Double Chocolate Banana Cake is a very dense, soft and delicious cake which you can enjoy any time of the day. In preparing this cake I used dark brown sugar, dark chocolate chunks and my house was filled with a chocolate-banana aroma.

Plain flour/Maida/All-purpose flour - 1cup
Cocoa powder-1/2 cup
Cinnamon powder-1/2 tsp
Packed dark brown sugar-2/3 cup
Melted Unsalted butter -1/2 cup
Dark chocolate chunks-1/2 cup
Chocolate chips- 3tbsp
Large egg -1
Ripe bananas-3 (large)
Vanilla extract - 1 tsp
Baking Soda -1tsp
Salt-1/2 tsp

Steps:

  • Preheat the oven to 180°C /356°F.
  • Grease and line the loaf tin with baking paper/parchment paper.
  • In a bowl, mash the bananas with the help of a fork and keep aside.
  • Take a bowl, sift plain flour, cocoa powder and baking soda. Keep aside.
  • In a banana mixture, add melted unsalted butter, brown sugar and whisk nicely until everything is combined.
  • Then add egg and combine well.
  • Next add the sifted flour, baking soda, cocoa powder along vanilla extract, cinnamon powder and mix well without any lumps.
  • After that add chocolate chunks and stir well.
  • Transfer the batter into the greased loaf tin, add chocolate chips and bake for 50-60 minutes or until the skewer comes clean (here mine done exactly 55 mins)
  • Allow it to cool in the tin for 10-15 mins and then transfer it on a wire rack to cool completely.
  • After that slice the cake and enjoy!

This is a really quick and easy recipe to whip up. Tip: if you have too many ripe bananas to eat, peel and freeze them. That way you'll always have them on hand to make this recipe (or any recipe that calls for mashed banana).

2 cups flour
1 cup sugar
2 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup milk
1/2 cup mashed ripe banana
1/3 cup butter, melted
1 tablespoon lemon juice
1 teaspoon vanilla
3/4 cup mini chocolate chips or 3/4 cup regular chocolate chips

Steps:

  • Mix together flour, sugar, cocoa, baking soda and salt.
  • Make a well in the centre of the dry ingredients.
  • Add milk, banana, butter, lemon juice and vanilla.
  • Beat with a fork till well blended, about 2 minutes.
  • Stir in chocolate chips.
  • Pour into greased 9-inch square cake pan.
  • Bake in preheated 350F oven 45-50 minutes or until toothpick inserted in centre of cake comes out clean.
  • Cool completely and cut into squares.

If you don't have any zucchinis - you can replace by the same amount of carrots. The chocolate icing is delicious! Another wonderful cake from Rose Reisman.

1 cup packed brown sugar
1/2 cup granulated sugar
1/3 cup vegetable oil
1 medium ripe banana, mashed (1/3 cup)
1 teaspoon vanilla
2 large eggs
2 cups finely grated peeled zucchini
1/2 cup canned crushed pineapple, drained
2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/3 cup semi-sweet chocolate chips
1/4 cup low-fat sour cream
1/3 cup light cream cheese, softened
1 cup icing sugar
1 tablespoon unsweetened cocoa powder
1 tablespoon low-fat milk

Steps:

  • Preheat the oven to 350°F Spray a 12-cup Bundt pan with vegetable spray.
  • Make cake: in a food processor, combine brown sugar, granulated sugar, oil, banana, vanilla and eggs; process the mixture until it is smooth. Add zucchini and pineapple; process the mixture just until everything is combined.
  • In a bowl, stir together flour, cocoa, baking powder and baking soda. Stir the wet ingredients into dry ingredients until they are mixed. Stir in the chocolate chips and sour cream. Spoon the mixture into a prepared pan.
  • Place the pan in the centre of the oven and bake 40 to 45 minutes or until a tester inserted in the centre comes out clean. Let the pan cool on a wire rack.
  • Make icing: with an electric mixer or food processor, cream together cream cheese, icing sugar, cocoa and milk. Spread mixture over the cooled cake.

¾ cup white sugar
½ cup brown sugar
¾ cup cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups mashed very ripe bananas
½ cup creamy peanut butter
1 ¼ cups almond milk
¾ cup canola oil
1 (10 ounce) bag semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x12-inch baking pan.
  • Mix pastry flour, white sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt together in a bowl. Stir bananas and peanut butter together in a separate bowl until smooth; add almond milk and oil and mix well. Carefully fold banana mixture into flour mixture until batter is just combined; fold in chocolate chips. Pour batter into the prepared pan.
