Steps:
- Pierce kielbasa 4 or 5 times on each side with tip of a sharp knife. Simmer kielbasa in water in a 12-inch heavy skillet, partially covered with lid, over moderately low heat until heated through, about 30 minutes (check after 15 minutes and add a little more water if skillet is almost dry).
- Transfer kielbasa with tongs to a cutting board and cut diagonally into 3/4-inch-thick slices. Serve warm or at room temperature.
EASTER SAUSAGE ENSEMBLE
Our Grand Darlings are split between two homes on the weekends and during the holidays so we celebrated Easter last weekend on April Fools Day with Ham and all the trimmings. Therefore, today, Easter Sunday, I decided to make Easter Sausage with an ensemble of added goodies to make it special. My Peter said it was "magnificent." I simply said "thank you." Enjoy!

Steps:
- Cook pasta according to package directions (approximately 10 minutes) then drain. Meanwhile cook the sausage covered in 1/2 inch water in a non stick fry pan on high until done (approximately 10 minutes). Cool, halve lengthwise and slice very thin. In large bowl combine all ingredients and mix well. When ready to serve, placed about 12 ounces in a bowl (I use salad plates) and microwave on high for 90 seconds. Top with Parmesan cheese if desired or extra tomato sauce and a dash of basil. Enjoy!

EASTER KIELBASA
The local "Polish Sausage" we have in the South just isn't anything like what we're used to from a good Polish Butcher. In New Jersey, every butcher makes, and smokes their own sausage, and every one's just a little bit different. It took me a while, but I've been able to find a place that will vacuum bag it, then ship it to South Carolina. If you'll be making the Kielbasa Soup, use the chicken and beef broth. - Boil the kielbasa for 45-60 minutes with one can of chicken broth, one can beef broth, and just enough water to cover. Pierce with a fork during cooking to let some of the fat out. Be careful not to pierce too much because then the kielbasa will be dry.
- Set it on a plate and cover with aluminum foil to keep warm until you're ready to eat.

- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Preheat oven to 425 degrees F (220 degrees C).
- Lightly grease a 9x13 inch baking pan. Lay crescent rolls flat in the bottom of the pan. Combine cooked sausage, cheese, eggs, milk, salt and pepper; pour over crescent rolls.
- Bake in preheated oven for 15 minutes, until bubbly and rolls are baked.
