Easy Mexican Casserole image

This is an easy and very tasty dish. I often substitute ground turkey and low fat dairy products and it is still delicious! Serve with chips, salsa and green salad.

1 pound lean ground beef
2 cups salsa
1 (16 ounce) can chili beans, drained
3 cups tortilla chips, crushed
2 cups sour cream
1 (2 ounce) can sliced black olives, drained
½ cup chopped green onion
½ cup chopped fresh tomato
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.
  • Spray a 9x13 baking dish with cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream. Top with Cheddar cheese.
  • Bake in preheated oven for 30 minutes, or until hot and bubbly.

1 lb ground beef
2 garlic cloves, minced
1 tablespoon chili powder
1 (14 1/2 ounce) can diced tomatoes, drained
1 (15 1/4 ounce) can kidney beans, drained
1 (6 ounce) box stove top cornbread stuffing mix
1 1/4 cups hot water
1/4 cup butter
2 cups cheddar cheese, grated

Steps:

  • Heat oven to 375 degrees.
  • Mix seasoning packet (in box) with water and butter in bowl.
  • Add stuffing mix.
  • Mix together.
  • Set aside.
  • Cook beef with garlic and chili powder till browned (drain).
  • Add tomatoes and kidney beans to beef mixture.
  • Mix together.
  • Put 1/2 of stuffing mixture into a 2 quart baking dish.
  • Put beef mixture on top of stuffing.
  • Add 1 cup cheese.
  • Top with remaining stuffing mixture.
  • Add the rest of the cheese.
  • Cover and bake for 45 minutes.

1 can (14-1/2 ounces) diced tomatoes, undrained
1 envelope taco seasoning
7 flour tortillas (10 inches)
2 large eggs
1-1/3 cups 4% cottage cheese
1-1/2 cups shredded cheddar cheese, divided

Steps:

  • In a large skillet, cook turkey and onion over medium heat until meat is no longer pink; drain. For those of you who may not know, the tortilla chips form a crispy crust on the bottom of the casserole. An easy Mexican Casserole recipe.

1 1/2 cups crushed tortilla chips
1 pound shredded cooked chicken meat (from a small roasted chicken)
1 can (15 1/2 ounces) garbanzo beans, drained
1 can (15 1/2 ounces) kidney beans, drained
1 can (15 1/4 ounces) corn kernels, drained
1 can (8 ounces) tomato sauce
1 cup prepared salsa
1 cup chopped red onion
1 green bell pepper, cut into 1/4-inch dice
1/4 cup chopped fresh cilantro leaves
1 tablespoon minced garlic
Salt and freshly ground black pepper, to taste
N/A freshly ground black pepper
6 ounces grated Monterey Jack cheese

Steps:

So I decided to whip up a tasty casserole, considering you can put almost anything into one. It was a big hit. Everybody LOVED it & there wasn't a bite to spare! It was manly enough for them, yet enjoyable for kids too.

1 lb ground beef
1/2 lb fusilli
1 yellow onion
1 cup mozzarella cheese, shredded
1 cup cheddar cheese, shredded
3 garlic cloves
2 (14 ounce) cans black beans
1 (14 ounce) can of ready cut diced tomatoes
1 (6 ounce) can of sliced olives
1 (6 ounce) can diced green chilies
1/4 teaspoon of powdered habanero pepper (If you like it REALLY spicy use 1/2 tsp)
7 ounces chipotle peppers
1/2 teaspoon cumin
1/4 teaspoon ground coriander
salt & pepper (to taste-I use sea salt)
1 -2 avocado (optional)
16 ounces sour cream (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Dice onions.
  • Finely chop garlic.
  • Prepare pasta & cook for 2.5 minutes less than directions call for.
  • Drain black beans & wash in a colander.
  • Dice avocados.
  • Heat burner on medium.
  • Saute onions, until soft & slightly yellow.
  • Add ground beef, 2-3 chipotle peppers and garlic.
  • Sprinkle cumin, coriander and salt & pepper.
  • Continue stirring until browned.
  • Add green chilis and black beans, then stir.
  • Drain juice from tomatoes & add to pan,.
  • Mix everything thoroughly together.
  • Spoon pan into 9x11 baking dish.
  • Layer with olives.
  • Sprinkle both cheeses evenly.
  • Cover baking dish with tin foil.
  • Cook for 30 minute.
  • Remove tin foil & allow to cool.
  • Serve with avocados & sour cream.

