This is a favorite Christmas recipe of my father's and husband's. It's fairly simple to do and tastes good.

½ cup butter, softened
4 cups shredded Cheddar cheese
2 cups all-purpose flour
1 teaspoon salt
¼ teaspoon ground red pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a cookie sheet.
  • In a large bowl cream butter and cheese. Stir in flour and salt; mix well. On a lightly floured surface, roll the dough out to 1/2 inch in thickness. Cut into 2 inch strips and sprinkle with ground red pepper. Place strips on prepared cookie sheet(s) 1 1/2 inches apart.
  • Bake in preheated oven for 10 to 15 minutes, or until crisp.

2 sheets (1 box) frozen puff pastry (such as Pepperidge Farm), defrosted overnight in the refrigerator
Flour, for dusting
1 extra-large egg
1 tablespoon water
1/2 cup freshly grated Parmesan
1 cup finely grated Gruyère cheese
1 teaspoon minced fresh thyme leaves
1 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Roll out each sheet of puff pastry on a lightly floured board until it is 10- by 12-inches. Beat the egg with 1 tablespoon of water and brush the surface of the pastry. Sprinkle each sheet evenly with 1¿4 cup of the Parmesan, 1¿2 cup of the Gruyère, 1¿2 teaspoon of the thyme, 1¿2 teaspoon of the salt, and some pepper. With the rolling pin, lightly press the flavorings into the puff pastry. Cut each sheet crosswise with a floured knife or pizza wheel into 11 or 12 strips. Twist each strip and lay on baking sheets lined with parchment paper.
  • Bake for 10 to 15 minutes, or until lightly browned and puffed. Turn each straw and bake for another 2 minutes. Don't over bake or the cheese will burn. Cool and serve at room temperature.

DEDE'S CHEESE STRAWS

When I was growing up, our nibbles were most often the cheese straws made by my grandfather, whom I called Dede. Dede was a tall, strapping man who knew the secret of a long, happy marriage to his iron-willed wife. As he put it, his blue eyes twinkling, he always got in the last word: "Yes, beloved." Dede would layer his cheese straws in a tin lined with sheets of butter-stained waxed paper smelling of sharp cheese and peppery cayenne. Everyone loves these cheese straws-I once caught a party guest stuffing his pockets with them. A cookie press is needed to make these savory crackers. I prefer the version that resembles a caulking gun, although a turn-crank one will do. Some hard-core cheese straw makers invest in the electric version!

Yield makes about 6 dozen

Number Of Ingredients 5

1 1/2 cups all-purpose flour
1/2 teaspoon fine sea salt
Pinch of cayenne pepper, or to taste
1/2 pound sharp Cheddar cheese, at room temperature, freshly grated
1/2 cup (1 stick) unsalted butter, at room temperature

Steps:

  • Position the oven racks in the top and bottom thirds of the oven. Preheat the oven to 375°F. Butter 2 baking sheets.
  • To make the dough, in a small bowl, combine the flour, salt, and cayenne. Set aside. In a heavy-duty mixer fitted with the paddle, cream the cheese and butter on medium speed until smooth and well combined. Gradually add the flour mixture. Mix on low speed until smooth. (The dough can also be made in the bowl of a large food processor: grate the cheese with the grating blade, then transfer the cheese to a bowl and insert the metal blade. Pulse the dry ingredients to combine, then add the butter and cheese. Process until smooth.) Cover the bowl with plastic wrap and set aside to rest for about 15 minutes.
  • To shape the dough, work it in your hands; it should be soft and pliable (like Play-Doh). Shape the dough into a cylinder and pack it into a cookie press fitted with the serrated ribbon disk.
  • Holding the cookie press at an angle to one of the prepared baking sheets, press the trigger twice, dragging the press away to make a long straw the length of the baking sheet. Repeat until you've covered the sheet, spacing the ribbons of dough 1 inch apart. Using a butter knife or offset spatula, cut each ribbon into 1- to 2-inch pieces. Repeat with the remaining dough and the other baking sheet. (If your cookie press extrudes the dough in fits and spurts, simply pick up the dough and reuse.)
  • Bake the cheese straws, rotating the baking sheets once, until lightly browned on the edges, about 20 minutes. Remove the baking sheets to a rack to cool slightly. Using an offset or slotted spatula, remove the individual cheese straws to cool completely.
  • Store the cheese straws at room temperature in an airtight container between sheets of waxed paper. They will keep for 2 to 3 weeks.

