DECONSTRUCTED LASAGNA

In this case, "deconstructed" is really just a trendy way of saying easy! Instead of taking the time to layer the pasta, sauce, and several kinds of cheeses, I toss everything together to make a lasagna bowl that satisfies, with all of the same, indulgent components but far fewer calories and effort. Fresh marjoram has a minty, oregano-like flavor that is a nice change of pace from basil or dried Italian herbs-but really, any kind of fresh herb is delicious in tomato sauce, so use what's handy.

Number Of Ingredients 12

8 ounces lasagna noodles, broken into smaller pieces
2 teaspoons olive oil
1 medium yellow onion, halved and very finely chopped
3 garlic cloves, very finely chopped or pressed through a garlic press
2 teaspoons kosher salt
1/2 teaspoon ground black pepper
2 tablespoons roughly chopped fresh marjoram
Pinch of red pepper flakes
1/2 pound lean ground beef
2 cups canned whole tomatoes, chopped (or canned chopped tomatoes)
1/2 cup quartered bocconcini (mozzarella balls) or 1/2-inch pieces of fresh mozzarella
2 tablespoons finely grated Parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to the package instructions until al dente. Drain in a colander and set aside.
  • To a large, deep skillet or pot set over medium heat add the olive oil, onion, garlic, 1 teaspoon of the salt, and the black pepper, and cook until the onion is soft and sticky, -stirring often, for 6 to 7 minutes. Stir in the marjoram and red pepper flakes, and once they are fragrant, after 30 seconds, stir in the beef, using a wooden spoon to break it into small pieces. Cook, stirring often, until the beef is no longer pink, about 5 minutes.
  • Add the chopped tomatoes and remaining 1 teaspoon salt, reduce the heat to medium-low, and simmer the sauce until it reduces slightly, about 10 minutes.
  • Divide half of the cooked lasagna noodles among 4 bowls. Top each with some mozzarella and sauce, then divide the remaining noodles over the top. Add some more mozzarella and sauce, and serve sprinkled with Parmesan cheese.

No-cook noodles save prep time for this lasagna recipe. Since these lasagna noodles will expand during baking, avoid overlapping them. The noodles will touch the sides of dish upon baking.

1 pound ground beef
1/2 cup chopped onion
2 jars (24 ounces, one 14 ounces) spaghetti sauce
1 can (15 ounces) crushed tomatoes
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon fennel seed, crushed
1 teaspoon minced garlic
9 no-cook lasagna noodles
2 cups sliced zucchini
1 cup ricotta cheese
1 carton shredded Asiago cheese

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the spaghetti sauce, tomatoes, basil, oregano, fennel and garlic. Bring to a boil. Reduce heat; cover and simmer for 10 minutes., Spread 1-1/2 cups meat sauce in a greased 13x9-in. baking dish. Top with three noodles. Spread 1-1/2 cups sauce to edges of noodles. Top with half of the zucchini, 1/2 cup ricotta cheese and 1/2 cup Asiago cheese. Repeat layers. Top with remaining noodles, sauce and Asiago cheese., Cover and bake at 375° for 30 minutes. Uncover; bake 10-15 minutes longer or until bubbly. Let stand 5 minutes before cutting.

This recipe is the easiest lasagna I've ever made, especially since you do not boil the noodles. It's meatless, yet my family (carnivores included) enjoys it. This is based on a recipe I found in the Betty Crocker Low Fat Low Cholesterol cookbook. VARIATIONS: For those who aren't watching their weight, feel free to use the full-fat versions of the cheeses. Also, you may use regular lasagne noodles instead of whole wheat.

nonstick cooking spray
8 ounces shredded fat free mozzarella cheese or 8 ounces part-skim mozzarella cheese
2 cups shredded zucchini
1 cup fat-free ricotta cheese or 1 cup low-fat ricotta cheese
1/4 cup grated fat-free parmesan cheese
2 1/4 cups meatless sauce (may use a 27 oz. can of sauce)
9 uncooked whole wheat lasagna noodles
1/4-1/2 cup boiling water

