Plenty of herbs blend with four kinds of cheese for this scrumptious spread. Using reduced-fat ingredients makes it a little lighter. -Deb Lavengood, New Palestine, Indiana

2 packages (8 ounces each) reduced-fat cream cheese
1/4 cup reduced-fat mayonnaise
1/2 cup shredded reduced-fat cheddar cheese
1/4 cup shredded Parmesan and Romano cheese
2 teaspoons finely chopped leek (white portion only)
3/4 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon dried chives
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon onion powder
1/4 teaspoon seasoned salt
1/4 teaspoon dried oregano
1 teaspoon plus 2 tablespoons minced fresh parsley, divided
2 tablespoons finely chopped walnuts
Assorted crackers

Steps:

  • In a large bowl, beat cream cheese and mayonnaise until smooth. Stir in cheeses, leek, Worcestershire sauce, garlic powder, chives, pepper flakes, onion powder, seasoned salt, oregano and 1 teaspoon minced parsley., Cover and refrigerate at least 1 hour. Shape into a ball and roll in walnuts and remaining parsley; wrap in plastic. Refrigerate at least 1 hour longer. Serve with crackers.

2 pkgs 8oz Philadelphia Cream Cheese (16oz total)
1 pkg Deb's Garlic Lovers Seasoning Packet
1 cup Dried Cranberries
1 cup Chopped Walnuts

Steps:

  • Mix 2 packages of 8oz Cream Cheese (16 oz total) with 1 package of Deb's Garlic Lovers Seasoning Packet.
  • Roll mixture into 1 large ball.
  • Mix Cranberries and Chopped Walnuts in a large bowl.
  • Roll ball in the Cranberries and Walnuts to coat the outside of it.
  • Place in refrigerator and chill for 1 hour. Start 1 Hour Timer
  • Serve with your favourite crackers.

This delicious and easy cheese ball recipe is decorated festively for Easter. Serve with crackers, pieces of toasted baguette, or veggie sticks.

2 (8 ounce) packages cream cheese, softened
2 cups shredded sharp Cheddar cheese
1 (1 ounce) package dry ranch dressing mix
¼ cup minced fresh chives
¼ cup real bacon bits
¼ cup finely chopped pecans

Steps:

  • Mix together cream cheese, Cheddar cheese, and dressing mix in a bowl until well combined.
  • Form into a large egg-shaped ball in the center of a serving plate.
  • Cut wax paper into strips. Lay them across the cheese ball, leaving spaces every two strips where the cheese is exposed. Sprinkle chopped chives on the exposed cheese, lightly pressing the chives down so they stick to the cheese. Remove the wax paper strips directly below the chives. Cover the newly exposed cheese stripes with bacon bits. Repeat by removing the final set of wax paper strips and adding chopped pecans in the remaining spaces.
  • Refrigerate for at least 2 hours, or overnight.

From the Oct. 1995 Midwest Living Magazine. Welliver's Buffet famous cheese ball. Cooking time is chill time in refrigerator. Welliver's is a well-known restaurant in east central Indiana. Their buffet is something to behold, so I was very excited when I saw some of their recipes in the Midwest Living magazine several years ago.

2 (8 ounce) packages cream cheese, softened
3 ounces blue cheese, crumbled (approx. 3/4 cup)
1 teaspoon garlic powder
1 dash Worcestershire sauce
1 dash hot sauce
1/2 cup pecans, chopped
cracker

Steps:

  • In a bowl, combine all ingredients, except the nuts and crackers. Beat till well combined.
  • Cover and chill for 3 to 4 hours.
  • Shape mixture into a ball or log. Roll in pecans to coat. Store, covered, in the refrigerator.
  • Serve with crackers.

This is a snap to make! I make many of these for Christmas gifts. Wrap the Cheese Ball in plastic wrap. Gather at the top and secure with curling ribbon. I tie on a festive cheese knife, which are very inexpensive and come in sets of 4. Once my bow is tied, I curl the ribbon ends. Add a sleeve of your favorite crackers and you have a great gift.People look forward to receiving these every year.

1 envelope - dry italian salad dressing mix
- chopped pecans or walnuts for garnish

Steps:

  • In a medium sized bowl, beat the cream cheese until it is smooth and creamy.
  • Add the packet of Italian Salad Dressing Mix and beat until well blended.
  • Shape into a ball or log on a sheet of wax paper.
  • Spread the chopped nuts on another sheet of wax paper. Roll the cheese ball on the nuts, covering the cheese ball well and shapping into a firm ball or log as you go.
  • Refrigerate until ready to serve. Enjoy!

2 (8 ounce) packages cream cheese
3 tablespoons butter, softened
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 pinch cayenne pepper
1 cup diced roasted red peppers
2 cups fresh white corn kernels
4 ounces blue cheese, crumbled
½ cup chopped toasted almonds
½ cup sliced fresh chives
1 cup minced crisp-cooked bacon

Steps:

  • Combine cream cheese, butter, salt, pepper, cayenne, roasted red peppers, corn, and blue cheese in a mixing bowl. Stir together until evenly and thoroughly combined. Cover with plastic wrap and refrigerate until completely chilled, about 1 hour.
  • Use a sorbet scoop or spoon to form tablespoon-sized balls of cheese mixture; place on a lined sheet pan. Cover and refrigerate until firm, about 1 hour. A perfect shape doesn't matter at this point since these will be rolled in the coatings to complete the process.
  • Transfer chilled cheese balls into the coatings of your choice, such as almonds, chives, and bacon, and roll around to cover. Once coated, roll each briefly in your hands to achieve the final ball shape. Transfer to a plate or pan and keep chilled in the refrigerator until ready to serve.
