MARINATED TURKEY BREAST

1 turkey breast ((bone-in or boneless, skin-on, about 2 - 2 1/2 lbs))
3 rosemary twigs for garnish
1/4 cup olive oil
2 Tbsp sesame oil
1/2 cup low sodium soy sauce
2 Tbsp Worcestershire sauce
Juice from 1 lemon
1/2 cup honey or maple syrup
8 cloves of garlic (minced)
3 rosemary twigs (whole)
1 tsp freshly ground black pepper
4 tsp kosher salt (plus more to taste)

Steps:

  • Prepare the marinade by mixing all of the ingredients together in a large bowl or a plastic Ziplock bag. Add the turkey breast and make sure that every part is covered with the marinade. If using a Ziplock bag, expel as much air as possible before sealing it. Marinate in a fridge for 12-24 hours. If marinating is not an option, roast the breast immediately and serve with those delicious pan juices - it will still be awesome.
  • Preheat oven to 325F.
  • Place the turkey breast into a deep baking dish and pour in the marinade. It's best to use a baking dish that is not too big otherwise too much liquid will evaporate. Bake uncovered on middle rack for about 1 to 1 1/2 hours, depending on size, until the internal temperature of the meat in the thickest part reaches 160F - the temperature will rise to 165F during resting (see Notes). Baste the top and the sides of the breast with pan juices about every 20 minutes - this will prevent the top from drying out and will help with browning.
  • If toward the end of baking the skin did not brown enough, turn on the broiler on high for 2-3 minutes. Do this before the internal temperature reaches 160F. I normally do it at about 150F internal. Monitor broiling process very closely as the skin can go from a nice deep-golden brown to charred pretty quickly.
  • Remove the turkey breast from the oven and let it rest for 5 minutes before carving and serving. I find that it's best to transfer the breast to a serving platter immediately upon removing from the oven. If left to rest in the hot baking dish, the internal temperature will rise too much and meat will lose more moisture.
  • Carve the meat, place on a serving platter and garnish with fresh rosemary twigs. Serve with the pan juices (don't forget to discard the cooked rosemary twigs), they are out-of-this-world delicious.

And the gravy it makes is out of this world. I'm a widow with two children, five grandchildren and a great-grandchild.

1 cup soy sauce
1 cup canola oil
1/4 cup honey
4 teaspoons Worcestershire sauce
2 teaspoons ground ginger
2 teaspoons ground mustard

6 to 7 pounds fresh turkey parts
1/4 cup all-purpose flour, optional
Salt and pepper, optional

Steps:

  • In a small bowl, combine the first eight ingredients. Place turkey in a large heavy-duty plastic bag; add half of marinade. Close the bag; refrigerate overnight, turning bag occasionally. Cover and refrigerate remaining marinade., Drain and discard marinade from turkey; arrange turkey in a single layer in large shallow roasting pan. Pour reserved marinade over turkey. Bake, uncovered, at 325° for 1-1/2 to 2 hours or until tender, basting occasionally if desired. Remove turkey to serving platter and keep warm. , If desired, make gravy: Strain pan juices into a large measuring cup. Skim fat and reserve 1/4 cup in a medium saucepan; discard remaining fat. Blend flour into saucepan. Add water to pan juices to make 2 cups. Add to saucepan; cook and stir until thickened and bubbly. Cook and stir 1 minute longer. Season with salt and pepper. Serve with turkey.

  • Mix all ingredients of the marinade in a large plastic bag. Place turkey breast in a large plastic bag and marinate in the refrigerator overnight. Remove turkey, and transfer marinade to a small saucepan, bring to a boil. Grill turkey breast, basting with reserved marinade, until the temperature registers 175 to 180 degrees, about 35 to 45 minutes for a 5-pound bird.
  • Transfer turkey to a cutting board and slice crosswise. Arrange slices onto a platter, spoon boiled marinade over the turkey slices.

