CITRUS AND SESAME SHRIMP SALAD



Citrus and Sesame Shrimp Salad image

Easy Asian-inspired salad topped with shrimp and bursting with bright veggies and citrus.

1/4 cup orange juice
1 tbsp rice vinegar
1 teaspoon sesame oil
1 teaspoon tamari gluten free soy sauce (or sub regular)
1 teaspoon fresh ginger, grated
1 clove garlic, finely minced
1 teaspoon sesame seeds, toasted (black or white)
kosher salt
3 cups green leaf lettuce, chopped or torn into pieces
6 oz cooked frozen shrimp, thawed
1 cup red cabbage, thinly sliced
1 cup sugar snap peas, sliced
1 carrot, julienned
1/2 red bell pepper, julienned
2 tbsp cilantro, chopped
1 orange, peeled and sliced
2 tbsp scallions, thinly sliced
sesame seeds (for garnish)

Steps:

  • Combine all ingredients (except salt and pepper), whisk until well combined. Add salt and pepper to taste.
  • Divide the lettuce between two large plates.
  • In a mixing bowl combine all the shrimp, cabbage snap peas, carrots, bell pepper, cilantro and prepared sesame dressing. Gently toss to combine.
  • Garnish with orange slices, scallions and sesame seeds.

Number Of Ingredients 16

1 tablespoon sugar (if you HAVE to, use splenda)
3 tablespoons fresh lime juice, divided
1 tablespoon water
1 garlic clove, minced
2 teaspoons chili-garlic sauce, divided (such as Lee Kum Kee)
1 1/2 teaspoons fish sauce
1/2 teaspoon salt, divided
1 tablespoon orange marmalade (we used apricot) or 1 tablespoon apricot preserves (we used apricot)
2 teaspoons dark sesame oil, divided
24 large shrimp, peeled and deveined (about 1 pound)
5 cups shredded napa cabbage (Chinese)
1 1/2 cups trimmed watercress leaves
1 1/2 cups shredded carrots
1/3 cup chopped fresh cilantro
1/3 cup chopped of fresh mint
2 tablespoons toasted sesame seeds

Steps:

  • Combine sugar, 2 tablespoons juice, 1 tablespoon water, and garlic in a small microwave-safe bowl; cover with plastic wrap.
  • Microwave at HIGH 40 seconds or until sugar dissolves.
  • Cool.
  • Stir in 1 teaspoon chili garlic sauce, fish sauce, and 1/4 teaspoon salt.
  • Combine remaining 1 tablespoon juice, remaining 1 teaspoon chili garlic sauce, remaining 1/4 teaspoon salt, marmalade or preserves, and 1 teaspoon oil in a large bowl, stirring with a whisk.
  • Add shrimp to bowl; toss to coat.
  • Marinate shrimp in refrigerator 15 minutes, tossing occasionally.
  • Remove shrimp from bowl, reserving marinade.
  • Thread 3 shrimp onto each of 8 (8-inch) wooden skewers.
  • Heat remaining 1 teaspoon oil in a large nonstick skillet over medium-high heat.
  • Add shrimp skewers and reserved marinade to pan; cook 3 1/2 minutes or until shrimp is done and glazed, turning once.
  • Combine cabbage and remaining ingredients in a large bowl.
  • Drizzle fish sauce mixture over cabbage mixture; toss well to coat.
  • Arrange 2 cups cabbage mixture onto each of 4 plates; top each serving with 2 skewers.

2 tablespoons honey
2 tablespoons soy sauce
1 lime, juiced
1 tablespoon vegetable oil
2 teaspoons sesame oil
1/4 seedless cucumber, peeled and chopped
1 pound cooked medium shrimp, tails removed
Salt
1 tablespoon toasted sesame seeds
1/2 head iceberg lettuce, cut into wedges

Steps:

  • Mix the honey, soy, lime juice and oils in a medium bowl. Add cucumbers and shrimp and toss to coat. Season the salad with salt and garnish with sesame seeds. Serve shrimp with lettuce, to wrap and crunch on spoonfuls of salad.

Little Leaf Farms Baby Crispy Green Leaf Lettuce
¼ cup extra virgin olive oil
¼ cup seasoned rice vinegar
1 ½ tbsp honey
3 tbsp sesame oil
2 tsp soy sauce
pinch of salt
2 cloves garlic minced
1 tbsp minced ginger
¼ cup soy sauce
2 tbsp seasoned rice vinegar
2 tsp brown sugar
2 tbsp olive oil
1 tsp sesame oil
3 cloves garlic, chopped
1 tbsp grated ginger
1 lb shrimp, peeled and deveined
2 tbsp canola oil
3 scallions, sliced
1 tbsp toasted sesame seeds

Steps:

  • Salad Dressing
  • Place all ingredients and shake well. Adjust saltiness or sweetness based on your preference.
  • Sesame Shrimp
  • In a bowl whisk together the soy sauce, rice vinegar, and sugar until the sugar has dissolved. Whisk in the olive oil, sesame oil, garlic and ginger. Place the shrimp in the bowl with the marinade. Toss to coat and chill 1 hour.
  • Heat oil in a large skillet over medium heat. Lift the shrimp from the marinade into the hot pan and Stir fry for a minute.
  • Add half of the scallions. Continue to stir fry, turning the individual shrimp over, if necessary, until the shrimp are pink and just cooked through. No more than 2 minutes max total cooking time, a minute on each side.
  • Remove shrimp from pan and transfer to a serving bowl. Place the remaining marinade in the hot sauté pan and simmer it until it has reduced to a syrup.
  • Pour over the shrimp. Toss to coat. Sprinkle the shrimp with toasted sesame seeds and remaining green onions.
  • Assemble the Salad
  • Place all components on a bed of Little Leaf Farms lettuce and enjoy!

Asian Shrimp Salad with Ginger Sesame Dressing image

This quick and EASY Asian Shrimp Salad with Ginger Sesame Dressing is complete with all your favorite flavors, crunchy veggies and fresh herbs that can be easily made in just minutes!

1 lb. shrimp, peeled and deveined
1 Tbsp olive oil
2 Tbsp chili paste
3 Tbsp ginger sesame dressing (see below)
2 Tbsp lime juice
3 cups shredded napa cabbage
2 cups shredded red cabbage
1 cup shredded carrots
1 cup sugar snap peas, thinly sliced
1/4 cup fresh cilantro, chopped
2 Tbsp fresh mint, chopped
2 Tbsp rice vinegar
1 Tbsp reduced sodium soy sauce
1 clove garlic
1 Tbsp honey
1 Tbsp fresh ginger, peeled and minced
¼ tsp. toasted sesame oil
3 Tbsp olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • Toss shrimp with olive oil on a large baking sheet and bake for about 5 to 7 minutes, until shrimp are pink and cooked through. Remove from oven and set aside.
  • To make the ginger sesame dressing, combine all ingredients in a small jar with a sealed lid and shake well until combined. I also use this jar to store any extra dressing to use for the week.
  • To make the sauce for the shrimp, whisk together chili paste, 3 tablespoons of the ginger sesame dressing and lime juice. Add cooked shrimp and toss to combine; set aside.
  • For the salad, combine shredded cabbage, carrots, snap peas, cilantro and mint in a large bowl and toss with the extra ginger sesame dressing. Top with cooked shrimp and enjoy!
  • If making this salad for lunches, store the dressing in a sealed jar and drizzle over salad just before eating so salad stays fresh.
