Make-Ahead Parsnip-Apple Mash image

Earthy parsnips are sweetened with apples and blended into a delightfully silky puree.

3 tablespoons cold unsalted butter
2 pounds parsnips, peeled and sliced into 1/2-inch-thick rounds
1 pound tart apples (about 3), such as Granny Smith, peeled and cut into 1-inch cubes
2 1/2 cups water
Coarse salt

Steps:

  • Melt 2 tablespoons butter in a large heavy skillet over medium heat. Cook parsnips in a single layer until just golden on bottoms, about 10 minutes. Flip, and add apples, water, and 1 1/4 teaspoons salt. Raise heat to medium-high, and simmer, covered, until parsnips and apples are very soft, about 20 minutes.
  • Remove from heat, and let stand, covered to retain moisture, until slightly cooled, about 5 minutes. Puree mixture in a blender until smooth. With machine running, add remaining tablespoon butter.

850g parsnip , peeled and cut into small chunks
2 Bramley apples , peeled, cored and quartered
50g butter , plus a little extra to serve
¼ tsp ground cumin
¼ tsp ground coriander
100ml milk

Steps:

  • Cook the parsnip and apple in a pan of salted simmering water for 10 mins until tender, then drain. Put the pan back on the heat, add the butter and spices, then cook for a few mins before adding the milk and warming through.
  • Add this to the parsnips and apple, season well then whizz in the food processor until smooth, or mash well by hand. Spoon into a bowl and drizzle with a little melted butter to serve.

2 tbsp coconut oil 4 parsnips 2 apples sea salt 1 cup almond milk

Steps:

  • In large saucepan, heat the coconut oil and sauté the parsnips and apples for 2 to 3 minutes. Lower the heat, cover the pan and continue cooking for 10 minutes until the parsnip and apple pieces are tender and starting to brown. Transfer contents of the pan to a blender in batches and add the milk and salt; puree until almost smooth. If you prefer, you can add the milk and salt to the pan and use an immersion blender. Return to pan to warm if necessary before serving.

2 Fuji apples, peeled and cored
4 tablespoons unsalted butter, divided
1 shallot, peeled and sliced
1 pound parsnips, peeled and cut into chunks
Kosher salt and freshly cracked black pepper
5 large fresh sage leaves
Water, to cover

Steps:

  • Cut 1 1/2 apples into chunks and dice the remaining 1/2 apple into small cubes. Set aside.
  • Add 2 tablespoons of the butter to a saucepan over medium-high heat and stir in the shallots. Saute for a minute or so, then add the apple chunks and cook until slightly golden. Stir in the parsnips, season with salt and pepper, to taste, and cook until caramelized. Once brown on all sides, add the sage leaves and cover with water. Simmer until soft or fork tender. Discard the sage and puree mixture and cooking liquid in a food processor until smooth. Taste for seasoning and adjust, if necessary.
  • In a small saute pan, melt and brown the remaining 2 tablespoons of butter. Add the diced apple, season with a pinch of salt only and saute until the apples are coated and just tender.
  • Transfer the puree to a serving bowl and top with the browned butter coated diced apples.

This soup is absolutely delicious and makes an elegant first course for a wintertime dinner. This is my own recipe, modified from one found in Bon Appetit with the addition of milk and brown sugar, and my favorite, the cheese crumbles on top.

4 tablespoons unsalted butter
4 medium granny smith apples, peeled, cored and sliced
1 1/2 lbs parsnips, peeled and sliced
1 large onion, chopped
1 1/2 teaspoons fresh ground coriander
3 cups chicken stock or 3 cups vegetable stock
1 cup milk
3 tablespoons brown sugar
1/2 teaspoon ground black pepper
1 teaspoon sea salt
cheese, crumbles

Steps:

  • Melt butter in large Dutch oven or stock pot over medium-high heat. Add apples, parsnips, onion, and coriander and saute lightly until slightly softened, about 12 minutes.
  • Add the 3 cups stock and 1 cup milk and bring to a boil. Reduce heat to medium-low, cover, and simmer until apples and parsnips are tender--about 40 minutes.
  • Remove soup from heat and puree in the pot with an immersible blender, or, puree soup in a blender in small batches. Return soup to pot.
  • Return soup pot to medium-low heat. Add brown sugar, salt, and pepper, stir well to dissolve sugar, and reheat to eating temperature. Serve with cheese crumbles on top. Bleu cheese, roquefort, gorgonzola and fontina cheeses all taste delicious paired with this soup. Crack a bit more black pepper on each bowlful before eating.
  • NOTE: This soup keeps well. You can make it a day ahead and store in a covered crockpot crock in the refrigerator. Reheat later in the crockpot for serving.

I was tricked into trying mashed parsnips (I was told they were mashed potatoes) and fell instantly in love. I haven't made mashed potatoes since. Mashed parsnips are full of much more flavor, slightly sweet, but the same great texture. And they are much healthier!

5 cups whole milk
10 parsnips, peeled and cubed
1 teaspoon salt
¼ cup butter
1 teaspoon dried thyme
½ teaspoon ground black pepper, or more to taste
salt or to taste

Steps:

  • Heat milk in a large pot over medium heat until warmed and just under a boil; add parsnips and 1 teaspoon salt, cover with a lid, and cook until parsnips are tender, 25 to 30 minutes. Drain parsnips, reserving the warm milk.
  • Mash parsnips, 1 cup reserved warm milk, butter, thyme, and pepper together in the pot using a hand mixer or by blending in a blender. Add more milk, salt, or pepper as desired.
