Mustard made with dried fruit is always a crowd-pleaser. For something more interesting than the standard varieties, we used figs and apricots.

1/2 cup dried apricots or figs (3 1/2 ounces)
4 1/2 teaspoons dried yellow mustard seeds
4 1/2 teaspoons dried brown mustard seeds
2 tablespoons ground mustard
1/4 cup distilled white vinegar
Coarse salt

Steps:

  • Mix together dried fruit, mustard seeds, ground mustard, vinegar, and 3/4 cup water in a bowl. Refrigerate, covered, overnight.
  • Place mustard mixture and salt to taste in a food processor; puree until smooth. Serve, or store in refrigerator, covered, up to 1 week.

1 minced shallot
Candied ginger
White wine
White-wine vinegar
Dijon mustard
Butter

Steps:

  • Use 3/4 pound dried fruit and 1/2 cup water in a skillet and bring to a boil. Add 1 minced shallot, 1 tablespoon minced candied ginger, 3?4 cup white wine, 4 1/2 tablespoons white-wine vinegar and 2 to 3 teaspoons each Dijon mustard and butter.
  • Skip the lemon juice. Cool and serve.

Number Of Ingredients 10

10 ounces lean ground beef
1/2 cup breadcrumbs made from whole wheat bread
1/4 cup chopped mixed dried fruits or chopped dried apricots
1 large egg
3 tablespoons chopped shallots
2 tablespoons Dijon mustard
1 teaspoon crumbled dried sage leaves
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons apricot preserves

Steps:

  • Preheat oven to 425°F. Combine beef, breadcrumbs, chopped fruits, egg, shallots, 1 tablespoon mustard, sage, salt and pepper in large bowl; mix thoroughly. Shape mixture into 2 oval loaves, each about 1 inch thick, and place on small rimmed baking sheet.
  • Bake loaves 10 minutes. Mix preserves and remaining 1 tablespoon mustard in small bowl. Brush preserves mixture generously over loaves. Continue to bake until loaves are cooked through and thermometer inserted into center registers 160°F, about 8 minutes.

Every year at Diwali, the Hindu New Year, my father was given boxes of dried fruit as gifts. One Thanksgiving, I was reminded of that tradition when I was given some organic dates and decided to make this chutney instead of cranberry sauce for our holiday table.

1/4 cup extra virgin olive oil
1/2 cinnamon stick
3 star anise
2 cloves
1/2 teaspoon brown mustard seeds
1/4 dried pasilla de Oaxaca chile
2 cups orange juice
2 cups apple cider
1 cup dried sour cherries
2 cups sliced dates
1 teaspoon packed grated orange zest
1/4 cup julienne strips peeled ginger
2 cups quartered dried apricots
2 cups fresh cranberries
1 1/2 tablespoons fennel, preferably Lucknow
1 teaspoon yellow mustard seeds
1/4 cup cider vinegar
Kosher salt

Steps:

  • Heat the oil in a heavy 6-quart pot over moderately high heat until it shimmers and cook the cinnamon, star anise, and cloves for 1 minute. Add the brown mustard seeds and chile. When the seeds pop and are fragrant, after about 30 seconds, remove the pan from the heat and carefully add the orange juice and apple cider. Bring the mixture to a boil and add the cherries, dates, zest, ginger, apricots, cranberries, fennel, yellow mustard seeds, and vinegar. Briskly simmer the mixture, uncovered, stirring occasionally, until the liquid is reduced and the fruits are softened and tender, about 1 1/2 hours. Stir in salt to taste. Let the chutney cool completely before serving. The chutney keeps in an airtight container in the refrigerator for 1 week.

3 medium apples, tart, diced
1 cup dried pitted prunes, diced
1 cup dried apricot, diced
1 cup cider vinegar
1 1/2 cups brown sugar, packed
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon black pepper
1/2 teaspoon ground cloves
1/2 teaspoon coriander
1/2 teaspoon curry powder
1/8 teaspoon crushed red pepper flakes
3 garlic cloves, minced

Steps:

  • In large saucepan, combine all ingredients & bring to boil.
  • Reduce heat & simmer, uncovered 20 minutes, or until mixture has thickened.
  • Ladle into hot sterilized jars & seal immediately.

