BAKED WHITE BEANS AND SAUSAGE WITH SAGE
This incredibly easy one-pan dinner is from the cookbook "The Silver Spoon for Children," with more than 40 traditional recipes adapted from "The Silver Spoon," a book that appears in many home kitchens in Italy. Older children with some experience can follow this recipe as is, but if you've got little ones who want to help, they can stir the sage, beans and apple juice together in a large bowl while the sausages bake, then you can pour the mixture into the hot pan. If you like your beans on the saucy side, add 1/4 cup more apple juice. Serve with buttered crusty rolls and something leafy and green.

- Heat the oven to 375 degrees. In a 9-by-13-inch baking dish, prick the sausages all over with a fork. Add the garlic, drizzle with the olive oil and toss to coat. Bake until the sausages start to brown on top, 20 to 25 minutes.
- Put on your oven mitts, take the roasting pan out of the oven and set it on a heatproof surface. Using tongs, carefully turn the sausages over. (The sausages will brown on the other side when they go back into the oven.)
- Tear the sage leaves into little pieces and add them to the sausages along with the drained beans and apple juice. Give the bean mixture a stir.
- Wearing your oven mitts, put the roasting pan back in the oven and bake until the bean mixture is warmed, about 20 minutes.
- Put on your oven mitts one last time to remove the roasting pan from the oven. To serve, carefully stir everything together using a wooden spoon, and add a little salt and pepper to taste.

- Soak 1 ancho chile or dried choricero pepper in a small bowl of hot water until softened, about 20 minutes; drain. Remove stem and seeds; discard. Set pepper aside.
- Heat 2 tablespoons olive oil in a large saucepan over medium-high heat. Add 1 finely chopped red onion, season with salt, and cook, stirring often, until soft and just starting to brown, 8-10 minutes.
- Add 1 pound dried kidney beans, preferably red speckled, or cranberry beans, 4 oounces chopped bacon (about 4 slices), and 6 smashed peeled garlic cloves to saucepan, then add water to cover by 3". Bring to a simmer and cook, skimming surface and adding more water as needed to keep beans submerged, 1 hour. Add reserved rehydrated pepper and 8 ounces morcilla (Spanish blood sausage) or fresh chorizo (about 2 links) and cook until beans are tender, 60-75 minutes.
- Transfer sausage to a cutting board and slice. Discard pepper. Mix 2 tablespoons apple cider vinegar into beans and season with salt.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add 1 finely chopped garlic clove and cook, stirring, until fragrant, about 30 seconds. Add 1/4 head thinly sliced green cabbage (about 3 cups), season with salt, and cook, tossing often, until softened, about 4 minutes.
- Serve beans topped with sliced sausage, sautéed cabbage, and pickled guindilla or other mild pickled peppers.
BLACK BEANS AND SAUSAGE

VIKKI'S RED BEAN SAUSAGE
I went to a great restaurant in Savannah one summer and had red beans and rice. When I came home, I tried to figure out just how they made it. I haven't figured it out exactly, but this recipe is a pretty good imitation. Serve with hot white rice, fried potatoes, and cornbread if desired.

- Heat oil in a large skillet over medium high heat. Add sausage and onion and saute until onions are translucent. Add bell pepper, garlic, parsley, paprika, cayenne pepper and ground black pepper. Saute all together, stirring occasionally, until bell pepper is a little tender (about 10 minutes).

- Heat the oven to 220C/200C fan/gas 7. Heat 1 tbsp olive oil in a shallow flameproof casserole over a medium heat and fry the pork sausages for 10 mins until browned on all sides. Transfer to a plate. Drizzle another 1 tbsp oil into the casserole, scatter in the chorizo and cook for 3-4 mins until beginning to crisp and release its oil. Add the onion and bay, and cook for 5 mins more until the onion is soft.
- Stir in the tomato purée and scatter over the sugar. Turn up the heat to medium-high and cook for another 2 mins until sticky and jammy, then splash in the vinegar. Simmer for 1 min more, then tip in the tomatoes and beans. Stir, then bring to a simmer. Nestle the sausages in the sauce and pour over any of the resting juices. Bake uncovered for 30 mins.
- Meanwhile, make the crumbs. Tip the bread and parmesan into a food processor and pulse with half the thyme to a chunky texture. Scatter the crumbs over a baking sheet and drizzle with the remaining oil. Bake alongside the casserole for 10 mins, stirring the crumbs once or twice until crisp and golden. Scatter the crumbs over the casserole with the rest of the thyme just before serving, or serve on the side for everyone to help themselves.

EXTREMELY EASY LOUISIANA HOMESTYLE REDBEANS AND SAUSAGE
There are good red beans and sausage recipes and there are bad. Sadly, most are bad. They are either too bland, too watery or too seasoned. This recipe will make you feel like you're a master Cajun chef! I personally think that Popeye's fast food has the best red beans on the planet, but these are a close second and it's LOT cheaper. Please note: In order to make this taste as intended, you will want to use the ingredients I list, including the EXACT brand names. Using the correct ingredients will yield a rich, creamy, smokey flavored red beans and sausage delight! Best served in a double portion over a single portion of white rice. For a unique flavor, substitute white rice with cajun dirty rice, which is rice dressing as most cajuns call it.

- Slice the Richard's Beef and Pork Sausage into medium-thin slices.
- Put the sliced sausage into a 3-4 quart pot and brown on low to medium heat. Add the 2 Tbs. of Tony Chachere's Seasoning when sausage begins to simmer and stir. Allow the sausage to brown and crisp, but be careful not burn! Stir regularly until the sausage has browned properly. Do not drain the remaining oil.
- While the sausage is browning, open both cans of Blue Runner Cream Style Red Beans and put aside until the sausage is browned to your satisfaction.
- Lower your heat to lowest setting and add the 1/2 cup of warm water and both cans of red beans to the sausage.
- Add 1 teaspoons Dry Italian Seasoning, 1 teaspoons Ground Pepper and the optional 1/2 teaspoons of Salt and stir well. Pay attention to make sure nothing is sticking to the bottom of the pot.
- Increase the stove heat to just above the lowest setting, cover and allow to simmer for 30 minutes. Make sure to check and stir every few minutes. If too much liquid has evaporated, add a little warm water and stir.
- Serve over white rice or dirty rice in a 2:1 ratio (Twice the amount of red beans to white rice portion).
- Note: You can substitute Richard's brand sausage with Savoie's brand easily, but if neither is available, you'll have to trust your instincts on what type to get. Most people in Louisiana know and love Blue Runner's brand of home-style beans, so if it isn't available in your area, you can try to substitute with another brand. Chances are it won't taste as good, and you'll have to mash and season the beans more. Local Louisiana Wal-Mart stores should carry Blue Runner, though.
- For an added kick you can use "hot" flavored sausage instead of regular.
- Refrigerate or freeze left-overs. When reheating, add a small amount of water.
