1 (7 ounce) container Greek-style yogurt

½ teaspoon ground black pepper

Steps:

  • Grind green onions, mint, olive oil, lemon juice, and red pepper flakes in a food processor to a coarse paste; transfer to a bowl. Add yogurt, salt, and black pepper; stir with a fork until blended.

3 tablespoons finely chopped fresh mint

Steps:

  • Combine all ingredients in a small bowl, and stir well to combine. Sauce can be made up to 1 day ahead; store in an airtight container in the refrigerator. Serve chilled or at room temperature.

3 medium mangoes, peeled and cut into 1/4-inch slices
3 medium Gala apples, cut into 1/4-inch slices
2 tablespoons lime juice, divided
1/2 cup plain yogurt
2 tablespoons honey
1 teaspoon minced fresh gingerroot
1/4 teaspoon salt
1/4 cup fresh mint leaves, thinly sliced

Steps:

  • In a large bowl combine the mangoes and apples. Drizzle with 1 tablespoon lime juice; toss to coat., In a small bowl, combine the yogurt, honey, ginger, salt and remaining lime juice. Stir into mango mixture. Sprinkle with mint and toss to coat. Refrigerate for at least 15 minutes before serving.

1/2 cup walnuts
1 Persian cucumber, finely chopped
3 cups plain whole-milk Greek yogurt
3 tablespoons chopped golden raisins
1 tablespoon finely grated green garlic, or 1 garlic clove, finely grated
1 teaspoon finely grated lemon zest
1 teaspoon fresh lemon juice
1 tablespoon crushed dried mint leaves, plus more for serving
1 tablespoon olive oil, plus more for drizzling
2 teaspoons crushed dried rose petals; plus more for serving (optional)
Kosher salt, freshly ground pepper
2-3 tablespoons whole milk (optional)
Aleppo-style pepper (for serving)

Steps:

  • Preheat oven to 350°F. Toast walnuts on a rimmed baking sheet, tossing occasionally, until golden brown, 8-10 minutes. Let cool, then finely chop.
  • Mix walnuts, cucumber, yogurt, raisins, green garlic, lemon zest, lemon juice, 1 Tbsp. mint, 1 Tbsp. oil, and 2 tsp. rose petals, if using, in a medium bowl to combine; season with salt and pepper. If yogurt looks thick, stir in milk as needed.
  • Serve topped with Aleppo-style pepper and more dried mint and rose petals and drizzled with more oil.

  • Yogurt can be made 1 day ahead. Keep chilled.

6 (1-inch-thick) rib lamb chops
1 tablespoon olive oil

Steps:

  • Stir together mint, yogurt, garlic, lemon juice, and salt and pepper to taste.
  • Pat half of lamb chops dry and season with salt and pepper. Heat oil in a 10-inch heavy skillet (preferably cast-iron) over moderately high heat until hot but not smoking, then sauté chops, turning once, 6 minutes for medium-rare. Transfer chops to a plate and keep warm, covered with foil. Dry, season, and sauté remaining chops in same manner.
  • Serve topped with yogurt-mint sauce.
