Southern Collard Greens Recipe image

This Southern Collard Greens recipe is a classic easy side dish! Flavored with smoky bacon and sweet onion, the greens are a crowd-pleasing option for your next Sunday supper or holiday meal.

Provided by Blair Lonergan

Categories     Side Dish

Time 2h

Number Of Ingredients 10

8 ounces hickory smoked bacon, chopped
1 medium sweet onion, diced
1 ½ tablespoons minced garlic
48 ounces chicken broth
2 lbs. fresh collard greens, trimmed and washed
2 tablespoons apple cider vinegar
1 ½ teaspoons sugar
½ teaspoon kosher salt
¼ teaspoon ground black pepper
Optional garnish: crushed red pepper flakes or hot sauce

Steps:

  • Cook bacon in a large stockpot or Dutch oven over medium heat for 10-12 minutes, or until almost crisp. Add onion, and sauté until translucent, about 7-8 minutes.
  • Stir in garlic and sauté 1 more minute. Add broth, collard greens, vinegar, sugar, salt, and pepper. Use a wooden spoon to stir, scraping up any browned bits from the bottom of the pot.
  • Simmer (uncovered) over low heat for about 1 ½ hours, stirring occasionally (or until collards reach desired level of tenderness).
  • Taste and season with additional salt and pepper, if necessary. Garnish with crushed red pepper flakes or hot sauce.

DOWN HOME SOUTHERN GREENS

Down Home Southern Greens image

This is one of my family's favorite side dishes. Even my kids adore it! Preparing a big pot of greens is easy, nourishing, comforting a terrific way to ensure your children want to eat their greens.

Provided by Jeanette Marie

Categories     Pork

Yield 8

Number Of Ingredients 6

500 g (1 lb) bacon bones
1 whole dried red chili (or to taste)
2.5 litres water
500 g kale, washed and roughly chopped
Salt and freshly ground pepper, to taste
Pepper vinegar or white vinegar, to finish

Steps:

  • Add bacon bones, chili and water to a medium stockpot set over high heat. Bring to the boil. Then, reduce heat to medium, and simmer until water is diminished by half (about 45 minutes). Remove bones from broth with a slotted spoon and set aside to cool.
  • Once the bones are cool enough to handle, remove the meat from the bones. Discard the bones, and return the meat to the pot containing the broth, along with the greens. Return to the boil.
  • Reduce heat to medium low and cook until liquid is reduced by about half again, and greens melt in your mouth (about 45 minutes).
  • Taste. Season, as needed, with salt and freshly ground pepper.
  • Sprinkle with pepper vinegar (a few Tbsps should be sufficient) to taste.
  • Serve with homemade cornbread, spoon bread, biscuits or rice (to sop up the "pot liquor"), and more pepper vinegar, for diners to add according to their individual tastes.

SOUTHERN COLLARD GREENS

How to make the best Southern Collard Greens! Full of flavorful ingredients and easy to make

Provided by divas can cook

Categories     Side Dish     Vegetable

Time 2h

Number Of Ingredients 11

1/2 cup white distilled vinegar
3 tablespoons salt
2 bunches fresh collard greens ( (see note))
1 tablespoon extra virgin olive oil
½ cup finely diced onions
1 tablespoon minced garlic
½ teaspoon red pepper flakes
4-5 cups chicken broth ((can replace 1 cup with water if desired))
1 fully-cooked smoked turkey leg or wing ((about 13 oz))
1 tablespoon white distilled vinegar
Applewood smoked salt & black pepper, to season

Steps:

  • Prepare the collard greens bath by filling your kitchen sink with cool water and adding vinegar and salt.
  • Remove the collard greens from the steams by folding them in half lengthwise and pulling the leaf away from the stem. (discard the stem or see note below on how to cook them)
  • Place the collard greens into the prepared water bath and swish them around several times, scrubbing them to help loosen up any dirt.
  • Let the collard greens soak for 15-20 minutes, giving them a scrub midway. Drain the water and refill with plain water and allow the greens to soak again if needed. Repeat as many times as needed until the water is free from any dirt or grit. After the final soak, drain the water. Next, rinse and scrub each leaf front and back with cool water to ensure they are squeaky clean.
  • Tear the greens into bite-sized pieces and set them aside.
  • In a large pot, heat olive oil. Add onions and saute until tender.
  • Add garlic and red pepper flakes and cook until garlic is fragrant.
  • Pour in the broth and add the turkey leg. Bring to a boil.
  • Add collard greens and reduce heat to a simmer.
  • Cover and cook collard for 1 hour (or longer depending on your desired tenderness), stirring regularly.
  • Once done, stir and then taste the broth and the greens. (add a little water if the broth is too bold for your liking)
  • Stir in vinegar and smoked salt, and black pepper if desired.
  • Serve collard greens with pieces of the smoked turkey leg and hot sauce if desired.
