2 tablespoons olive oil
¼ cup lime juice
2 teaspoons cumin
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon pepper
¼ cup fresh cilantro, chopped
2 cans chickpeas, drained, rinsed
1 cucumber, chopped, quartered
20 cherry tomatoes, halved
1 onion, chopped
1 avocado, diced
⅓ cup carrot, shredded

Steps:

  • For the dressing, combine dressing ingredients in a small bowl. Whisk together until mixed thoroughly.
  • In a large bowl, combine chickpeas, cucumber, tomatoes, onion, avocado, carrots, and dressing. Toss together until evenly combined.
  • Serve and garnish.
  • Enjoy!

1 can garbanzo beans (chickpeas), rinsed well
4 - 5 tomatoes, diced in 1/2" pieces
1/2 c green onion, sliced
1 c (1 large bunch) cilantro, washed, dried and chopped coarsely with chef's knife or food processor
DRESSING
2 tbsp; fresh lime juice
2 tbsp; extra-virgin olive oil
1/4 tsp ground chipotle chili powder (i use penzeys, you could substitute hot sauce if you don't have ground chipotle)
1/2 tsp chili powder, mild
1/2 tsp ground cumin
1/2 tsp onion powder
zest from one lime
salt, fresh ground pepper to taste

Steps:

  • Drain beans into colander and rinse until no foaming remains. Let drain well. Mix dressing ingredients, then put beans and dressing into a plastic container with a snap-on lid and shake a few times. Let beans marinate in dressing one hour or longer. Dice tomatoes, place in colander with a small amount of salt and let tomatoes drain 10 minutes while you dice onions and chop cilantro. Combine marinated beans with dressing, tomatoes, green onion and cilantro, and stir gently until well combined. Season with salt and pepper to taste and serve immediately.

2 (15 ounce) cans chickpeas, drained and rinsed
4 cups fresh spinach, loosely packed
1/2 onion, chopped small
4 limes, juice of
1 bunch fresh cilantro (about loosely packed cup)
3 tablespoons sugar
2 tablespoons Dijon mustard
2 garlic cloves, finely minced
1/2 tablespoon chili powder
1/2 cup olive oil

Steps:

  • Chop the spinach very finely (feel free to use a food processor and pulse 3-4 times).
  • Add the chickpeas, onion, and spinach to a large bowl. In the same food processor add the lime juice, cilantro, sugar, mustard, garlic, chili powder, and olive oil. Process til it comes together into a dressing, about 30-45 seconds.
  • Pour over the chickpea mixture and stir to combine.
  • Add salt and pepper to taste.
  • Let sit for about 10 minutes on the counter or overnight in the fridge to let the flavors marry. Enjoy!

1 (15 1/2 ounce) can garbanzo beans, rinsed well (chickpeas)
1 cup cherry tomatoes or 1 cup grape tomatoes, cut into 1/2-inch pieces
1/2 cup green onion, sliced
1 cup cilantro, washed, dried and chopped coarsely
1 avocado (optional)
2 tablespoons fresh lime juice (plus 2 tsp. more for avocado, if using)
2 tablespoons extra-virgin olive oil
1/4 teaspoon ground dried chipotle powder
1/2 teaspoon chili powder, mild
1/2 teaspoon ground cumin
1/2 teaspoon onion powder
zest from one lime
salt, fresh ground pepper to taste

Steps:

  • Drain beans into colander and rinse until water runs clear. Allow to drain well.
  • Whisk together dressing ingredients.
  • Put garbonzos and dressing into a sealable container. Shake a few times to distribute marinade. Allow beans to marinate in dressing one hour or longer.
  • In the meantime, dice the tomatoes, place in colander with a small amount of salt and let tomatoes drain 10 minutes. If using avocado, peel and dice the avocado and toss it with 2 teaspoons of lime juice.
  • Slice green onions and chop cilantro.
  • Combine marinated beans with dressing, tomatoes, green onion and cilantro. If using avocado, fold in gently until well combined. Season with salt and pepper to taste and serve immediately.
