Steps:

  • In chilled small bowl, beat all dressing ingredients with electric mixer on high speed until soft peaks form.
  • In large bowl, place fruit. Add dressing; toss gently to coat. Store in refrigerator.

This kitchen task is best suited for the detail oriented. Around here, that would be R. B., whose T-shirt collection is always impeccably folded, stacked, and arranged by hobby. Instead of limp baby weeds, we vote for a crisp head of chilled iceberg lettuce that cuts beautifully into bite-size pieces for serving with barbecue.

Dressing of your choice (recipes follow)
1 medium head iceberg lettuce, cut into bite-size pieces, well chilled
2 medium tomatoes, cut into bite-size pieces
1 medium or 1/2 large seedless cucumber, thinly sliced or cut into chunks
6 radishes, sliced
2 celery ribs, sliced
1/4 cup red onion slivers
1 cup yogurt
1/4 cup tahini
Juice of 1/2 lemon
1 teaspoon cumin seeds
Kosher salt to taste

Whatever the dressing, I serve the resulting meal with a baguette and some salted butter. And as long as we're sharing, often a roast chicken too. Swiping bread through a small puddle of melted chicken fat and salad dressing, after all, is one of life's great pleasures.

The inspiration for this salad that my wife prepares occasionally at home comes from the area of France where I was raised, near Lyon. It is always better done at home; the dressing lends itself to individual rather than high-volume preparation, and the delicacy required to properly clean and thoroughly dry the greens without bruising them is more easily achieved in the home kitchen. The salad should be cool but not ice cold, and should be tossed at the last minute, just before serving, especially if Boston or red-tipped leaf lettuce is used.

Originally from a July 1984 issue of Bon Apetit that featured a menu and recipes from Sam Higgins, the official camp cook at the K-bar Ranch outside of Arlington, Texas.
