You can serve this delightful chicken salad on bread, buns or wrapped in a tortilla. "My husband likes it on crackers as a snack or on a bed of iceberg lettuce," says Jacklyn Salgado from Omaha, Nebraska.

Number Of Ingredients 12

1 boneless skinless chicken breast half (6 ounces)
1/2 medium onion, chopped
1 celery rib, chopped
2 teaspoons chicken bouillon granules
1 garlic clove, minced
Dash pepper
DRESSING:
1/2 cup mayonnaise
1 to 2 tablespoons minced fresh cilantro
2 tablespoons finely chopped onion
Dash salt and pepper
Assorted crackers, optional

Steps:

  • In a large saucepan, combine the chicken, onion, celery, bouillon, garlic and pepper; add water to cover by 1 in. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until a thermometer reads 170°. Drain, reserving the onion, celery and garlic. Shred chicken and place in a bowl; add reserved onion mixture. , In a small bowl, combine the mayonnaise, cilantro, onion, salt and pepper. Spoon over chicken mixture; gently stir to coat. Cover and refrigerate until chilled. Serve with crackers if desired.

I'm a huge fan of chicken salad and have tried so many different variations over the years, but this one is by far my favorite. Simple, refreshing flavors and great texture make it wonderful on a sandwich or just served over a bed of lettuce!

2 cooked skinless, boneless chicken breast halves, cut into cubes
3 stalks celery, finely diced
¾ cup chopped pecans
½ cup mayonnaise
2 tablespoons minced yellow onion
1 ½ tablespoons sweet pickle relish
2 teaspoons prepared mustard
1 ½ teaspoons ground black pepper
1 ½ teaspoons minced fresh dill
1 teaspoon lemon juice
½ teaspoon white sugar
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon paprika

Steps:

  • Stir chicken, celery, pecans, mayonnaise, yellow onion, relish, mustard, pepper, dill, lemon juice, sugar, salt, garlic powder, and paprika in a bowl until well combined. Refrigerate at least 1 hour before serving.

Number Of Ingredients 11

4 whole skinless and boneless chicken breasts (about 4 1/2 to 5 pounds)
3/4 cup defatted chicken broth
Salt and freshly ground black pepper, to taste
1 hothouse (seedless) cucumber
2 tablespoons fresh lemon juice
1/4 cup extra-virgin olive oil
2 heads Boston lettuce, cleaned, tough outer leaves removed
1 pint ripe cherry tomatoes, halved
1/3 cup imported black olives
1/4 pound Roquefort cheese, cut into chunks
1/2 cup whole flat-leaf parsley leaves

Steps:

  • 1. Preheat the oven to 350°F.
  • 2. Place the chicken in a shallow baking pan to fit. Pour the broth on top, season with salt and pepper and bake for 25 minutes or until cooked through, basting once or twice. Remove from oven and let cool to room temperature. Cut chicken into thirds, diagonally; set aside.
  • 3. Using a vegetable peeler, cut 4 strips vertically along the cucumber. Halve the cucumber lengthwise and then cut into 1/4-inch slices; reserve.
  • 4. For the dressing, whisk the lemon juice, olive oil, salt and pepper in a large bowl. Tear the lettuce leaves into medium-sized pieces and place atop the dressing. Add the tomatoes, olives, reserved cucumber and chicken. Gently fold together from underneath, coating with dressing.
  • 5. Add the cheese and parsley; toss carefully.
  • 6. Adjust seasonings and serve in a very large, shallow bowl or on a large, decorative platter.

⅓ cup chopped celery
½ cup chopped pecans
1 cup seedless grapes
1 head iceberg lettuce - rinsed, dried, and chopped

Steps:

  • In a large bowl, combine the chicken, raisins, mustard, mayonnaise, pineapple, curry powder and celery. Mix ingredients and divide among four servings of lettuce.
  • Top with pecans and garnish with grapes.

I made this for a baby shower and was bombarded with requests for the recipe! It is delicious on its own, or with small bread slices or crackers. Don't skimp by not using the homemade mayonnaise, it really adds a special flavor! Makes a 2-quart serving dish full, so if there will be other foods, this will serve at least six, maybe even up to ten!

1 pound skinless, boneless chicken breast halves
1 egg
¼ teaspoon dry mustard
½ teaspoon salt
2 teaspoons hot water
1 tablespoon white wine vinegar
1 cup olive oil
2 cups halved seedless red grapes
1 cup coarsely chopped pecans
1 cup coarsely crumbled blue cheese

Steps:

  • Bring a large pot of water to a boil. Add the chicken and simmer until cooked through, approximately 10 minutes. Drain, cool and cut into cubes.
  • While boiling chicken, make the mayonnaise: Using a blender or hand-held electric mixer, beat the egg, mustard, salt, water and vinegar until light and frothy. Add the oil a tablespoon at a time, beating thoroughly after each addition. Once mixture begins to thicken, you can add oil more quickly. Continue until mixture reaches the consistency of creamy mayonnaise. NOTE: The more oil you add, the thicker it gets; you may not need the full cup of oil.
  • In a large bowl, toss together the chicken, grapes, pecans, blue cheese and 1 cup of the mayonnaise. Stir until evenly coated, adding more mayonnaise if necessary. Refrigerate until serving.

16 ounces bella romaine lettuce
4 large eggs

8 ounces sliced black olives
1 cup monterey jack cheese
8 ounces mushrooms
1 1/2 tablespoons olive oil
1 tablespoon white vinegar
1 teaspoon seasoning salt
1 teaspoon pepper
2 ounces peppercorn ranch dressing
2 ounces buttermilk ranch dressing
2 ounces Italian dressing
1 ounce crouton
1 ounce unsalted sunflower seeds
1 ounce pickled jalapeno pepper

Steps:

  • clean and cut chicken into large chunks. place into the marinade and refrigerate for 4 hours.
  • heat olive oil in skillet on medium low and brown chicken turning twice. cut chicken into bitesize pieces and set aside.
  • dice tomatoes and eggs and toss with romaine and olives. add mushroom mix and toss salad again.
  • top with montery jack cheese, chicken and dressing. Serve and enjoy.
