GRANDMOTHER'S FAMOUS CRANBERRY BREAD



Grandmother's Famous Cranberry Bread image

This is a delicious bread with golden raisins and cranberries. It's perfect for Thanksgiving or any special holiday.

2 cups sifted all-purpose flour
1 cup white sugar
1 ½ teaspoons baking powder
1 teaspoon salt
½ teaspoon baking soda
¼ cup butter
1 egg, beaten
1 teaspoon orange zest
¾ cup orange juice
1 ½ cups golden raisins
1 ½ cups chopped cranberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray or grease one 9x5x3 inch loaf pan.
  • Whisk together the flour, sugar, baking powder, salt and baking soda.
  • Cut in butter until mixture is crumbly. Add egg, orange peel, and orange juice; stir to mix and fold in raisins and cranberries.
  • Pour into loaf pan and bake for 70 minutes or until toothpick inserted comes out clean. Remove from pan; cool on wire rack.

This was my Mothers special recipe for Cranberry bread. The best I've ever had and highly recommended! The flavors of cranberries, orange and pineapple compliment each other, and it's nice and moist. This bread continues to be a holiday tradition and family favorite.

Number Of Ingredients 11

2 cups sifted flour
3/4 cup sugar
1 1/2 teaspoons double-acting baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 orange, juice and grated rind
2 tablespoons vegetable oil
1/2 cup well-drained crushed pineapple in juice (save juice)
1 large egg, beaten
1 cup cranberries, cut in half
1/2 cup chopped walnuts

Steps:

  • Sift together the dry ingredients in a large bowl.
  • In a 3/4 measuring cup, add the juice from one orange, vegetable oil and reserved juice from the can of crushed pineapple to equal 3/4 Cup.
  • In a small bowl, add liquid with grated orange rind and beaten egg. Stir to combine well, then add to dry ingredients, stirring just enough to dampen dough mixture (do not over beat).
  • Fold in chopped nuts, cranberries and crushed pineapple.
  • Bake in a large greased loaf pan at 350 degrees for 50 to 60 minutes, or until a knife inserted in the middle comes out clean.
  • Makes 1 loaf.
  • SUGGESTION: To save time, you can coarsely chop the cranberries in a food processor, if you want. But be careful not to over pulse!
  • NOTE: You may want to double the recipe and make 2 loaves. It goes fast!

Cranberry bread made with whole-berry cranberry sauce and the crunch of walnuts is a special treat for fall.

Spectrum Canola Oil Baking Spray
1 ½ cups Arrowhead Mills Organic Stone Ground Whole Wheat Flour
½ cup Arrowhead Mills Organic Enriched Unbleached White Flour
⅓ cup Hain Pure Foods Organic Sugar
1 teaspoon Hain Pure Foods Iodized Sea Salt
1 teaspoon ground cinnamon
½ teaspoon Hain Pure Foods Gluten Free Featherweight Baking Powder
1 large egg
1 (16 ounce) can whole-berry cranberry sauce
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F. Coat a loaf pan with Spectrum Canola Oil Baking Spray.
  • In a large bowl, combine the Arrowhead Mills Organic Stone Ground Whole Wheat Flour, Arrowhead Mills Organic Enriched Unbleached White Flour, Hain Pure Foods Organic Sugar, Hain Pure Foods Iodized Sea Salt, cinnamon and Hain Pure Foods Gluten Free Featherweight Baking Powder. Add the egg, cranberry sauce and walnuts, and mix just until moistened (mixture will be dry and take effort to mix). Pour into the prepared pan.
  • Bake for 1 hour, or until a wooden pick inserted in the center comes out clean. Cool for 10 minutes in the pan. Remove to a rack, and cool completely.
