Easy Whole Wheat Biscuits image

Easy whole wheat biscuits made with 100% whole grain flour. These fluffy buttermilk biscuits can be made in less than 30 minutes, making them the perfect side for breakfast, soups, and main courses.

2 cups (240 g) whole wheat pastry flour (plus more for dusting)
1 tablespoon aluminum-free baking powder
1 teaspoon baking soda
¾ teaspoon Diamond Crystal kosher salt
4 tablespoons (2 oz) very cold unsalted butter (cut into ½-inch cubes)
1 cup (236 mL) cold buttermilk

Steps:

  • Preheat the oven to 425°F (220°C) with a rack in the center position. Line a sheet pan with parchment paper or silicone baking mat.
  • In a medium mixing bowl, whisk together the pastry flour, baking powder, baking soda, and salt. Add the cold butter and toss in the flour mixture. Using a pastry cutter or a fork, cut the butter into the flour mixture until the butter is pea sized. Place the bowl in the freezer for 5 minutes to chill.
  • Remove the flour mixture from the freezer. Create a well in the center of the dry ingredients and add the buttermilk. Using a wooden spoon, stir the buttermilk into the flour mixture until just absorbed. The dough will seem slightly wet.
  • Transfer the dough to a lightly floured countertop. Knead the dough 4 to 5 times until it comes together, dusting the dough lightly with flour as necessary to prevent it from sticking to the countertop.
  • Pat the dough gently with your hands into a disc that is roughly 1-inch thick. Fold the dough over itself 2 to 3 times, this will help create layers. Dip a 2½-inch-diameter biscuit cutter in flour and cut out the biscuits. Do not twist the biscuit cutter as you cut the dough, this will prevent the scones from rising evenly. Transfer the biscuits to the sheet pan, setting them apart. Gently press and knead any remaining biscuit dough (avoid overworking) and repeat to make roughly 10 biscuits total.
  • Place the biscuits in the oven and immediately increase the oven temperature to 450°F (230°C). Bake until lightly golden, about 9 to 11 minutes. Transfer to a wire rack. Biscuits are best served hot out of the oven, sliced, and with a little bit of salted butter.

1 cup all-purpose flour
1 cup whole wheat flour
3 teaspoons baking powder
1 tablespoon brown sugar
1 teaspoon baking soda

  • In a large bowl, combine the first six ingredients. Cut in butter until mixture resembles coarse crumbs. Stir in milk just until moistened. These biscuits are sooo delicious! A mix of white and wheat flour makes them light yet healthy. It is preferable to use a soft winter wheat flour for your all purpose flour. My local health food store purchases super fresh ground flour from a nearby flour mill so it makes for spectacular baking! I usually make a double batch and cut them to be the super sized biscuits so that we can make breakfast biscuits with eggs, bacon and cheese! I don't change the recipe at all, ever. Tip: my grandmother always said that to make good, flaky biscuits handle the dough as little as possible, barely kneading it at all.

2 cups all-purpose flour
1/2 cup whole wheat flour
1 1/2 teaspoons baking powder
2 tablespoons sugar
1 teaspoon salt
1/2 cup butter, room temperature
1 cup half-and-half
2 tablespoons half-and-half (optional)
2 tablespoons sugar (optional)

Steps:

  • Preheat oven to 375 degrees. Use parchment paper on baking pan if you have it on hand.
  • Put both of the flours, the baking powder, sugar and salt in large mixing bowl.
  • With a pastry cutter or your fingertips gently cut in butter until it resembles coarse cornmeal.
  • Make a well in the center and add half and half. Stir gently until mixture forms somewhat of a ball.
  • Place on a lightly floured surface and gently knead until a mass is formed.
  • Roll to a 1" thickness and cut into circles with flour dipped 2" biscuit cutter.
  • Place on baking pan and brush tops with the 3 tbsp of half and half and sprinkle with sugar.
  • Bake for 15 to 20 minutes or until lightly browned.

1 cup Wheat Flour
1 cup Semolina
1 cup Sugar
1/2 cup Ghee
1/2 cup Warm Milk
1 tablespoon Cardamom Powder
1/2 kg Ghee For Deep Frying

Steps:

  • For it take one bowl of wheat flour, one bowl of semolina, one bowl of sugar, half bowl of ghee, half cup of warm milk and cardamom powder.
  • Add sugar in warm milk and mix it nicely. Keep 2-3 spoon sugar aside.
  • Take one big mixing bowl and add wheat flour, semolina, cardamom powder. Mix all of them well.
  • Then add ghee in it and mix it well. Add ghee slowly-slowly as per requirement.
  • Now add milk that we prepared by adding sugar and knead a dough of it. The should not be very tight nor too soft.
  • When dough is kneaded then add two-three spoon of sugar that we kept aside and again knead it nicely and make the dough smooth.
  • Now take small portion of dough and make a round ball of it and then press it slightly. Then make design on it using fork or any utensil from the kitchen and then keep it in a plate.
  • Same way make all the biscuits and keep them in a plate.
  • Now keep a wok on gas and pour ghee in it for deep frying the biscuits and let it heat. When ghee gets highly heated then add biscuits in the ghee and deep fry them. (Add biscuits in highly hot oil only otherwise they will get spread in the ghee)
  • When they starts to cook then make the flame low and then deep fry them as this way they will get deep fried from inside as well and will become crispy.
  • Deep fry them by turning till they gets golden brown. When they gets golden brown then take them out in a plate and on a napkin so that napkin can absorb extra ghee.
  • Same way deep fry all the biscuits and our tasty "Wheat Flour Biscuits" are ready to serve.
