CRUNCHY FRIED BUTTERFLY SHRIMP
Butterflying shrimp makes more surface area for the best part - the crunchy coating! Serve with cocktail sauce and lemon wedges for the perfect plate.

Steps:
- In a shallow bowl, mix flour, salt, pepper, and garlic powder. Set aside.
- In another shallow bowl, whisk eggs with ⅓ cup of water. Set aside.
- Pile breadcrumbs onto a plate, set aside.
- On another plate, sprinkle a light coating of panko and set aside.
- Carefully cut shrimp along the back and lay it open. Be careful not to cut all the way through the shrimp.
- Coat shrimp in flour, shaking to remove excess flour. Then, dip shrimp into egg, allowing excess egg to drip back into egg bowl.
- Place egg-coated shrimp into panko bread crumbs, cover with panko and press lightly, making sure all shrimp is covered with panko and the shrimp has remained open. Place coated shrimp onto the plate that was sprinkled with panko.
- Continue coating shrimp, adding panko to the plate as needed. You may need to use all 4 cups of panko, depending on the size of shrimp and thickness of egg wash left on shrimp.
- Once all shrimp have been coated and placed on the plate, place plate in the refrigerator for at least 30 minutes and up to 5 hours.
- Heat oil in a medium-size pan over medium-high heat until oil sizzles when a few panko crumbs are tossed in the pan.
- Fry shrimp in hot oil until shrimp are golden brown. Be careful not to overcook.
- Serve immediately with cocktail sauce and lemons.

- In a medium size mixing bowl combine shrimp, salt and pepper; stir.
- Heat oil in a medium size saucepan. In another medium size mixing bowl stir together eggs, flour and baking powder. Dredge shrimp in egg mixture then fry in oil until they are golden.

- In deep fryer or 4-quart Dutch oven, heat oil (2 to 3 inches) to 350°F.
- In shallow dish, mix flour, salt and pepper. In another shallow dish, beat eggs slightly with fork or whisk. In third shallow dish, place bread crumbs. Pat shrimp dry with paper towels. Coat shrimp with flour mixture; dip into eggs, then coat with bread crumbs.

BUTTERMILK FRIED SHRIMP

Steps:
- Whisk salt, cayenne, garlic powder, paprika, oregano, thyme, black pepper, and onion powder in a small bowl to blend.
- Attach a deep-fry thermometer to side of a heavy wide pot. Add enough oil to measure 2". Heat over medium heat to 350°F.
- Meanwhile, place shrimp and 2 tablespoons spice mix in a medium bowl and toss to coat. Pour buttermilk into another medium bowl. Whisk flour and cornmeal in another medium bowl.
- Dip seasoned shrimp briefly in buttermilk, then coat with flour mixture. Working in batches, fry shrimp, stirring occasionally, until golden brown and just cooked through, about 4 minutes per batch. Transfer to paper towels to drain.
- Serve shrimp with rémoulade sauce.
PANKO FRIED SHRIMP
Delicious as an appetizer or alongside a meal. Serve with cocktail sauce, lemon wedges, and tartar sauce.

Steps:
- Butterfly shrimp by cutting vertically down the back of the shrimp. Leave tails on.
- Season shrimp with salt, pepper, and seasoning salt.
- Heat enough oil to deep fry the shrimp in a skillet to 350 degrees F.
- Put panko crumbs in a shallow dish. Add seasonings to taste and mix well. Put flour in a separate shallow dish.
- Beat the eggs and water together.
- Dip the shrimp in the egg-water mixture.
- Add the shrimp to the flour. Toss to coat.
- Dip again in egg-water mixture.
- Toss shrimp in panko crumbs.
- Fry in hot oil at 350 degrees F until golden, about 3 minutes. You may have to turn the shrimp to evenly brown them.
- Drain the fried shrimp cooling racks over paper towels.
- Keep shrimp warm while frying batches of shrimp.
- Serve with lemon wedges, cocktail sauce or tartar sauce.

FRIED BUTTERFLIED SHRIMP
Steps:
- Preheat deep fryer or skillet with oil to 350 degrees F (175 degrees C).
- In a large bowl, pour in water and mix in cornstarch and eggs.
- Dip the shrimp into the mixture allowing them to be completely coated. Then roll the shrimp in the breadcrumbs. Coat the shrimp well with the breadcrumbs. Mix up the cornstarch batter again. Dip the breadcrumbs coated shrimp back into the cornstarch batter. Roll the shrimp in the breadcrumbs for a second time. Repeat for each shrimp.
- Drop shrimp, one at a time, into the hot oil and cook shrimp until they are golden brown.

DEEP-FRIED COATED BUTTERFLY SHRIMP

- 1. Soak dried oysters. 2. Shell, devein and butterfly shrimp, leaving the tail segments intact. 3. Mince fish fillets, bacon, smoked ham, Chinese sausage, scallion, garlic, ginger root and soaked oysters. 4. Beat egg and add to minced ingredients, along with cornstarch, salt and pepper. Blend mixture to a smooth paste. 5. Roll each shrimp in about 3 tablespoons of this paste to coat. (First oil the palms of the hands lightly with peanut oil to prevent sticking.) Meanwhile heat deep-frying oil. 6. Beat remaining egg. Holding shrimp by the tail, dip first in egg, then in cornmeal to dredge lightly. Add shrimp to oil, 1 at a time, and deep-fry until they float. Drain on paper toweling. 7. Shred lettuce and arrange on a serving platter with shrimp on top. Chop Chinese parsley sprinkle over as a garnish. Serve hot, accompanied by lemon wedges.
