Down-Home Cornbread image

This is one of my favorite recipes for skillet cornbread, Southern-style. It's a tradition for many with chili, pinto beans, soups, greens, and other delicious Southern meals.

nonstick cooking spray
1/2 cup flour
1 1/2 cups cornmeal
1 teaspoon salt
1 teaspoon sugar
1 tablespoon baking powder
3 large eggs,room temperature
1 1/4 cups low-fat milk,room temperature
8 tablespoons (one stick) unsalted butter, melted

Steps:

  • Preheat the oven to 400°F. Coat a cast iron skillet with nonstick spray.
  • Sift the flour, cornmeal, salt, sugar and baking powder together in a mixing bowl. (This can be done the night before and kept covered on the counter.)
  • Stir in the eggs, milk and butter with a wooden spoon until the dry ingredients are just moistened. Do not overmix.
  • Pour into the skillet and bake until golden brown around the edges, about 15 minutes. The cornbread is done when a small knife inserted in the center comes out dry. Best when served warm from the oven
  • 1 slice = 1/12 of cornbread

Brighten up any brunch with charred cornbread, spicy fried eggs, cherry tomatoes and ripe avocado

400g can cherry tomatoes
1 tsp golden caster sugar
a few drops Tabasco sauce
2 eggs
½ fat green chilli , thinly sliced (optional)
small knob of butter , softened
1 small ripe avocado , halved, stoned, peeled and sliced (do this just before serving to prevent it from browning)
4 thick slices cornbread (see Goes Well with for recipe)
handful coriander leaves, to serve

Steps:

  • Heat a griddle pan and a large frying pan. Put the tomatoes, sugar and Tabasco in the frying pan and bubble for 10 mins - season and taste to check the spiciness, adding a splash more Tabasco, if you like. Make 2 spaces in the pan and crack in the eggs, then scatter over the chilli, if using. Cook for a further 3-5 mins until the whites of the eggs are cooked and the yolks are still runny (or to your liking).
  • Meanwhile, butter the cornbread and place, butter-side down, on the hot griddle pan. Cook for 2-3 mins each side until dark griddle lines appear. Top the cornbread with the avocado and the eggs, then spoon around the tomatoes, scatter with coriander and serve.

A savory, moist homestyle meatloaf that includes cornbread crumbs, corn, jalapenos, pepperjack cheese, onion, garlic, and more. This is a mild, yummy version that nicely balances the ingredients -- you can easily fire it up and customize the amounts and ingredients to suit your taste.

1 ½ pounds ground beef
½ pound ground pork
¾ cup canned whole kernel corn
½ cup crumbled cornbread
½ cup sour cream
½ cup shredded pepperjack cheese
½ cup finely chopped onion
¼ cup milk
1 egg, lightly beaten
3 fresh jalapeno peppers, seeded and minced
2 cloves garlic, minced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Mix the ground beef and ground pork in a large bowl. In a separate bowl, mix the corn, cornbread, sour cream, pepperjack cheese, onion, milk, egg, jalapeno peppers, garlic, kosher salt, and pepper. Gently mix the corn mixture into the meat mixture. Form into a rounded loaf shape, and place in the prepared baking dish
  • Bake 1 hour in the preheated oven, to a minimum internal temperature of 160 degrees F (72 degrees C). Loosely cover with aluminum foil during the last 15 minutes of cook time if the loaf is overly brown.

4 tablespoons canola oil, divided
1-1/2 cups finely ground white cornmeal
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 large eggs, room temperature
2 cups buttermilk

Steps:

  • Place 2 tablespoons oil in a 10-in. cast-iron skillet; place in oven. Preheat oven to 450°. Whisk together cornmeal, sugar, baking powder, baking soda and salt. In another bowl, whisk together eggs, buttermilk and remaining oil. Add to cornmeal mixture; stir just until moistened., Carefully remove hot skillet from oven. Add batter; bake until golden brown and a toothpick inserted in center comes out clean, 15-20 minutes. Cut into wedges; serve warm.

This is my mother's recipe. It was on the menu at every cafe she cooked. This cornbread has a great crisp crust yet the inside is soft and tender. It is a perfect accompaniment to soups, stews and the southern standard, "a big ole pot of brown beans."

1 cup all-purpose flour
1 cup cornmeal, my mother used stoneground but any is fine (not mix)
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1 -3 tablespoon sugar, depending on how sweet you like it
1 1/4 cups buttermilk
1 large egg
1/4 cup corn oil
3 tablespoons butter

Steps:

  • Preheat oven to 375 In a large bowl, combine flour, cornmeal, baking powder, salt, baking soda, and sugar.
  • (If baking powder or soda appear at all lumpy, sift them in).
  • Stir well to combine.
  • In a small bowl, whisk together buttermilk, egg, and oil.
  • Place the butter in a 9 or 10 inch skillet and place in the oven and heat until the butter melts and is sizzling seriously.
  • Tilt the pan to coat the sides of the skillet.
  • As the butter's melting, quickly pour the wet ingredients into the dry, and, using a wooden spoon, stir the wet and dry together with as few strokes as possible--- only as many as are needed to combine the two.
  • Don't beat it!
  • Scrape the batter into the hot, buttery skillet.
  • It should sizzle.
  • Place it in the oven immediately.
  • Bake until golden brown on top, about 25 to 30 minutes.

  • Serve Hot.
  • Note: Time to prepare is if you are using fresh corn and must cut off cob and cook, if using canned corn preparation time will be much less.