Three 10-ounce bricks sharp Cheddar cheese, shredded cold then left at room temperature
1 cup (2 sticks) butter, softened
4 cups sifted all-purpose flour
2 teaspoons salt
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper
Dash of garlic powder
Cooking spray

Steps:

  • Preheat the oven to 325 degrees F.
  • Put the softened cheese and butter in the bowl of a heavy-duty electric mixer. Using the heaviest mixer paddle attachment, beat until the mixture has the consistency of whipped cream, 15 to 30 minutes.
  • In a large bowl, sift 3 cups of the flour with the salt, black pepper, cayenne pepper and garlic powder. Gradually add the seasoned flour to the cheese mixture by large spoonfuls, beating well after each addition. Add the remaining 1 cup unseasoned flour incrementally until the dough is somewhat stiff but still soft enough to be pushed through a cookie press; you may not need to add all the flour.
  • Lightly spray 4 cookie sheets with cooking spray. Put a portion of the dough into a cookie press fitted with the star tube and press the dough onto a cookie sheet in long strips that run the length of the pan. Repeat until the pan is full. Bake until straws are golden brown and crisp, about 20 minutes.
  • With your hands or a sharp knife, break or cut the long strips into 3-inch lengths. Use a flat, thin spatula or an egg turner to remove the cheese strips from the pan. Allow them to cool on a wire rack. When they are completely cool, serve or store in a tightly covered container.

1 sheet frozen puff pastry (from a 17.3-ounce package, such as Pepperidge Farm), thawed
1 tablespoon butter, melted
1 cup grated Cheddar
1 teaspoon cayenne
3/4 cup grated Parmesan
1 large egg

Steps:

  • Line a baking sheet with parchment.
  • Lightly roll out the sheet of pastry into a 10-by-12-inch rectangle, then brush with the melted butter. Sprinkle over the Cheddar, cayenne and 1/2 cup of the Parmesan. Using the rolling pin, press the cheese into the pastry. Cut the pastry into 12 strips. Twist each strip about 5 times and transfer to the prepared baking sheet. Place in the freezer for 20 minutes.
  • Preheat the oven to 400 degrees F.
  • Mix together the egg and 1 teaspoon water in a small bowl, brush the strips with the mixture and sprinkle over the remaining 1/4 cup Parmesan. Bake until golden brown and puffed, 10 to 12 minutes.

SPICED PUFF PASTRY CHEESE STRAWS

Number Of Ingredients 7

2/3 cup freshly grated Parmigiano-Reggiano cheese (about 2 ounces)
1/4 teaspoon cayenne pepper
1/4 teaspoon Hungarian paprika
1/2 teaspoon coarse salt
1 large egg
2 tablespoons water
1 sheet frozen puff pastry (from one 14-ounce package), thawed according to package instructions, and unfolded

Steps:

