1/2 lb tofu, crumbled
2 scallions or 1/4 red onion, chopped
2 -3 tablespoons mayonnaise or 2 -3 tablespoons vegan mayonnaise
2 teaspoons Dijon mustard
1 teaspoon capers
2 teaspoons sweet relish
1/2 teaspoon curry powder
salt
pepper

Steps:

  • Mix everything together and serve.

Deviled Tofu Kebabs image

See, tofu can be tasty! Remember to drain the tofu and press it well (I use a clean tea towel) to get lots of the water out.

8 shallots or 8 button onions
8 small new potatoes
2 tablespoons tomato puree
2 tablespoons light soy sauce
1 tablespoon sunflower oil
1 tablespoon clear honey
1 tablespoon coarse grain mustard
300 g smoked tofu, cubed
1 courgette, peeled and sliced
1 red pepper, de-seeded and diced

Steps:

  • Put the shallots or button onions in a bowl, cover with boiling water and set aside for 5 minutes
  • Cook the potatoes in a pan of boiling water for 7 minutes until tender. Drain and pat dry.
  • Put tomato puree, soy sauce, oil, honey, mustard and seasoning in a bowl, then mix well.
  • Toss the tofu in the marinade.
  • Set aside for at least 10 minutes.
  • Heat the grill.
  • Drain and peel shallots or onions, then cook in boiling water for 3 minutes
  • Drain well.
  • Thread the tofu, shallots, potatoes, courgette and pepper on to 8 x 20 cm skewers.
  • Grill for 10 minutes, turning frequently and brushing with remaining marinade before serving.

A low fat vegetarian kebab to bring out the devil in you

8 shallots or button onions
8 small new potatoes
2 tbsp tomato purée
2 tbsp light soy sauce
1 tbsp sunflower oil
1 tbsp clear honey
1 tbsp wholegrain mustard
300g firm smoked tofu , cubed
1 courgette , peeled and sliced
1 red pepper , deseeded and diced

Steps:

  • Put the shallots or button onions in a bowl, cover with boiling water and set aside for 5 mins. Cook the potatoes in a pan of boiling water for 7 mins until tender. Drain and pat dry. Put tomato purée, soy sauce, oil, honey, mustard and seasoning in a bowl, then mix well. Toss the tofu in the marinade. Set aside for at least 10 mins.
  • Heat the grill. Drain and peel shallots or onions, then cook in boiling water for 3 mins. Drain well. Thread the tofu, shallots, potatoes, courgette and pepper on to 8 x 20cm skewers. Grill for 10 mins, turning frequently and brushing with remaining marinade before serving.
