Tender collard greens and smoked ham hocks cooked in the slow cooker. The smokiness from the ham hocks is infused through the collard greens and it's cooked low and slow for tender, flavorful greens with a fraction of the effort!

2 lbs collard greens (washed & cut)
2 large smoked ham hocks
1 large yellow onion (chopped)
1 tbsp minced garlic
2 large jalapeno peppers (chopped)
1 tsp seasoning salt
1 tsp black pepper
2 tbsp apple cider vinegar
8 cups water

Steps:

  • Place the ham hocks, onions, garlic, and peppers into the slow cooker, then turn pour in 8 cups of water.
  • Put the lid on the slow cooker, then set on high for 6 hours.
  • After 4 hours the ham hocks should be tender and falling off of the bone.
  • Start adding in the collard greens.
  • Sprinkle in the salt & pepper, then add in the apple cider vinegar.
  • Give everything a stir, then let cook for two more hours.
  • Serve and enjoy!

2 large bunches collard greens
3 tablespoons olive oil
1 onion, sliced
2 garlic cloves, smashed
2 bay leaves
1 smoked ham hock
2 quarts chicken broth, warm
2 tablespoons cider vinegar
1 teaspoon sugar
Kosher salt and freshly ground black pepper

Steps:

  • To prepare the greens: cut away the tough stalks and stems from the collards, and discard any leaves that are bruised or yellow. Wash the collards thoroughly to remove the grit, 2 or 3 times, until the water runs clear. Dry thoroughly. Tear the leaves into large pieces.
  • Place a large pot over medium heat and add the olive oil. Add the onion, garlic, bay leaves, and ham hock. Cook until the onions are soft and starting to brown, about 8 to 10 minutes. Pack in the greens, pushing them down into the pot. Add the broth, vinegar, and sugar. Bring up to a boil turning the greens over occasionally with a wooden spoon as they wilt. Lower to a simmer, cover the pot, and let cook for 45 minutes. Taste the "pot liquor" (broth) and check the seasoning, add salt and pepper. Cover and let cook for 15 more minutes. Remove the bay leaves and serve.

3 tablespoons olive oil
2 tablespoons minced garlic
5 cups chicken stock
3 ham hocks
½ cup olive oil
4 bunches collard greens - rinsed, trimmed, and chopped
1 (16 ounce) package cubed fully cooked ham
4 teaspoons red pepper flakes
salt and ground black pepper to taste

Steps:

  • Heat 3 tablespoons olive oil in a skillet over medium heat. Add garlic; cook and stir until light brown, about 2 minutes. Transfer to a slow cooker and add chicken stock and ham hocks. Cover and cook on Low, 8 hours to overnight.
  • Remove 2 cups of liquid from the slow cooker and set aside. Heat 2 tablespoons olive oil in a skillet over medium heat. Add 1/4 the collard greens, 1/4 the cubed ham, and 1 teaspoon red pepper; season with salt and black pepper. Pour in 1/2 cup of the reserved liquid. Cook, stirring occasionally, until greens are bright green and slightly wilted, about 4 minutes. Transfer mixture to the slow cooker. Repeat 3 more times with the remaining greens, ham, red pepper, and slow cooker liquid.
  • Cook on Low until flavors meld, 4 to 6 hours.

4 bunches collard greens - rinsed, trimmed and chopped
1 pound ham shanks
4 pickled jalapeno peppers, chopped
½ teaspoon baking soda
1 teaspoon olive oil
ground black pepper to taste
garlic powder to taste

Steps:

  • Fill a large pot about 1/2 full with water. Place the ham shanks into the water, and as many of the greens as you can fit. Bring to a gentle boil.
  • As soon as the greens begin wilting, start transferring the greens to the slow cooker. Alternate layers of greens with the ham shanks and jalapeno until the slow cooker is full. Stir in the baking soda, olive oil, pepper and garlic powder. Cover, and bring to a boil on High. Reduce heat to Low, and cook for 8 to 10 hours.

