DOUBLE DUTY DINNERS: MEATLOAF & MEATBALLS

Double Duty Dinners: Meatloaf & Meatballs image

From Kraft Food & Family magazine. This is a recipe good for OAMC as well I think. On the menu is Mini Meatloaves and Swedish Meatballs. Although I think the meatballs could be used in other dishes or sauces of choice, since the meatloaf recipe could easily be doctored up but the "swedish" meatball sauce was kinda bland to me. I've also experimented and added some finely chopped and sauteed or steamed carrots, celery, onions, and zucchini as well. Note: The original recipe calls for 2 lbs of ground beef, I like to mix that up, just my personal preferance. Feel free to do all beef, or whatever you like. *Also please do add seasonings to taste, I thought it needed some with the original recipe!

Time 1h25m

Yield 4 per recipe

Number Of Ingredients 15

1 (12 ounce) jar beef gravy, divided
1 cup water (I use beef broth)
1 lb ground beef
1 lb ground turkey or 1 lb ground pork
1 (6 1/4 ounce) package seasoned stuffing mix
2 eggs, lightly beaten
garlic powder, to taste
onion powder, to taste
salt & pepper, to taste
1 1/4 cups beef gravy (from above recipe)
1/2 cup sour cream
16 meatballs
salt and pepper, to taste
cooked noodles, of choice hot & buttered with
butter

Steps:

  • (Mini Meatloaves).
  • Preheat oven to 400°F Pour 1/4 cup of the gravy into large bowl. Stir in broth or water. Add meat, stuffing mix and eggs (seasonings as well here); mix lightly. Refrigerate remaining gravy for use in Swedish Meatballs.
  • Divide meat mixture in half. Shape half of the meat mixture into 2 oval loaves on baking sheet. Shape remaining mixture into about 16 balls. Place, in a single layer, onto another baking sheet. (I can get them to all fit in one full size baking sheet).
  • Bake 20 minutes. Remove the meatballs from the oven. Bake meat loaves an additional 10 minutes or so until no longer pink in center. Slice and serve with your favorite veggies.
  • Refrigerate the meatballs to serve next meal.
  • (Swedish Meatballs).
  • Mix gravy and sour cream in a large saucepan.
  • Add meatballs and cook on low heat for 10 minutes or until heated through, stirring occasionally.
  • Serve with hot buttered noodles and a green salad!

MEATLOAF MEATBALLS

Meatloaf Meatballs image

My family's favorite "leftover" recipe that will give you two different dinners in one. First you will have a killer meatloaf, and then you will have killer meatballs. Keep in mind that you will need leftover meatloaf to make your meatballs, so if you are serving a large family I suggest upping the amounts. This is my first recipe posting so please give it a try and tell me what you think.

Time 1h10m

Yield 1 Meatloaf and pot of meatballs, 4-6 serving(s)

Number Of Ingredients 10

1 lb meatloaf mix (ground beef, pork, and veal)
1 egg
1 cup milk
1 cup breadcrumbs
2 tablespoons crushed red pepper flakes

1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup ketchup

Steps:

  • Prehead oven to 375 degrees (F).
  • Combine all ingredients in a large bowl (I prefer to use my stand up mixer).
  • Form into a loaf and place in a greased loaf pan or glass baking dish.
  • Bake for 1 hour.
  • Enjoy your meatloaf.
  • Cut the leftovers up into one inch cubes and place in a pot of your favorite tomato sauce.
  • Refridgerate overnight.
  • Cook your "meatloaf meatballs" on low heat for 1 1/2 - 2 hours and serve over pasta.

CHEF JOHN'S MEATBALL-INSPIRED MEATLOAF

Chef John's Meatball-Inspired Meatloaf image

The main point of this Italian meatball-inspired meatloaf is to show you what happens when you make meatloaf like your grandparents did. During the Great Depression, this type of dish was a popular strategy for stretching what little meat you had into as filling a meal as possible.

Time 2h

Yield 10

Number Of Ingredients 15

1 tablespoon olive oil
1 tablespoon butter
1 onion, diced
salt to taste
4 cloves garlic, minced
1 ½ cups very dry white bread crumbs
1 ½ cups milk
2 pounds ground chuck
½ cup chopped fresh flat-leaf parsley
2 ounces grated Parmesan cheese
2 large eggs, beaten
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
3 cups tomato sauce, or to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Heat olive oil and butter together in a large skillet over medium-high heat. Saute onion with a pinch of salt in hot oil and butter until onion is golden brown and soft, 5 to 10 minutes. Add garlic and saute until fragrant, about 30 seconds. Remove skillet from heat and cool onion mixture to room temperature.
  • Place bread crumbs in a large bowl. Add milk and stir with a fork until combined. Let sit until all of the milk is absorbed into the breadcrumbs, 15 to 20 minutes.
  • Combine ground chuck, cooled onion mixture, parsley, Parmesan cheese, eggs, 2 teaspoons salt, black pepper, and cayenne pepper in a bowl. Grab a handful of breadcrumbs and squeeze very gently to remove excess milk. Repeat with remaining breadcrumbs, transfer breadcrumbs to ground chuck mixture, and discard excess milk. Stir ground chuck mixture until evenly combined.
  • Turn chuck mixture out into prepared baking dish, and shape meat into a 3x4x10-inch meatloaf. Pour tomato sauce over the loaf and into the bottom of the dish.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let meatloaf rest for at least 10 minutes before slicing.