Mostarda is a condiment in Italy - but it's NOT just a mustard. Rather, it is preserved fruit that does have mustard and mustard seed included as a flavouring. Mostarda is delicious with bollilto misto, as it is such a delicious and flavourful accompaniment to the plain, boiled beef. Also exceptional used with cold cuts. Try salami, dabs of mostarda and good, crusty bread.

4 dried figs, cut 1/2 cubes
1 unripe pear, peeled and cut 1/2 cubes
1/2 cup dried apricot, cut 1/2 cubes
1/2 cup dried cherries
1/2 cup dried apple, cut 1/4 julienne
1 1/2 cups dry red wine
1 cup sugar
1/2 cup honey
1/2 cup prepared mustard
1/4 cup mustard seeds, cracked

Steps:

  • Place figs, pear, apricots, cherries, and apples into a mixing bowl and stir to mix.
  • In a saucepan, heat wine, sugar and honey together until boiling. Boil for 3-4 minutes, or until slightly reduced and syrupy. Remove from heat and stir in mustard and seeds.
  • Pour over fruit and allow to steep 24 hours. Jar and refrigerate.

1 ½ (1 pound) loaves day-old whole wheat bread
2 tablespoons unsalted butter
2 medium onions, diced
1 cup dried tart cherries
1 cup golden raisins
½ cup dried currants
½ cup pitted prunes, coarsely chopped
1 ½ tablespoons chopped fresh thyme
1 pinch salt and ground black pepper to taste
2 large eggs, beaten
1 serving cooking spray
2 ¾ cups chicken broth

Steps:

  • Preheat the oven to 250 degrees F (120 degrees C).
  • Slice bread and discard ends. Arrange bread slices on the rack of the preheated oven.
  • Bake in the preheated oven until very dry, about 15 minutes.
  • While the bread is baking, melt butter in a heavy, nonstick skillet over medium-high heat. Add onions and saute until tender, about 10 minutes.
  • Remove bread from the oven and crumble into coarse pieces in a large bowl. Add cherries, raisins, currants, and prunes; toss to combine. Mix in sauteed onions and thyme. Season with salt and pepper. Mix in eggs.
  • Increase oven temperature to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray. Coat a 12x16-inch piece of aluminum foil with cooking spray.
  • Stir chicken broth into stuffing mixture and transfer to the prepared baking dish. Cover with the aluminum foil, sprayed-side down.
  • Bake in the preheated oven until heated through, about 30 minutes. Remove aluminum foil and bake until top is golden, about 20 minutes more.

I have cooked this recipe a hundred of times and it is a real hit with kids and adults alike. Traditionally I have always used a camp oven, which is a cast-iron pot with a lid. You can even cook this at home in your conventional oven. The ingredients are very traditional and generally found in everyone's pantry. These have been proven to last much longer in very hot conditions and even in the humid tropics. Dampers are traditionally served with a cup of black tea, however just use a drink of your own choice. Serve with butter and golden syrup, treacle, refined molasses, or jam.

½ teaspoon butter
4 cups all-purpose flour
8 teaspoons baking powder
2 tablespoons white sugar
2 tablespoons powdered milk, or more as needed
½ teaspoon salt
1 tablespoon butter, softened, or more as needed
1 cup raisins, or to taste
1 ½ cups cold water, or as needed
1 ½ teaspoons powdered milk

Steps:

  • Build a campfire and allow the fire to burn until it has accumulated a bed of coals. Rake the coals into a flat bed on one side of the fire. Grease the inside of your camp oven lightly with 1/2 teaspoon butter and place it on the coals, preheating it to about 425 degrees F (218 degrees C).
  • Mix flour, baking powder, sugar, 2 tablespoons powdered milk, and salt together in a bowl. Rub butter gently through the mixture. Mix raisins in by hand. Make a well in the center of the mixture. Add cold water, 1 tablespoon at a time, mixing well after each addition, until dough stops sticking to the sides of the bowl.
  • Dissolve 1 1/2 teaspoons powdered milk in an equal amount of water in a bowl.
  • Turn dough out onto a floured board and knead gently a few times. Shape into a rough circle or loaf about 1 1/2 inches thick. Place in the preheated camp oven. Brush the top of the damper with the dissolved milk.
  • Cover and bake over the fire until a skewer inserted into the center comes out clean, about 30 minutes.
  • Lift the lid with a metal tent peg and remove the damper carefully. Cover with a dry towel, and let rest in a warm place for 3 to 4 minutes before serving.