1 (2 1/2 to 3-pound) turkey breast, bone-in
3 cups buttermilk
1/2 cup hot sauce (recommended: Crystal)
2 tablespoons kosher salt
1 tablespoon dried basil
1 tablespoon granulated garlic
1 tablespoon fresh cracked black pepper
1 teaspoon cayenne pepper
1 teaspoon ground white pepper

Steps:

  • Combine all the ingredients together in a large re-sealable plastic bag. Place in a bowl, to catch any leaks, and refrigerate for 12 to 24 hours.
  • Preheat the oven to 325 degrees F.
  • Remove the turkey breast from the brine, drain well and pat dry with paper towels.
  • Place the turkey breast, skin-side up, on a baking sheet fitted with a wire rack. Place in the oven and cook for 1 hour 15 minutes. Turn the oven up to 400 degrees F and cook for an additional 10 to 15 minutes, or until the internal temperature is 160 degrees F and the skin is nicely browned. Remove from the oven, cover with aluminum foil and let rest for 10 minutes.
  • Meanwhile, preheat the grill to medium heat and oil the grates generously with vegetable oil.
  • Once the turkey has rested, cut the meat off the bone and carve into 3/8-inch thick slices. Place the slices on the grill and cook 1 to 2 minutes on each side, just until grill marks develop.
  • Remove from the grill. Use in a Po' Boy or as main course.

6 ounces turkey breast, slices
1/4 teaspoon lemon peel (finely shredded)
1 tablespoon lemon juice
2 teaspoons cooking oil (safflower)
1/2 teaspoon chicken bouillon granule
1/8 teaspoon dried thyme (crushed)
1 teaspoon garlic (minced)
1 1/2 cups zucchini (sliced) or 1 1/2 cups squash (sliced)
1 cup fresh mushrooms (sliced)
1 1/2 teaspoons cornstarch
1/2 teaspoon salt
1/2 teaspoon pepper
cooking spray
hot cooked rice (optional)

Steps:

  • For marinade, stir together lemon peel, lemon juice, oil granuals, thyme, garlic, salt, pepper, & 1/4C water.
  • Place turkey in a plastic bag set in a bowl. Poour marinade over turkey close bag and refrigerate for 2 hours.
  • Remove turkey from bag, reserving marinade. Spray an 8" skillet with cooking spray. Add turkey slices. Cook over medium heat about 4 minutes or till tender & no longer pink, turning once. Remove turkey from skillet; keep warm.
  • Add zucchini, mushrooms, & 2TBS water to the skillet. Cover and cook for 3-4 minutes or till zucchini is crisp-tender.
  • Meanwhile stir together the reserve marinade, & cornstarch. Add to veggies in skillet. Cook and stir till thickened & bubbly. Cook and stir 1 minute more.
  • Serve the veggies with turkey slices & if desired , rice.

The recipe is so easy, the trickiest step will be pulling out your kitchen scale to weigh out the salt. But it's worth doing if you can in order to ensure a properly balanced brine. Emerging from the oven with a beautiful lacquered skin and an incredibly moist and tender texture within, this roast is ideal for a scaled-down Thanksgiving meal, a cozy family dinner or to generate a stack of unbelievably tasty sandwiches.

2 cups buttermilk
33 grams fine sea salt (2 tablespoons)
1 half turkey breast (about 2 1/2 pounds), on or off the bone

Steps:

  • One to two days before you plan to cook, place buttermilk and salt in a gallon-size resealable plastic bag and stir to dissolve salt. Place turkey breast in the bag and seal carefully, expelling the air. Squish the bag to distribute buttermilk all around the turkey, place on a rimmed plate, and refrigerate for 24 to 36 hours. If you're so inclined, you can turn the bag periodically so every part of the turkey gets marinated, but that's not essential.
  • Two hours before you plan to start cooking, remove the turkey from the plastic bag and scrape off as much buttermilk as you can without being obsessive. Discard buttermilk, set the breast on a rimmed plate and bring it to room temperature.
  • Position a rack in the upper third of the oven and heat to 425 degrees. Place breast skin-side up on a rimmed baking sheet lined with a wire rack or parchment paper.
  • Place baking sheet on the prepared oven rack and roast the turkey until an instant-read thermometer inserted into the deepest part of the breast without touching bone registers 150 degrees, about 40 minutes for a boneless breast or 50 minutes for a bone-in breast. (You may want to tent the breast with aluminum foil if it's darkening too quickly.)
  • Transfer turkey to a cutting board or platter and allow to rest at least 15 minutes before carving.
