Double-Decker Apricot Turkey

Feel like you're in a jam with serving the same old sandwiches? Here's a turkey stack that will add variety.

1/3 cup apricot jam
1 tablespoon Dijon mustard
1/2 cup plain whipped cream cheese or honey-nut soft cream cheese (from 8-ounce tub)
2 tablespoons chopped dried apricots
16 slices cinnamon raisin bread
8 slices whole wheat bread
1 pound thinly sliced smoked turkey or fully cooked ham

Steps:

  • Mix apricot jam and mustard. Mix cream cheese and apricots.
  • Spread jam mixture on one side of 8 slices cinnamon bread and 8 slices wheat bread. Place turkey on cinnamon bread; add wheat bread with spread sides down.
  • Spread cream cheese mixture on remaining 8 slices cinnamon bread. Place cinnamon bread, cream cheese sides down, on sandwich stacks. Cut each sandwich diagonally into fourths to make 4 triangular sandwiches.

Number Of Ingredients 5

1 sheet frozen puff pastry, thawed
1/4 cup apricot preserves
1/2 teaspoon ground mustard
1/2 cup shredded Monterey Jack cheese
1/4 pound sliced deli turkey

Steps:

  • Unfold pastry; layer with preserves, mustard, cheese and turkey. Roll up jelly-roll style. Cut into 16 slices. Place cut side down on a parchment-lined baking sheet., Bake at 400° for 15-20 minutes or until golden brown. Freeze option: Freeze cooled appetizers in a resealable plastic freezer bag. To use, reheat appetizers on a parchment-lined baking sheet in a preheated 400° oven until crisp and heated through.

1 medium Gala apple
1 lemon wedge
4 slices smoked turkey deli meat
2 slices Cheddar, cut in half
2 slices bacon, cooked and cut in half
1/2 cup arugula

Steps:

  • Core the apple and slice into 1/4-inch-thick round slices, slicing from the center of the apple to get even pieces. Coat the apple slices with lemon juice. Place down an apple slice as the base of the sandwich and top with 2 slices of turkey, 1 slice of cheese crisscrossed, 1 slice of bacon crisscrossed and 1/4 cup arugula. Top with another slice of apple and repeat with the remaining ingredients. Top with another apple slice. If transporting for an on-the-go lunch, wrap the sandwich tightly with plastic wrap and refrigerate until ready to eat.