  • Preheat the oven to 425°F. Set aside two ungreased rimmed baking sheets.
  • In a small bowl, combine the cheese, cayenne, paprika, and salt. Set aside. In a second small bowl, whisk together the egg and water. Set aside.
  • On a lightly floured surface, roll out the thawed pastry sheet 1/8 inch thick, to form a rectangle that is about 10 by 16 inches. Lightly brush the dough with the egg wash.
  • To shape the straws, halve the pastry crosswise into two 5 by 8-inch rectangles. Sprinkle the cheese mixture over one rectangle and top with the other rectangle, egg-wash side down, pressing firmly to force out any air pockets. Roll out the layered pastry a little further to make the layers adhere (the rectangle should be about 12 by 9 inches). Brush the top of the pastry with additional egg wash and transfer to a baking sheet. Chill until firm, about 10 minutes in the freezer or 30 minutes in the refrigerator.
  • Remove from the freezer and transfer to a floured work surface. With a large sharp knife, pastry wheel, or pizza cutter, cut the pastry lengthwise into 1/4-inch-wide sticks. Twist the ends of each strip in opposite directions to create a long twirl.
  • To bake the straws, arrange them about 1 1/2 inches apart on the baking sheets, pressing down the ends to fix the straws to the rimmed edge of the sheet pan. Bake the cheese straws, in batches, in the middle of the oven until golden, 10 to 12 minutes. (While baking in batches, keep the raw dough in the refrigerator.) Transfer the baking sheet to a rack to cool slightly, then transfer the cheese straws to a rack to cool completely.

  • Once they have cooled completely, store the cheese straws in an airtight container for up to 2 days. Re-crisp them in a 425°F oven just until heated through, about 5 minutes.

Tasty little morsels from a collection of Paula Deen's recipes featured in the Nov 09 issue of Good Housekeeping. Cheese straws must have been the inspiration for Cheez-Its (which I happen to love). These are cheesy, buttery, and delicious. A nice savory little treat, and very simple. Prep time does NOT include time needed to bring cheese to room temperature.

2 cups self rising flour
1/4 teaspoon ground cayenne pepper
1 cup softened butter
7 ounces sharp cheddar cheese, at room temperature

Steps:

  • Preheat oven to 350 degrees.
  • In large bowl, beat butter and cheese until well blended at medium speed.
  • Add flour and cayenne pepper, and beat in well, for 5 minutes, or until VERY creamy.
  • Put mixture into pastry bag or cookie press that is fitted with a star tip.
  • Pipe 5-inch long strips about 1-inch apart from each other onto an ungreased cookie sheet.
  • Bake ONE COOKIE SHEET AT A TIME, 18-20 minutes until lightly golden.
  • Put the pastry bag/cookie press into the fridge or freezer while each tray is cooking. Otherwise, the butter and cheese gets too soft, and you get cheese "crackers" instead of straws!
  • Cool each tray for 5 minutes, (I prepare the next tray while they are cooling) then move the cooled straws to a wire rack.
  • Keeps well in air-tight containers.

4 ounces extra-sharp Cheddar cheese, grated
4 tablespoons butter, softened and cut into 4 pieces
3/4 cup flour (more for rolling dough)
1/2 teaspoon salt
1 teaspoon crushed red pepper
1 tablespoon half-and-half

Steps:

  • Heat oven to 350 degrees. In a food processor, combine cheese, butter, flour, salt and red pepper, and pulse until mixture resembles coarse crumbs. Add half-and-half, and process on low speed until dough forms a ball.
  • On a lightly floured surface, using a lightly floured pin, roll dough to a rectangle 8 by 10 inches and 1/8 inch thick. With a sharp knife, cut dough laterally into thin strips, 1/4 to 1/3 inch wide. Gently transfer each ''straw'' to an ungreased cookie sheet, leaving a 1/4-inch space between them, and bake 17 minutes, or until the ends are barely browned. Let cool.

1/2 teaspoon cayenne pepper
12 tablespoons unsalted butter
1 1/2 cups grated Parmesan and cheddar cheese (mixed)
1/4 teaspoon Tabasco sauce
1 egg yolk

Steps:

  • Sift the flour and add the salt, paprika and cayenne. Rub in the butter until the mixture is like oatmeal. Add the cheeses, Tabasco sauce and egg yolk. Make into a smooth dough, adding water as necessary.
  • Roll out onto a floured board and cut in narrow strips, about one-fourth of an inch wide and three-inches long. Bake in a preheated oven at 400 degrees for seven to eight minutes, or until golden.
