DIRTY RICE WITH BEANS AND ANDOUILLE SAUSAGE



Dirty Rice with Beans and Andouille Sausage image

Super simple to prepare and easily something that can be tackled in between assisting with homework during weeknights. It is filling and pairs well with a side salad or roasted broccoli for extra vegetables.

16 ounces All-Natural Andouille Sausage
1 1/2 cups rice - white or brown
1 1/2 cups water
1 1/2 cups vegetable or chicken broth
1 tablespoon olive oil
1 medium yellow onion, diced
2 medium green bell peppers, chopped
4 ribs celery, diced
2 clove garlic, minced
1 - 2 teaspoons Cajun seasoning
1 teaspoon dried thyme
1 (16 ounce) can BUSH'S® Dark Red Kidney Beans, drained and rinsed
4 green onions, thinly sliced
salt and pepper, to taste

Steps:

  • Prepare the sausage by browning it on all sides. When it is browned and cooked through, set aside on a cutting board until cool enough to handle. Then, slice into rounds about 1/4 to 1/2 an inch thick, according to your preference. Set aside.
  • Prepare the rice as instructed according to the package, using 1 1/2 cups water and substituting the remaining amount of water that you would use with the 1 1/2 cups vegetable or chicken broth.
  • In a cast-iron skillet or sauté pan, heat the oil over medium heat. Add the onion and sauté for 5 - 7 minutes, or until tender. Add the garlic, celery, green bell peppers, Cajun seasoning, and thyme and sauté for 2 more minutes. Set aside.
  • In a large bowl, combine the cooked rice, cooked and sliced sausage, kidney beans, the sautéed vegetable mixture, and the green onions. Taste for seasoning and add salt and pepper, if desired. Serve immediately.

I love this Bojangles dirty rice recipe due to loads of sausage and spicy flavors. I think it's a pretty good rendition, and you can create the amount of spice that you and your family like.

3 cups cooked rice (, white or brown)
1 pound breakfast sausage (, ground (spicy or mild))
½ large red bell pepper (, chopped (about 1 cup))
1 small onion (, chopped (about 1 cup))
¼ tsp cayenne pepper (, more if you want extra spicy (optional if sausage is spicy))
1 Tbsp garlic (, minced)
1 tsp paprika (, smoked or sweet (depending on amount of spice wanted))
½ tsp black pepper
14.5 ounces canned black beans (, drained (optional alternative))

Steps:

  • In a large heavy skillet, cook sausage until browned, breaking it up as it cooks (about 10 minutes).
  • Remove all but 2 Tablespoons of fat from the pan.
  • To the pan, add bell pepper, onion, cayenne, garlic, paprika, and black pepper and stir together.
  • With heat on medium, cook for about 10 minutes or until bell pepper is softened.
  • Add cooked rice to skillet, reduce heat to low, and stir. Heat 5 minutes or until hot throughout. Serve right away.

Skillet Dirty Rice & Beans is a one pan dinner that is easy to make and full of Cajun flavors and spices.

1 tbsp olive oil
1 cup yellow onion, diced ((about 1 onions))
3 plump garlic cloves, chopped
12 oz fully cooked Smoked Beef Sausage Link, cut into chunks about the size of the kidney beans
1 tsp Cajun seasoning, heaping **see note about salt ((I use Louisiana Fish Fry Cajun Seasoning))
1 tsp smoked paprika, heaping
1/4 tsp chili powder
1/2 tsp each- garlic powder & onion powder
pinch red pepper flakes
1 1/2 cups chicken broth
14.5 oz diced tomatoes, do not drain
1 cup long grain white rice (uncooked)
15.5 oz light or dark red kidney beans, drained

Steps:

  • In a large skillet with a lid heat the oil over medium heat. Saute the onions and garlic for about 5 minutes, stirring often.Add the diced sausage and give a stir or two.
  • Sprinkle in all the seasonings and spices. Stir to coat the onions and sausage.Stir in the (uncooked) rice.
  • Pour the chicken broth and tomatoes into the pot and scrape up and browned bits from the bottom of the pot.Turn the heat to medium high and bring the liquid to a hard simmer for a minute.Turn the heat to low and pop the lid on the pot. Cook for 18-20 minutes.
  • Remove the pot from the burner and let sit, with the lid on, for 5 minutes.Stir the bean into the mixture and serve.

I invented this version of dirty rice to accompany my husbands fantastic ribs. It's easy to make, but it does want to simmer for a good long time.

2 1/2 cups brown rice
1 (15 ounce) can kidney beans
1 (15 ounce) can black beans
5 cups mushroom broth (I use Better than Boullion)
1 tablespoon oregano
1 tablespoon basil
1 teaspoon cumin
2 bay leaves
1 (10 1/2 ounce) can cream of mushroom soup
1 carrot, chopped small
1 stalk celery, minced
1/2 lb bacon, chopped into 1 in long pieces
1 white onion, 1/2 diced 1/2 chopped
1/3 cup olive oil
1 garlic clove, minced

Steps:

  • Fry the Bacon.
  • Cook the onion in the grease until it's translucent.
  • Add the olive oil, oregano,basil, cumin, garlic.
  • Rinse your rice 3 times.
  • Add rice and sautee for 10 minutes.
  • Add broth, beans (do not drain), bay leaves, and soup.
  • Cover, Bring to a boil, turn down heat to between low and medium.
  • Simmer for at least an hour, ideally two.

1 1/2 cups rice - white or brown
1 1/2 cups water
1 1/2 cups vegetable or chicken broth
1 tablespoon olive oil
1 medium yellow onion, diced
2 medium green bell peppers, chopped
4 ribs celery, diced
2 clove garlic, minced
1 - 2 teaspoons Cajun seasoning
1 teaspoon dried thyme
1 (16 ounce) can BUSH'S® Dark Red Kidney Beans, drained and rinsed
4 green onions, thinly sliced
salt and pepper, to taste

Steps:

  • Cut the sausage into coins and browned them in the Ninja on Stove Top High. Set aside. Turn your Ninja to Stove Top Medium and heat oil. Add the onion and sauté for 5 - 7 minutes, or until tender. Add the garlic, celery, green bell peppers, Cajun seasoning and thyme and sauté for 2 more minutes. Set aside. Add rice and about 3 cups chicken broth. Bring to boil, and turned down to Stove Top Low. The rice will need extra liquid in the Ninja. You may need to turn it back up to Stove Top Medium, if the rice still has a little bit of a "crunch." Check every 5 minutes or so and add liquid if needed (this also helps to ensure the bottom won't burn.) When there is about 5 minutes left in cooking add the sliced sausage, kidney beans, the sautéed vegetable mixture, and the green onions. Taste for seasoning and add salt and pepper, if desired. Serve immediately.
