Ingredients

2 cups pancake mix (use the kind where you only need to add water)
1 cup water
oil for frying

Steps:

Heat vegetable oil to 350 degrees.
In a medium-sized bowl combine pancake mix and water. Stir until well blended.
Use a 1-ounce cookie scoop to drop the batter into the oil. Cook until browned on the bottom, and flip over and cook for another 30 seconds.
Remove from oil, and drain. Sprinkle with powdered sugar if desired. Serve with maple syrup.

4 cups vegetable oil
2 cups Krustez blueberry pancake mix
1 cup water
1/2 cup powdered sugar
1/3 cup white chocolate chips

Steps:

In a medium sized pot, add 4 cups of oil, and heat oil to 350 degrees.
In a medium sized bowl combine pancake mix, water, and white chocolate chips and mix until blended.
Use a cookie scoop to scoop out pancake batter and drop it into hot oil.
When the pancake dough ball turns brown on the bottom side, flip over using a slotted spoon, and cook until the other side has been browned.
Remove cooked pancake puppies and drain them on paper towels.
Roll puppies in powdered sugar and top with any remaining powder sugar.
Serve with your favorite pancake syrup.

Pancakes didn't turn out so well on my electric stove top, so I invented these. They are light and airy and freeze well too. Try them with strawberry jam, dipped in syrup, or sprinkled with powdered sugar. Perfect for kid and adult brunches! This is a wonderful pancake recipe on its own too.

1 serving cooking spray
1 ¼ cups milk
¼ cup vinegar
¼ cup oil
1 egg
1 ¼ cups all-purpose flour
¼ cup white sugar
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt

Steps:

Preheat oven to 375 degrees F (190 degrees C). Spray 2 mini muffin tins with cooking spray.
Mix milk and vinegar together in a bowl; let stand until milk curdles, about 5 minutes. Beat in oil and egg.
Combine flour, sugar, baking powder, baking soda, and salt in a bowl; stir into milk mixture until smooth. Spoon batter into the prepared muffin tins with a tablespoon or a small batter scoop.
Bake in the preheated oven until batter is risen and still pale, about 8 minutes. Remove from muffin cups with a silicone scraper.
