Cooking in the Downton Abbey kitchen was such good fun. It makes you realise how much has changed, but good traditional recipes still work fantastically. Today I will be recreating this fantastic recipe from home.

Number Of Ingredients 8

150 g plain flour
100 g strong white flour
40 g salted butter
25 g baking powder
70 g caster sugar
150 buttermilk
1 egg beaten (egg or milk)
clotted cream & jam to serve

Steps:

  • Pre-heat the oven to 200C, gas 6.
  • Rub the flours, butter and baking powder together until you have fine breadcrumbs, then add the sugar.
  • Gradually add the buttermilk, the mixture should be really wet and soft
  • Remove from the bowl and bring together.
  • Roll out and cut 8 x 7cm x 2cm deep scones.
  • Place onto a greased baking tray cover with film lightly and leave for 15 minutes in a warm place.
  • Remove the film brush with milk or beaten egg.
  • Bake for 30 minutes, or until well risen and light brown.
  • Cool on a wire rack.

  • Sift the dry ingredients 3 times into a large bowl. Rub the frozen grated butter into the dry ingredients until it feels like sand. Add enough milk just until you get a sticky dough.
  • Turn the dough out onto a lightly floured board, lightly flour the top. Knead very gently once, then fold and turn the kneaded dough 3 or 4 times until the dough has formed a smooth texture. Pat the dough into a rectangle about 6” x 12”, then fold into thirds.
  • Using a well-floured 2” biscuit cutter, make 6 x 2” rounds. You can get 2 more scones from the scraps but they won’t be as tender. Alternatively, use a well-floured sharp knife to form wedges.
