LOW-FAT ROASTIES
Enjoy these guilt-free roast potatoes - they contain around 6g fat compared to the usual 14g!

Steps:
- Heat oven to 200C/fan 180C/gas 6. Put the potatoes and garlic in a roasting tin. Pour over the stock, then brush the tops of the potatoes with half the olive oil. Season, then cook for 50 mins. Brush with the remaining oil and cook 10-15 mins more until the stock is absorbed and the potatoes have browned and cooked through.

Nothing could be more simple or delicious than a beef roast. It provides a comforting dinner, plus many easy weekday meals.

Steps:
- Place roast fat side up on rack in roasting pan without lid.
- Rub with garlic cloves and sprinkle with pepper or use variations below.
- Insert meat thermometer into center of roast.
- Add 1 to 1/2 cups water to pan and place roast in preheated 500 degree oven.
- After 30 minutes, reduce oven temperature to 275 degrees.
- Cook an additional 1 1/4 to 1 3/4 hours until medium done, until internal temperature 160 degrees.

DIABETIC, LOW-FAT KEY LIME BBQ BEEF ROAST
Try this marinade for an incredibly flavourful and beautifully browned roast. The marinating time can be your choice, I like to start it the night before.

Steps:
- Pierce roast numerous times with a fork.
- Combine marinade ingredients in shallow container or resealable freezer bag, reserving 2 tbsps.
- of the marinade for basting roast while barbecuing.
- Marinate roast 12 to 48 hours in refrigerator.
- Discard used marinade.
- Insert meat thermometer into centre of roast.
- Grill fat side up or cook on rotisserie over drip pan in closed barbecue over indirect medium heat only to rare (i. e. internal temperature of 140 degrees) or medium (i. e. internal temperature of 160 degrees).
- Baste roast with the reserved marinade while barbecuing.

DIABETIC, LOW-FAT CARIBBEAN QUICK ROAST
This calls for a quick roast but I couldn't find it so I used a rump roast and added 1 hour to the ooking time. For medium rare. The glazing sauce from this recipe can also be served as a chutney to go with other roasts, steaks or burgers.

Steps:
- In small saucepan, combine pineapple, steak sauce, curry powder, ginger, allspice, garlic, onion and banana pepper.
- Simmer over medium heat, stirring occasionally for 5 minutes.
- Set aside 1/3 cup of this sauce mixture.
- Remove netting from roast.
- Insert meat thermometer lengthwise into centre of roast so that shaft is not visible.
- Place on rack in ovenproof skillet or shallow pan.
- Brush surface of roast with sauce mixture remaining in saucepan.
- Cook 1 lb.
- roast, uncovered, in 350 degrees oven 50 to 60 minutes or until thermometer reads 155 degrees for medium.
- Remove roast to cutting board; tent with foil for 5 minutes to allow temperature to rise 5 degrees.
- Cut into thin slices across the grain and serve with the reserved 1/3 cup sauce.
