This carrot and apple smoothie is creamy and has a light tropical flavor thanks to coconut milk. It's naturally sweetened from the carrots and apple, and the combination of ginger and lemon juice adds just a bit of spice and helps balance the flavor. The turmeric, fresh or dried, gives the smoothie a vibrant bright orange color.

2 large carrots, sliced (about 1 1/2 cups)
1 medium-ripe banana
1 large Honeycrisp apple, cored and quartered
1 cup light coconut milk
2 tablespoons fresh lemon juice
2 teaspoons minced fresh ginger
2 teaspoons minced fresh turmeric or 1 teaspoon ground turmeric
½ cup ice cubes

Steps:

  • Combine carrots, banana, apple, coconut milk, lemon juice, ginger and turmeric in a blender. Process until smooth, about 45 seconds. Add ice cubes and process until smooth, about 30 seconds. Serve immediately.

1 ripe banana
1 cup unsweetened almond milk
1 tsp cinnamon
½ tbsp lemon juice
½ cup ice cubes

Steps:

  • Place the apple, carrots, and banana into a high-speed blender and blend until smooth.
  • Add all remaining ingredients and continue to blend.
  • Adjust thickness by adding more almond milk if needed.
  • Pour into 2 glasses and serve immediately.

1 medium banana (frozen)
1 medium apple (cored and roughly chopped)
1 small clementine (peeled)
1/4 teaspoon ground cinnamon (or to taste)
1 cup non-dairy milk or water

Steps:

  • Combine the milk, apple, banana, cinnamon, clementine, and carrots to a blender.
  • Place lid on the blender and blend until very smooth. This will take about 30-60 seconds depending on the power of your blender.
  • Enjoy immediately.
