MAC 'N CHEESE WITH BACON AND CHEESE



Mac 'N Cheese with Bacon and Cheese image

Number Of Ingredients 14

Kosher salt
1 pound elbow macaroni
4 cups milk
2 or 3 sprigs thyme
4 cloves garlic, smashed and divided
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
5 1/2 cups shredded sharp white Cheddar
Freshly ground black pepper
1/4 cup chopped flat-leaf parsley
4 slices bacon, cut crosswise into thin strips
1 large onion, diced
2 garlic cloves, smashed
Leaves from 1/4 bunch fresh thyme

Steps:

  • Bring a pot of salted water to a boil over high heat. Add the macaroni and cook for 8 to 9 minutes, until al dente. Drain.
  • Preheat the oven to 400 degrees F.
  • In a small saucepan heat the milk with the thyme sprigs and 2 garlic cloves. Melt the butter in a large, deep skillet over medium-high heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to keep lumps from forming. Strain the solids out of the milk and whisk it into the butter and flour mixture. Continue to whisk vigorously, and cook until the mixture is nice and smooth. Stir in the 4 cups of the cheese and continue to cook and stir to melt the cheese. Season with salt and pepper. Add the cooked macaroni and the parsley and fold that all in to coat the macaroni with the cheese mixture. Scrape into a 3-quart baking dish and sprinkle with the remaining 1 1/2 cups cheese. Bake for 30 minutes, or until hot and bubbly.
  • While that bakes, heat a saute pan. Add the bacon, render the fat and cook until crispy. Add onion, garlic and thyme leaves and cook for about 5 minutes to soften the onion. Season with salt and pepper.
  • To serve, scatter the bacon mixture over the mac and cheese. Use a big spoon to scoop out servings, making sure you get some of the smoking bacon mixture on each spoonful.

This macaroni and cheese takes on a subtle coastal flair with the addition of shrimp. I used cooked salad shrimp as I found the size comparable to the elbow macaroni.

1 tablespoon unsalted butter
1 tablespoon all-purpose flour
¾ cup 1% milk
½ cup shredded sharp Cheddar cheese
1 ½ tablespoons sour cream
½ teaspoon Cajun seasoning
1 cup frozen salad shrimp
2 tablespoons panko bread crumbs
2 tablespoons shredded sharp Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pour 5 cups water into a saucepan. Cover and bring to a boil over high heat. Add macaroni and boil until tender yet firm to the bite, about 8 minutes.
  • Meanwhile, melt butter in a saucepan over medium heat. Stir in flour until a smooth paste is formed. Slowly pour in milk, stirring to incorporate. Add 1/2 cup Cheddar cheese, sour cream, and Cajun seasoning. Drain macaroni and stir into the sauce. Add frozen shrimp and stir to combine.
  • Pour macaroni mixture into an oval au gratin dish. Top with panko bread crumbs and 2 tablespoons Cheddar cheese.
  • Bake in the preheated oven until bubbly and golden, about 20 minutes.

Kosher salt and freshly ground black pepper
1 pound elbow macaroni
1/4 cup all-purpose flour
2 cups whole milk
1/2 cup heavy cream, plus more if needed
4 ounces cream cheese
One 16-ounce block sharp Cheddar, shredded
1 1/2 cups extra-sharp Cheddar, cut into 1/2-inch cubes
1 teaspoon granulated garlic
2 large eggs
1/2 cup sour cream

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9- by 13-inch baking dish with butter.
  • Bring a large pot of salted water to a boil, add the macaroni and cook, stirring occasionally, until al dente, about 7 minutes. Strain in a colander, run cold water over the pasta and set aside.
  • Using the same pot the macaroni was cooked in, melt the 1/4 cup butter over medium heat, add the flour and whisk until smooth. While whisking constantly, slowly add the milk and then the cream. Bring to a simmer, add the cream cheese and the shredded Cheddar except for 1/2 cup and stir until melted. Stir in the granulated garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Remove the cheese sauce from the heat and stir in the macaroni. Season with salt and pepper.
  • Whisk together the eggs and sour cream in a small bowl and then fold into the macaroni and cheese. Spread the mixture into the prepared baking dish, fold in the cubed Cheddar and top with the reserved 1/2 cup shredded Cheddar. Bake until the top just begins to brown, about 20 minutes. Loosely cover with foil and bake 10 to 15 minutes more.

2 cups milk (or light cream or half milk, half cream)
1/4 teaspoon paprika
1 pinch cayenne pepper
200 g old cheddar cheese, grated
2 pinchs salt, to taste
2 pinchs white pepper, to taste
200 g cooked shrimp, patted dry
1/2 cup crabmeat (fresh, frozen or 120 g can, well drained)
1/4 cup fresh basil
3 tablespoons parmesan cheese, grated

Steps:

  • In a pot of salted water, cook macaroni until tender, about 8 - 10 minutes.
  • Preheat oven to 350. Lightly butter an 8 x 8 baking dish and set aside.
  • In a large sauce pot, add the butter over medium heat. Add the flour and cook, stirring for 2 minutes. Using a whisk, slowly add the milk and cook until it thickens.
  • Remove the sauce from heat and mix in the cream, paprika, cayenne, salt and pepper. Add 3/4 of the cheese. When the macaroni is cooked, drain it well. Add to it, the shrimp, crab and basil and gently add the white sauce. Spoon macaroni mixture into the prepared baking dish.
  • Top with the remaining chedar and parmesan cheese.
  • Bake for 25 - 30 minutes or until the top is lightly golden.

This is a rendition of a macaroni and cheese dish a local restaurant makes. It's so rich and decadent I only make it once per year. It's not a "dieter's friend". You can use any pasta shape you like.

2 cups penne pasta
2 tablespoons butter
½ cup heavy whipping cream
½ cup half-and-half
½ teaspoon garlic salt
1 cup shredded Gruyere cheese
1 cup shredded mozzarella cheese, divided
½ cup shredded Parmesan cheese
½ cup Oaxaca cheese, shredded
cooking spray

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.

Delicious combination of flavors. My madre-in-law made this at a party. I made this a romantic meal for the hubby since it can also go well with beer or wine beverages. It is super simple gourmet!

2 lbs raw shrimp, headless, peeled, and deveined
1 lb bacon, cut in 1 in. pieces
1/2 lb monterey jack cheese, grated
2 tablespoons margarine
garlic powder
ground black pepper
30 very thin corn tortillas (or thin as you can get)

Steps:

  • Fry bacon on med-hi until crispy (when grease is foaming) because they will rehydrate when other ingredients are added. Trust me, you don't want rawlike bacon in your dish!
  • Drain grease from pan, leave a little for cooking.
  • Add margarine, melt.
  • Add shrimp, sprinkle garlic powder and dash of black pepper. Stir constantly because shrimp cooks fast. Just when all shrimp turn pink, turn off heat so they do not overcook.
  • Top with cheese.
  • Cook corn tortillas on range (when tortilla starts to bubble, it's ready.) If you have an electric stove, you can cook the tortillas on a skillet or nonstick pan.
  • Scoop shrimps into tortillas and enjoy! This goes well with pinto beans that you can re-fry with the bacon grease you just separated.
