CREAMY DILL CUCUMBER TOASTIES
I got this recipe years ago from a friend of a friend. I love it and make it all the time for parties. It looks great on the platter, and it is super easy! Everyone loves it!

Steps:
- In a medium bowl, mix together cream cheese, dressing mix and mayonnaise.
- Spread a thin layer of the cream cheese mixture on a slice of bread, and top with a slice of cucumber. Sprinkle with dill. Repeat with remaining ingredients.

Steps:
- Grease a 19cm x 29cm lamington pan.
- Combine biscuits, butter, coconut and spice in a bowl, mix well.
- Press evenly over base of prepared pan; refrigerate 30 minutes.
- Pour filling over base; refrigerate several hours or until firm.
- Spread with topping; refrigerate until topping is set.
- Sprinkle with extra toasted shredded coconut if desired.
- FILLING:.
- Process cream cheese until soft.
- Add cream, marshmallows and strawberries, process until smooth.
- Add gelatine to cold water, stir over hot water until gelatine is dissolved.
- Fold into cream mixture.
- TOPPING:.
- Combine marshmallows and milk in a saucepan, stir constantly over low heat without boiling until marshmallows are melted.
- Cool topping to room temperature.

- Combine the Devonshire cream, basil, and lemon zest in a small bowl. Fold until well combined. Spread a thin layer of the cream on one side of each slice of bread. Add an even layer of cucumber slices to four of the bread slices then top the cucumbers with an even layer of strawberry slices. Place the other four slices of bread (with the cream) cream-side down on the strawberry slices. Slice the crust off the sandwiches. Then slice each sandwich into 4 small triangles. COOK'S NOTES: You can make your own Devonshire cream with cream cheese, sugar, and heavy cream. Just beat 4 oz of cream cheese with 1 tablespoon of sugar. Slowly add a 1/2 cup of heavy cream and mix until stiff peaks form.

This cool cucumber salad is quick and easy to prepare. It does require at least 2 hours in the fridge for the fullest flavor so plan ahead!

- Preheat oven for 350°F Line a 9x13-inch baking dish with parchment paper, overlapping the longer sides for easy removal.
- CRUST: Pour flour, icing sugar and salt in bowl of food processor fitted with metal blade. Pulse until blended, Add cold, cubed butter and process mixture until it looks like little crumbs, about 15 seconds. Transfer mixture to prepared pan and press firmly onto the bottom of pan.
- Bake in preheated oven 15-18 minutes, until edges are golden.
- FILLING: In a large bowl, beat the eggs with a handheld whisk until they are well mixed. Add the condensed milk and beat until it is fully incororated. Whisk in lemon juice and zest.
- Spread jam over hot crust. Pour filling over and bake for 25-30 minutes, or until filling has set.
