Steps:
- Heat the oil to 375 degrees F in a heavy-bottomed Dutch oven or deep fryer. Preheat the oven to 200 degrees F.
- Mix the salt, garlic powder, paprika and sugar in a bowl and set aside.
- Whisk the cornstarch and club soda in a mixing bowl. In batches, dip the potatoes in the batter, allow any excess to drip off and hold on a wire rack. Repeat with rest of the potatoes.
- Fry half the potatoes, stirring occasionally until golden brown and crispy, 6 to 8 minutes. Sprinkle with the seasoning and hold in the oven on a paper towel-lined baking sheet. Repeat with the last batch of potatoes.
SPICY SWEET POTATO FRIES

- Toss 2 pounds sweet potatoes (cut into wedges) with 3 tablespoons olive oil, 1 1/2 teaspoons each brown sugar and salt, 1/4 teaspoon each cumin and chili powder, and a pinch of cayenne. Roast cut-side down on a baking sheet in a 425 oven until crisp, 30 minutes, turning once.
DEEP-FRIED SWEET POTATO FRIES
Steps:
- Turn on the deep-fryer to preheat. Set to 325°.
- To prepare the sweet potatoes, begin by peeling them. Next, cut them into large round slices about 1/2″ thick. Then you will need to cut each slab of sweet potato into shoestring strips as seen above.
- FIRST FRY - Begin by frying them once at a lower 325° to cook the sweet potatoes all the way through. This takes about 6-8 minutes and depends on the exact size of your cut. Drain on paper towels. Now, let them rest to cool off for about 2-3 minutes and for the remaining moisture to come back to the surface.
- Finally, turn up the heat on the deep fryer for a second cook at 375°. Then add the sweet potato fries back into the deep fryer for a quick 2-minute deep-frying. Drain again on a paper towel.
- As soon as the second fry is done, drain them on paper towels, the seasoning needs to go on. I liberally salt them and then sprinkle on sweet paprika.
- Enjoy!

- Preheat oven to 200 degrees. Put a wire rack on a rimmed baking sheet and place in the oven.
- Put sweet potatoes in a microwave-safe container, cover, and microwave 2 minutes. Stir gently, cover, and microwave 1 to 2 minutes more until pieces are pliable. Let rest 5 minutes covered; pour onto a platter.
- In a 4-quart saucepan over medium, heat oil to 375 degrees on a deep-fry thermometer. In a large bowl, gradually whisk the cornstarch into the beer (if you whisk it together all at once, it will get too thick). Working with a handful at a time, dip potatoes into the mixture, letting the excess drip back into the bowl. Add to the hot oil and fry in three or four batches until dark golden brown, 4 to 5 minutes per batch. Transfer fries to oven while cooking the remaining batches.
- Place the fries in a large clean bowl, add the Mediterranean Spice mix, and toss to coat. Serve immediately.

- In a shallow bowl, whisk egg and water. In a resealable plastic bag, combine the bread crumbs, cheese, cayenne and pepper. Cut sweet potato into 1/4-in. strips. Add to egg mixture, a few at a time, and toss to coat. Add to the crumb mixture, a few at a time; seal bag and shake to coat., Arrange potato strips in a single layer on a baking sheet coated with cooking spray; drizzle with oil. OVEN-FRIED SWEET POTATO FRIES
I've tried several recipe but was never able to obtain a crispy exterior, so started experimenting! I've found that yellow sweet potatoes work better than yams. Don't crowd them, otherwise you'll have soggy fries! Time indicated does not include soak time for the potatoes. The roasting time may vary with thickness of potatoes!

