CROCK-POT COLLARD GREENS AND HAM HOCKS
Tender collard greens and smoked ham hocks cooked in the slow cooker. The smokiness from the ham hocks is infused through the collard greens and it's cooked low and slow for tender, flavorful greens with a fraction of the effort!

Steps:
- Place the ham hocks, onions, garlic, and peppers into the slow cooker, then turn pour in 8 cups of water.
- Put the lid on the slow cooker, then set on high for 6 hours.
- After 4 hours the ham hocks should be tender and falling off of the bone.
- Start adding in the collard greens.
- Sprinkle in the salt & pepper, then add in the apple cider vinegar.
- Give everything a stir, then let cook for two more hours.
- Serve and enjoy!
SLOW-COOKED COLLARD GREENS

Steps:
- To prepare the greens: cut away the tough stalks and stems from the collards, and discard any leaves that are bruised or yellow. Wash the collards thoroughly to remove the grit, 2 or 3 times, until the water runs clear. Dry thoroughly. Tear the leaves into large pieces.
- Place a large pot over medium heat and add the olive oil. Add the onion, garlic, bay leaves, and ham hock. Cook until the onions are soft and starting to brown, about 8 to 10 minutes. Pack in the greens, pushing them down into the pot. Add the broth, vinegar, and sugar. Bring up to a boil turning the greens over occasionally with a wooden spoon as they wilt. Lower to a simmer, cover the pot, and let cook for 45 minutes. Taste the "pot liquor" (broth) and check the seasoning, add salt and pepper. Cover and let cook for 15 more minutes. Remove the bay leaves and serve.
SLOW COOKER SOUTHERN COLLARD GREENS
This is the only version my kids will eat! Easy to make in the slow cooker and makes the house smell yummy. Goes great with fried chicken (or anything fried!) or any Southern dish, and it's a perfect holiday side dish that's easy to prepare.

- Heat 3 tablespoons olive oil in a skillet over medium heat. Add garlic; cook and stir until light brown, about 2 minutes. Transfer to a slow cooker and add chicken stock and ham hocks. Cover and cook on Low, 8 hours to overnight.
- Remove 2 cups of liquid from the slow cooker and set aside. Heat 2 tablespoons olive oil in a skillet over medium heat. Add 1/4 the collard greens, 1/4 the cubed ham, and 1 teaspoon red pepper; season with salt and black pepper. Pour in 1/2 cup of the reserved liquid. Cook, stirring occasionally, until greens are bright green and slightly wilted, about 4 minutes. Transfer mixture to the slow cooker. Repeat 3 more times with the remaining greens, ham, red pepper, and slow cooker liquid.
- Cook on Low until flavors meld, 4 to 6 hours.

- Fill a large pot about 1/2 full with water. Place the ham shanks into the water, and as many of the greens as you can fit. Bring to a gentle boil.
- As soon as the greens begin wilting, start transferring the greens to the slow cooker. Alternate layers of greens with the ham shanks and jalapeno until the slow cooker is full. Stir in the baking soda, olive oil, pepper and garlic powder. Cover, and bring to a boil on High. Reduce heat to Low, and cook for 8 to 10 hours.

- Add the collard greens to the slow cooker.
- Add the ham hocks or shanks on top of the greens.
- Add the cooked bacon, bacon drippings, brown sugar, chicken broth, apple cider vinegar, salt, pepper and red pepper flakes.
- Place the lid on the slow cooker.
- Cook on HIGH for 4 hours or LOW for 7-8 hours or until tender. Try to keep the lid on the entire cooking time or they won't tenderize.
- Remove the ham hocks or shanks and shred any meat you can find on them. Add the meat to the greens and stir.
- Serve with the broth (pot liquor) and your other favorite southern dishes.

CROCK-POT COLLARD GREENS
Greens are a stapple for every southern cook. If you want to make this a low fat side dish substitute a turkey neck for the ham hock.

- 1. Stem and chop collard greens. Stem and chop anaheim chile. Chop onion. Heat 1tsp olive oil in skillet; saute chile 30 sec ;saute onions 2 min ; saute garlic 30 sec.
- 2. Spray inside of crock-pot with cooking spray. Place chopped greens into crock-pot. Add ham hock. Add onion mixture, salt, pepper and red pepper flakes. Cover with a mixture of 50%/50% water/chicken broth to 1 inch above greens.
- 3. Cook on LOW 6 hours. Remove and discard ham hock.
BLACK FOLKS SOUL FOOD COLLARD GREENS RECIPE
Steps:
- Clean the collard greens and cut off the stems.
- Then roughly chop the leaves in half through the midline and then into bite-sized pieces.
- Open the Instant Pot lid and add the wet ingredients (chicken stock, vinegar, Worcestershire sauce, honey, and hot sauce to the stainless-steel inner pot.
- Next, add the onion, tomatoes, garlic, Old Bay or Cajun seasoning, red pepper flakes, salt, pepper, and stir to combine the ingredients.
- Finally, add the collard greens, followed by the cooked turkey leg.
- Press down to sink the greens as much as you can into the liquid broth.

- Combine all ingredients in a 6-quart oval slow cooker. Cover and cook on LOW 9 hours. Carefully remove ham hocks and all bits of bone before stirring greens after cooking. Cool ham hocks, and thoroughly remove all fat and bone; return meat to slow cooker. Stir into greens, and serve.

- Heat the olive oil in a heavy skillet until hot. Season the chicken with salt and pepper and add it to the skillet. Cook until well browned on all sides, and skin crisps up nicely, cooking in batches if necessary.

- Wash collard greens and remove stems. Place in crock pot on low.
- In a skillet, cook bacon pieces until crispy.
- Add onion, garlic, salt and pepper and cook until onions are translucent.
- Add the brown sugar and cook for about 1 minute more.
- Add the bacon / onion mixture to the crock pot.
- Pour in the beef stock.
- Add the ham hock.
- Cook on low for 4 hours.
- After 4 hours, remove the ham hock and shred the meat off the bone, adding it back to the crock pot.
- Keep cooking on low for another 3-4 hours and serve.
- This will not be bitter, so no vinegar or extra sugar is needed. If you aren't on a rotation diet and you can use other seasonings, I'd suggest using a teaspoon of Tony Cachere's in place of the salt.

- Fill up a clean sink halfway with cool water. Add 2 Tbsp of white vinegar. Put the whole collard leaves into the water, stir them for a couple minutes with your hands or a big spoon - this removes any of the sand or dirt that may have stuck to the leaves.
