SICILIAN MEATLOAF - DUMP AND GO DINNER
This is a great tasting meatloaf. It isn't your standard meatloaf which is what appealed to me. I like trying new things, or old treats in new ways. It is easy to make and easy to freeze.

Steps:
- In a medium bowl, mix together eggs, bread crumbs, tomato juice, parsley, oregano, salt and pepper. In a larger bowl, combine ground beef and seasonings. On wax paper form meat mixture into a flat large rectangle. Line with ham and cheese. Roll and seal seam. Cut into indicated number of meatloaves. Seal ends and seam well, otherwise the cheese will just ooze out all over the place. Place on a foil lined baking sheet and bake at 350 degrees for 1 hour 20 minutes.

- Mix all ingredients together, form into a loaf, and place on a roasting pan that has been sprayed with nonstick cooking spray.
- Bake in a 350 degree Fahrenheit oven for 1 1/2 hours.

DUMP IT IN MEATLOAF
Okay, I know I called the last one the best ever, but this one is really delicious plus I didn't have to chop anything! My DH loves it and told me to stop looking for any others because this one is it. I did not put a topping on it, but you can serve it with whatever condiments you'd like. I made the recipe up as I went along, so I'm posting it before I forget what went into it. Please excuse any guesswork as to quantities. I just cook, I don't always measure.

Steps:
- Heat oven to 375 degrees.
- Mix ingredients together in a large bowl.
- I start with a wooden spoon just to get things going and I finish with my hands.
- When well mixed (it should be nice and moist) plop into an ungreased baking dish and shape into a loaf.
- Place dish in oven.
- Bake for about an hour or until it is brown on top and done in the middle.
- Remove from oven, let sit for about 10 minutes so it will stay juicy inside.
- Slice and enjoy.

CLASSIC MEATLOAF RECIPE BY TASTY
Meatloaf is a delicious addition to your weeknight dinner repertoire. Full of savory flavor and topped with a sweet, sticky ketchup glaze, it's the perfect pair to your favorite vegetable side dishes, such as classic mashed potatoes and steamed green beans.

- Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
- Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Remove the pan from the heat and let the onion mixture cool to room temperature.
- In a large bowl, stir together the panko and milk. Add the ground beef, eggs, parsley, Worcestershire sauce, thyme, salt, pepper, and the onion mixture and use your hands to combine. Do not overmix!
- Shape the beef mixture into a 10 x 5-inch loaf on the prepared baking sheet. Brush the top and sides with ketchup.
- Bake the meatloaf until the top is browned and the internal temperature reaches 160°F (70°C), about 50 minutes.
- Slice and serve.
- Enjoy!
