumb mixture; press lightly.
- Bake 25 to 30 minutes or until light brown. Cool 5 minutes in pan on cooling rack. Cut into 6 rows by 6 rows while warm.

DATE AND PRUNE SQUARES
This is a really delicious variation of the old time favourite. I like a lot of filling so I increased the amount of fruit by one cup over the original recipe. You may also use non-dairy margarine to make this, as I did, and it will still turn out fine.

Steps:
- In a covered bowl, let the dates and prunes steep in the boiling water for about 10 minutes, to soften, then transfer to a saucepan.
- Add the sugar and let simmer for about 10 minutes, until thickened.
- Stir in the cinnamon and nutmeg and let cool.
- In a food processor, pulse together the oats, flour, sugar, salt and baking soda until the oats are chopped, 5 to 10 pulses.
- Pulse in the butter until crumbly, then pulse in the cold water until the mixture comes together.
- Press two-thirds into a greased 13" x 9" cake pan and spread with the date mixture.
- Mix the remaining oat mixture with the almonds, if using, and sprinkle over the date mixture, pressing lightly.
- Bake in a 350 degree F oven until light golden, 35 to 40 minutes.
- Let cool in the pan before cutting into squares.

- . Chop the prunes and then combine them with the 1cup sugar, 1teaspoon cinnamon and 1cup water. Cook until thickened, about 8 minutes on medium stirring constantly to prevent burning. Cool thoroughly.
- Cream the 1/2 cup softened butter and 1 cup brown sugar.
- Add the 1 3/4 cups flour, 1 1/2 cups oatmeal, 1 teaspoon salt and 1teaspoon of the cinnamon. Blend until crumbly.
- Put 1/2 the amount into a buttered 13 X 9 X 2 pan. Press down in pan.
- Spread the cooled filling over the bottom crust.
- Sprinkle the remaing crumb mixture over the filling, pressing down lightly.
- Bake for 27 minutes at 350* until light brown. Cut into squares when cooled. May be stored in the refrigerator . Let come to room temperature before serving.

- In a food processor, combine almonds, rolled oats and salt, then pulse into a fine crumble.
- Cut dates and prunes into small pieces, add to food processor and mix a few more seconds.
- Melt coconut oil in a double boiler and add to food processor, mixing well. Reserve ¾ of this dough.
- In a square 8 inch (20 cm) baking dish lined with parchment paper, press remaining dough.
- In the food processor, combine dates, prunes, water and vanilla extract, mixing into a smooth uniform paste. Add water if necessary.
- Using a spatula, spread mixture evenly on top of crust inside baking dish.
- Top with reserved dough, spreading evenly with spatula. For raw bars, simply refrigerate 1 hour or overnight.
- For baked bars, preheat oven to 350°F (180°C). Bake bars 20 minutes.
- Whether serving raw or cooked, cut mixture into squares and transfer to an airtight container. Keep in the fridge or freezer.

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. In a small bowl, whisk flour, oats and salt; gradually add to creamed mixture, mixing well. Pour over crust; spread evenly. Bake until golden brown, 24-28 minutes. Cool completely in pan on a wire rack. Cut into bars.