Steps:

  • Heat oven to 350°.
  • Spray rectangular baking dish, 11x7x1-1/2 inches with nonstick cooking spray.
  • Reserve 1/2 cup of the mozzarella cheese.
  • Mix remaining mozzarella cheese, the zucchini, ricotta cheese and Parmesan cheese.
  • Spread 3/4 cup of the spaghetti sauce in prepared baking dish; top with 3 of the noodles.
  • Spread half of the cheese mixture over noodles in dish; top with 3/4 cup of the spaghetti sauce.
  • Repeat with 3 noodles, remaining cheese mixture and 3/4 cup of the spaghetti sauce.
  • Arrange remaining 3 noodles on top.
  • Sprinkle boiling water over all.
  • Cover with aluminum foil and bake about 1 hour or until noodles are tender and most of the liquid is absorbed.
  • Remove from oven; sprinkle with reserved mozzarella.
  • Let stand 15 minutes (or longer to get the desired firmness) before cutting.

It's made with thinly sliced zucchini in place of noodles, and it calls for ground turkey for the meat sauce, but it still contains everything you love about the classic dish.

2 zucchinis
1 cup grated parmesan cheese
2 tablespoons olive oil
½ large white onion
2 cloves garlic
1 lb ground turkey
28 oz crushed tomato
2 teaspoons dried basil
2 teaspoons dried parsley
2 teaspoons dried oregano
½ teaspoon salt
½ teaspoon pepper
1 tablespoon tomato paste
1 bay leaf
16 oz ricotta cheese
1 egg
1 tablespoon fresh parsley, minced
¼ cup grated parmesan cheese
¼ teaspoon salt
½ teaspoon pepper

Steps:

  • Cut the ends off of the zucchini, and cut in half, lengthwise.
  • Using a vegetable peeler, peel long strips of zucchini (these will be your "noodles") and set on a baking sheet lined with paper towels.
  • Dab zucchini strips with a paper towel to absorb the excess moisture.
  • In a large pot, add olive oil, onions, and garlic. Cook until translucent, about 4-5 minutes.
  • Add ground turkey, and cook for another 4-5 minutes, or until the turkey has browned slightly.
  • Pour in crushed tomatoes, basil, parsley, oregano, salt, pepper, tomato paste, and a bay leaf. Cover and let simmer for 30 minutes.
  • Preheat oven to 375˚F (190˚C).
  • In a bowl, combine ricotta cheese, egg, parsley, parmesan, salt, and pepper. Mix until well combined.
  • Using a baking dish, layer turkey sauce, zucchini strips, ricotta mixture, and parmesan. Repeat until there are 3 layers total, ending with the turkey sauce and topping that with parmesan cheese.
  • Bake for 50 minutes (times and temperatures may vary depending on the oven).
  • Let rest for at least 20 minutes.
  • Enjoy!

12 ounces rigatoni pasta
1 large diced onion
3 garlic cloves, minced
2 tablespoons olive oil
3/4 lb lean ground beef
1/2 teaspoon cumin
1/2 teaspoon chili powder
salt and pepper
1 (24 ounce) diced tomatoes with juice
1 teaspoon crushed red pepper flakes
2 tablespoons fresh basil (or 2 teaspoons dried)
12 ounces ricotta cheese
1/2 large zucchini, sliced and quatered (about 1 1/2 cups)
1 cup parmesan cheese

Steps:

  • Preheat oven to 350 degrees. In a large pot, parboil the rigatoni (about 5 minutes in boiling water), drain and set aside.
  • In the same large pot, saute the onion and garlic in the olive oil until the onions are transucent. Add the beef and seasonwith the cumin, chili powder, salt and pepper. When the meat is browned, add the tomatos. Mix in the crushed red pepper and basil. Add the pasta, ricotta, zucchini and all but 1/4 cup of parmesan. Mix well.
  • Transfer to a 2 3/4 quart baking dish and evenly distribute the reamaning parmesan on top of the casserole. Bake uncovered for 45 minutes. It is important not to over cook this dish, or the zucchini will become soggy.
