EASY, EXCELLENT BAKED FLOUNDER
This is a great recipe for a night when you're feeling lazy - only a few ingredients, nothing to chop, easy cleanup, and very yummy! My husband announced the fish was 'excellent,' and he's not usually one to rave about food.

- Preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with aluminum foil and coat with cooking spray.
- Rinse flounder fillets, pat dry, and place on the baking sheet. Season with salt and pepper. Whisk butter and wine together in a bowl; pour over flounder. Sprinkle each fillet with bread crumbs and then paprika.
- Bake in the preheated oven until flounder flakes easily with a fork, 25 to 30 minutes.

FLAVORFUL FLOUNDER FOR THE OVEN
Steps:
- Preheat oven to 375 degrees F (190 degrees C). Prepare a 9x13-inch baking dish with nonstick cooking spray.
- Season both sides of flounder fillets with salt. Place into the prepared baking dish. Brush 1 tablespoon lemon juice over fillets.
- Mix remaining lemon juice, Parmesan cheese, melted butter, mayonnaise, and green onions in a bowl; spoon over the fillets.
- Bake flounder in preheated oven for 10 minutes. Switch oven to broil; broil fillets until the tops are just browned, 3 to 5 minutes.

I was born and raised in Philadelphia and my father and I used to go to the New Jersey shore to fish for flounder. He would then cook it this very easy way and trust me, it's DELICIOUS !!!

- Preheat oven to 350 degrees& spray large baking dish with cooking spray.
- Rub the fillets on both sides with lemon juice, then salt and pepper them to taste.
- Place the fillets in the baking dish& completely dab with butter.
- Then sprinkle evenly with chopped scallions& tarragon.

DOWN-EAST BAKED BEANS

- Put beans in a large pot with enough water to cover by about 2 inches. Bring to a simmer over medium-high heat. Reduce heat to a medium and simmer uncovered for 15 minutes. Drain beans, reserving cooking liquid, then transfer beans to a 2-quart bean pot or Dutch oven.
- Preheat oven to 250 degrees. Place salt pork in a small pot, add water to cover, then bring to a boil over high heat. Drain pork and add to beans. In a small bowl, dissolve mustard in 1 teaspoon warm water. Add dissolved mustard, molasses, and rum to beans. Season with salt and pepper, and mix gently but thoroughly.
- Heat reserved cooking liquid in a medium sauce-pan over medium heat. Pour enough of the liquid (about 3 cups) into bean pot so that beans are moist but not floating. Reserve remaining cooking liquid. Cover pot and bake, checking occasionally to ensure that beans are not drying out, adding reserved cooking liquid as needed. Cook until beans are soft, about 5 hours.
- Remove cover, gently stir beans, and return to oven. Bake uncovered until cooking liquid thickens into a sauce. Season to taste with salt and pepper, and serve with brown bread if you like.
EASY GARLIC PARMESAN BAKED FLOUNDER RECIPE (20 MINS)
This one-pan baked flounder recipe with garlic, Parmesan cheese, and vegetables is easy and so delicious (thanks to a bold and lemony sauce with Mediterranean spices!). - Heat the oven to 350 degrees F.
- Pat the fish dry and season it well with kosher salt and black pepper on both sides. Arrange the fish in a large pan and add the zucchini and onions next to it and season them with salt and pepper.
- In a small mixing bowl, add the garlic, spices, lemon juice, and olive oil. Whisk to combine.
- Pour the sauce all over the fish and vegetables.
- Bake in the heated oven for 7 to 10 minutes, then carefully remove the pan and sprinkle the grated parmesan all over the fish and vegetables. - Turn the oven on at 400°F. Rinse off the fillets and pat them dry with a paper towel. Spray a cookie sheet with oil and spread the fillets out on it. You could line the cookie sheet with aluminum foil before you spray it for an easier cleanup. In a bowl 1/4 cup olive oil or melt 1/2 stick of butter and add 1 tablespoon garlic powder or chopped garlic, salt, pepper, juice from 1/2 of a lemon and dried parsley flakes. Here's where you get to do it your own way. With the basic oil or butter then you can add lots of different things to your liking. Paprika, Parmesan cheese, honey, red pepper flakes, balsamic vinegar and on and on. Brush the mixture over the flounder saving some for the veggies.
- Line a small baking pan with foil and put in some potatoes cut into about 3/4 inch cubes and some frozen broccoli florets or carrots. Brush them with the rest of the butter (or oil) mixture and put everything in the oven at the same time.
- Seven minutes on bake then three minutes on broil, but, all ovens are different so watch them. When the flounder starts to sizzle around the edges switch from bake to broil and then as soon as they start to get the slightest brown on top take them out. The veggies will keep up with the fish so it all should be ready to go.
- You are the chef! A nice dry white wine would go along good with your Oven Baked Flounder. Gammy likes Pinot Grigio so thats what we have (surprised?) And since the oven is on, some of poppop's easy homemade bread wouldn't slow things down.
