FRIED MEATLOAF
You can make this retro diner treat with just about any leftover meatloaf, but it's especially good with a side of mushroom gravy.

- Set three wide, shallow dishes (such as pie plates) in a row on the counter. Put the flour in the first dish. Crack the egg into the second dish and beat it lightly with a fork. Put the panko or crumbs in the third dish and toss them with 1/2 tsp. salt and 1/4 tsp. pepper. Working with one slice at a time, dredge the meatloaf first in the flour and then in the egg, coating it on all sides and shaking gently after each dip to knock off the excess. Lay the meatloaf in the crumbs, scatter some crumbs on top of the slice, and press gently to adhere. Flip and repeat once or twice with the crumbs to coat really well; be sure to get the edges as well. As you finish each slice, set it on a tray. When all are coated, refrigerate for at least 5 minutes and up to 1/2 hour to let the breading set up. Save some of the leftover crumbs for testing the frying oil temperature and discard the remaining breading ingredients. When ready to cook, pour about 1/3 inch of oil into a heavy-duty 10-inch straight-sided sauté pan. Have ready a paper-towel-lined tray or plate. Heat the oil over medium-high heat until it immediately and vigorously bubbles when you gently flick a few leftover crumbs into it. With a slotted metal spatula, carefully slip the breaded meatloaf into the oil. Fry until golden brown on both sides, about 1 minute per side, using the spatula to carefully turn the slices. Transfer to the paper towels, sprinkle lightly with salt, and let sit briefly to drain excess oil. Serve hot.

LIZZIE'S DISHWASHER FISH
My late MIL, Lizzie, was a wild and crazy cook. One day she was presented with a whole bluefish, fresh from the ocean. She wanted to steam the fish but did not have a large enough steamer. Voila! She thought, the dishwasher! And, believe it, or not, it was a huge success. Now, although most of you reading this will not attempt this daring recipe it may be of use to another wild and crazy chef out there one day. That's why I have to share this wonderful recipe. Steps:
- Cut two or three large pieces of aluminum foil, large enough to acommodate and completely wrap the fish.
- Place fish on aluminum foil.
- Combine the butter, wine, salt, pepper, and Tarragon and spread on the inside of the whole fish.
- Wrap the fish and make sure it is air-tight.
- Place on the top rack of the dishwasher and run through the full cycle, without soap, please.
- Unwrap and serve with green sauce.

CANNED FISH LOAF
This recipe originally came from Cooks.com. It tasted very flat, so the next few times I made it I added and subtracted and came up with this. I haven't changed too much the last few times I made it. I can't seem to make anything without adding or subbing something.

- Preheat oven to 350 deg F.
- In a medium sized mixing bowl, combine all ingredients, and mix thoroughly.
- Press mixture into a lightly greased 9x5 loaf pan.

JAPANESE-STYLE MEATLOAF
I adapted this from a korokke recipe I frequently use. Korokke is a Japanese fried croquette made with seasoned ground meat and mashed potato. I combined the seasoning used there with a standard meatloaf recipe to create this fun hybrid. I serve it with mashed potatoes and a spicy barbeque sauce.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat corn oil and sesame oil in a large skillet. Add carrots, green bell pepper, and onion; cook and stir until softened, about 5 minutes. Stir in soy sauce, sake, mirin, sugar, and fish soup stock. Mix in garlic and ginger. Let cool, 5 to 10 minutes.
- Mix turkey, pork, and eggs together in a large bowl until blended. Stir in cooled carrot mixture and bread crumbs until well combined. Press evenly into a loaf pan.
- Bake in the preheated oven until browned, about 30 minutes. Increase oven temperature to 400 degrees F (200 degrees C); continue baking until an instant-read thermometer inserted into the center reads at least 160 degrees F (70 degrees C), about 30 minutes more.
- Let stand before serving, about 5 minutes.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
- Combine beef, pork rinds, Parmesan cheese, tomato sauce, onion, egg, parsley, salt, pepper, and garlic powder in a bowl and shape into a loaf. Transfer to the prepared pan.

- Place the potatoes in a microwave safe glass bowl. Cover tightly with plastic wrap and poke 4 of 5 holes in the top. Microwave on high for 6 or 7 minutes. When you remove the bowl from the microwave, be sure to use oven mitts. The bowl will of course be hot, but the steam that will come off the food when you remove the plastic wrap can scald unprotected hands.Some of the potatoes may be stuck together. Not to worry, you can break them up while they are frying in the skillet.
- Just before you remove the potatoes from the microwave, heat the oil in a large skillet over high heat. Place the onions, bell pepper and potatoes in the skillet. Add salt and pepper. Cover and cook on high heat for 4 minutes.
- When onions and bell peppers begin to sizzle, turn heat to a medium high. Cover once again and cook for another 10 to 12 minutes, stirring often so that potatoes brown well but do not burn. When potatoes are starting to get crispy and onions are turning a dark brown, they are done. Turn off the heat. Sprinkle with the cheddar cheese and stir to mix and melt the cheese. Serve along side some baked chicken and green beans.