8 cups collard greens ((2 large bunches, remove ribs and stems and discard, rip the greens into bite sized pieces))
2 ham hocks or shanks
12 oz. package bacon (sliced and cooked, drained (save the bacon drippings))
3 Tbsp. bacon drippings (grease) ((from above bacon) optional)
1 Tbsp. brown sugar
3 cups chicken broth
2 Tbsp. apple cider vinegar
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. red pepper flakes

Steps:

  • Add the collard greens to the slow cooker.
  • Add the ham hocks or shanks on top of the greens.
  • Add the cooked bacon, bacon drippings, brown sugar, chicken broth, apple cider vinegar, salt, pepper and red pepper flakes.
  • Place the lid on the slow cooker.
  • Cook on HIGH for 4 hours or LOW for 7-8 hours or until tender. Try to keep the lid on the entire cooking time or they won't tenderize.
  • Remove the ham hocks or shanks and shred any meat you can find on them. Add the meat to the greens and stir.
  • Serve with the broth (pot liquor) and your other favorite southern dishes.

1 pkg collard greens, stemmed and chopped
1 medium onion, chopped
1 clove garlic, minced
1 small dried anaheim chile, stemmed and chopped
1/2 tsp kosher salt
1/2 tsp cruched red pepper flakes
1/4 tsp pepper
1 ham hock
chicken stock and water

Steps:

  • 1. Stem and chop collard greens. Stem and chop anaheim chile. Chop onion. Heat 1tsp olive oil in skillet; saute chile 30 sec ;saute onions 2 min ; saute garlic 30 sec.
  • 2. Spray inside of crock-pot with cooking spray. Place chopped greens into crock-pot. Add ham hock. Add onion mixture, salt, pepper and red pepper flakes. Cover with a mixture of 50%/50% water/chicken broth to 1 inch above greens.
  • 3. Cook on LOW 6 hours. Remove and discard ham hock.

2 pounds collard greens (3 bundles)
1 turkey leg (pre-cooked/smoked (this ingredient is optional))
1 cup yellow onion (diced)
2 cups tomatoes (diced)
4 cups chicken stock (use vegetable stock to make vegan and vegetarian-friendly)
1 tablespoon apple cider vinegar
3 tablespoons Worcestershire sauce
2 tablespoons honey
1 tablespoon hot sauce (or sriracha sauce)
2 cloves garlic (minced)
½ teaspoon Old Bay seasoning (or Cajun or Creole seasoning)
1 teaspoon red pepper flakes
1 tablespoon salt
1 teaspoon black pepper

Steps:

  • Clean the collard greens and cut off the stems.
  • Then roughly chop the leaves in half through the midline and then into bite-sized pieces.
  • Open the Instant Pot lid and add the wet ingredients (chicken stock, vinegar, Worcestershire sauce, honey, and hot sauce to the stainless-steel inner pot.
  • Next, add the onion, tomatoes, garlic, Old Bay or Cajun seasoning, red pepper flakes, salt, pepper, and stir to combine the ingredients.
  • Finally, add the collard greens, followed by the cooked turkey leg.
  • Press down to sink the greens as much as you can into the liquid broth.
  • Close the Instant Pot lid (make sure the valve is up - in the position for sealing) and pressure cook on high for 15 minutes.
  • When the cooking time is finished, allow a natural pressure release for at least 15 minutes.
  • To open the Instant Pot lid, move the valve to 'venting' and manually release any remaining pressure, if applicable.
  • Serve Black folks' soul food collard greens right away and enjoy!

Steps:

  • Heat the olive oil in a heavy skillet until hot. Season the chicken with salt and pepper and add it to the skillet. Cook until well browned on all sides, and skin crisps up nicely, cooking in batches if necessary.
  • While the chicken is cooking, add the chopped greens, onions, lemon juice, and red pepper flakes to your slow cooker pot. Cover with the broth and add a pinch of salt and pepper.
  • Add the seared chicken pieces to the slow cooker pot, and nestle them into the greens. Add enough broth or water to ensure that the chicken is covered at least halfway.
  • Cover and cook on low heat for 6-8 hours, until chicken is cooked through and greens are tender.

1 1/2 cups beef stock

  • Wash collard greens and remove stems. Place in crock pot on low.
  • In a skillet, cook bacon pieces until crispy.
  • Add onion, garlic, salt and pepper and cook until onions are translucent.
  • Add the brown sugar and cook for about 1 minute more.
  • Add the bacon / onion mixture to the crock pot.
  • Pour in the beef stock.
  • Add the ham hock.
  • Cook on low for 4 hours.
  • After 4 hours, remove the ham hock and shred the meat off the bone, adding it back to the crock pot.
  • Keep cooking on low for another 3-4 hours and serve.
  • This will not be bitter, so no vinegar or extra sugar is needed. If you aren't on a rotation diet and you can use other seasonings, I'd suggest using a teaspoon of Tony Cachere's in place of the salt.
