DIABETIC OATMEAL-RAISIN COOKIES
This is my absolute favorite homemade cookie in the whole world! When I make a batch, I have to hide them, give part of them away, and basically lock them in the cabinet. They just don't last. I got so tired of not being able to eat the regular ones from the Elves in the magic tree, so I adapted a really good recipe. I hope you like them as much as I do.

Steps:
- Preheat the oven to 325 degrees.
- Mix the flour with the cinnamon.
- Cream the butter and both the sugars until fluffy. Add the egg, milk, and vanilla. Gradually add the flour mixture.
- Stir in oats and raisins.
- Drop by teaspoonfuls if small cookies are desired, tablespoons if larger cookies are desired onto parchment paper (this stuff is reusable - one sheet will do the whole batch).
- Bake until golden brown, 10-12 minutes. Cool on wire racks.
NO SUGAR ADDED OATMEAL AND RAISIN COOKIES
Steps:
- Preheat your oven to 350. Prep a pan for nonstick- I use parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and ground cinnamon. Set this bowl aside.
- Now in a mixing bowl, cream together the granular sugar alternative and the butter. Then add the vanilla and the eggs, gently stirring them into the mixing bowl
- For the next step, we will add the dry ingredients from the first bowl (flour etc) to the mixing bowl. Do this by adding half of the dry ingredients at a time, mixing gently between additions. Then continue mixing the cookie dough until the ingredients are mixed together.
- Next, stir in the oatmeal and raisins by hand. Bake these cookies for 10-12 minutes or until the edges begin to brown

- Layer the ingredients in a jar, packing down well between each layer.
- Attach the following instructions to a gift tag: Sugar-Free Oatmeal Raisin Cookies: Heat oven to 350 degrees F. Grease cookie sheet. - 1.Preheat oven to 350°F. 2.Line two large baking sheets with silicone baking mats or parchment paper. 3.In a large bowl, stir together the canola oil, honey, eggs, vanilla extract, raisins, chopped walnuts, wheat germ, and rolled oats. 4.In a medium bowl, sift together the flour and powdered milk. 5.Stir the dry ingredients into the wet ingredients until well-combined. 6.Scoop spoonfuls of the cookie dough onto the prepared baking sheets. The cookies won't spread much, so you don't need to leave a lot of room between them. 7.Bake for 10 to 12 minutes or until dry around the edges. 8.Cool on a wire rack and store in an airtight container in the refrigerator.