- At least 30 minutes prior place sliced potatoes in bowl and cover with water.
- Preheat oven to 400°F.
- Line cookie sheet(s) with aluminum foil (makes clean-up a snap). Use two cookie sheets if necessary . . . for crisp potatoes they need lots of space, so don't crowd!
- Spray foil with non-stick spray.
- Drain potatoes and pat dry with paper towels.
- Return potatoes to (dry) bowl and drizzle with oil and toss to coat.
- Sprinkle with paprika, salt, cinnamon and brown sugar; toss to coat.
- Place on prepared cookie sheets; again, DO NOT CROWD, use two sheets if necessary!
- Roast, turning the potatoes every 10 minutes, until potatoes are browned and tender, 15-20 minutes. If using two cookie sheets, alternate the pans after 10 minutes!

- Preheat oven to 425°.
- Peel and cut sweet potatoes into fries no thicker than 1/2″. Soak in water for minimum of one hour, but preferably for half a day.
- Drain water from bowl and lift fries out by the handful. Give them a good shake. They should be dry but still have enough moisture on them to allow the cornstarch to stick.
- Put cornstarch in a plastic bag and drop all of your fries inches Blow a little air into the bag, twist the top and shake it vigorously. Lift the fries out onto one or two baking sheets.
- Coat with Olive Oil. The more the crispier and less sticking you'll have, but the less healthy they'll be. Use 2 pans if you have to. You want to make sure the fries aren't crowded on the pan otherwise they'll steam as opposed to getting crispy.
- Bake for 15 minutes then check. Once bottom of fries are getting crisp, flip them over and cook for another 5-10 minutes.
- (for deep frying follow the first 3 steps, but instead of baking them, put them in the deep fryer at it's highest setting for a few minutes).
- Dipping Sauce:.
- Mix together mayo, pepper and Sriracha sauce. Adjust to your taste.
- Please note : This recipe does have a bit of a learning curve. It may take a few attempts to get your proportions of corn starch and oil correct. If you it doesn't work for you, it's not the recipe it's either a) your technique or b) your baking pan.

- Preheat the oven to 400 degrees F (200 degrees C).
- Cut each sweet potato in half crosswise. Quarter each half lengthwise. Cut each quarter evenly into 2 to 4 pieces. Repeat with remaining sweet potatoes.
- Place sweet potatoes on a rimmed baking sheet. Add salt. Drizzle olive oil on top. Stir up potatoes to coat with oil; spread out evenly on the baking sheet. Season with pepper.

- Peel the sweet potatoes on a cutting board.
- Trim the ends of the potatoes and cut into ½-inch (1 cm) thick matchsticks.
- Add the cut potatoes to a large bowl of water and soak for 1 hour.
- Drain the potatoes in a colander, and rinse with cold water.
- Preheat the oven to 425˚F (220˚C).
- Thoroughly dry the sweet potato matchsticks with paper towels.

- Cut potatoes plank style - 1/4" thick by 1/2" wide. Place in a large bowl of cold ice water and chill in fridge for 30 minutes, changing water 3 times. Drain, pat completely dry.
- Place cornstarch in a large bowl and gently toss with potatoes to coat. Shake off excess and place on a wire rack (over a baking sheet) and let sit for 20 minutes to allow the cornstarch to form a white coating over the potatoes.
- Choose a heavy bottom sauce pan and fill at least 4" deep with oil (making sure you have 3-4" headroom at top to allow for the oil to bubble up). Bring oil up to 330°F using a deep-fry thermometer, then carefully drop a third of the potatoes into the oil. The ideal temperature of the oil is 325°F for cooking, however by increasing the heat initially at the start it will compensate for the drop in temperature once you add the potatoes.
- Gently stir the potatoes around and remove after 3-5 minutes when they can easily be cut with the side of fork, and their surface just starts to blister (but not brown). Use a mesh strainer and remove the potatoes from the oil, and place on a paper towel lined pan wire rack (with a baking sheet underneath). Fry the remaining potatoes the same way. Be sure not cook too many at once - this will dramatically lower the temperature of the oil, you want to maintain the temperature at 325°F during this initial fry. Let the slices sit for at least 10 minutes before the second fry (this will firm up the cornstarch coating).