I saw a similar version on vegweb and decided to add some of my own touches. After tweaking the original recipe I came up with this one and my family & friends love it. It is great for potlucks and so far no one has complained. You can also adjust the heat or remove it altogether. Enjoy!!

1 small onion (diced)
1 teaspoon cumin (coarsely grounded)
1 (5 ounce) can Rotel tomatoes & chilies (mild works best)
1 (15 ounce) can black beans
2 garlic cloves (grated or minced)
2 -3 tablespoons salsa
4 slices pickled jalapeno peppers
4 teaspoons oil (i prefer corn or vegetable)
1 ounce sazon goya with coriander and annatto
10 soft tortillas (small size)
1 (8 ounce) package shredded Mexican blend cheese (2 packs if you love cheese)

Steps:

  • Heat oil in a pan and saute onions for 2-3 minutes.
  • Add cumin and saute for another 2 minutes.
  • Drain SOME of the extra liquid from Rotel tomatoes and Black Beans.
  • Add salsa, Rotel, and garlic.
  • Let it all simmer for about 4 minutes.
  • Add jalapenos and Sazon spice. Simmer for another minute.
  • Then add beans and simmer for 4 more minutes.
  • Let it cool down for 1/2 hour.
  • Make sure you reserve some of that sauce/liquid.
  • In a casserole dish or aluminum pan spread some the liquid so that your tortillas do not stick or burn.
  • Next make a layer of tortillas (usually only 2 will fit side by side).
  • The next layer will be the bean mixture.
  • Then spread some of the cheese.
  • Continue layering tortillas, bean mix, cheese until your last layer is tortillas.
  • Then spread the remaining liquid from the bean mix so that your tortillas remain soft during baking and spread the remainder of the cheese on top.
  • Bake at 350 degrees for 25 minutes.
  • Let it cool for 10 minutes before cutting. Enjoy.

1 large onion (chopped)
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
2/3 cup evaporated milk
1 (8 ounce) can enchilada sauce
1 (8 ounce) can green chili peppers
1 lb Velveeta cheese (cubed)
corn tortilla

Steps:

  • Saute ground beef and onion.Add both soups,milk,sauce,peppers and cheese. In a large , flat greased pan, put layers of the soft corn tortillas (torn in pieces) then put a layer of the mixture. Repeat this until all is used.
  • Bake in 350 degree oven for 30-40 minutes.

2 (19 ounce) cans red enchilada sauce (mild or hot use your own judgment on how hot you like it) or 2 (19 ounce) cans green enchilada sauce (mild or hot use your own judgment on how hot you like it)
2 -3 onions, chopped
1 (8 ounce) can mushrooms, diced ones, 1-2 cans (or chopped)
2 -6 jalapeno peppers, chopped (there again use your own judgment or use your choice of your favorite pepper)
1 (8 ounce) bag cheese
1 (20 ounce) bag flour tortillas (depending on how much you want to make)

Steps:

  • Note: Brown ground hamburger meat in a big pot with your onions and jalapeno peppers and mushrooms. Drain off grease.
  • Take your flour tortillas and tear into 1/4 and place into a long casserole baking dish and then you put your mixture over the flour tortillas and then put your cheese over that, then just keep on layering it till its all gone.
  • Then place into the oven to melt the cheese and get hot, I put mine into a 350°F oven and just check on it to see if its the way you like it to be.
