½ cup low-sodium soy sauce
⅓ cup vegetable oil
⅓ cup brown sugar
1 tablespoon minced ginger
½ teaspoon garlic powder
2 pounds flank steak
1 (10 ounce) package dried Japanese udon noodles
6 ounces snow peas
1 cup broccoli florets
1 tablespoon mirin (Japanese sweet wine)

Steps:

  • Whisk soy sauce, vegetable oil, brown sugar, ginger, and garlic powder together in a large bowl. Pierce flank steak several times with a large fork. Place in the bowl and cover with plastic wrap. Let marinate in the refrigerator, at least 4 hours and up to overnight.
  • Bring a large pot of salted water to a boil. Cook udon noodles in boiling water, stirring occasionally, until tender yet firm to the bite, 13 to 14 minutes. Drain.
  • Heat a large skillet over high heat. Remove steak from marinade and cook until well-browned, about 2 minutes per side. Reserve marinade.
  • Preheat grill for medium heat and lightly oil the grate. Grill steak, basting with half of the reserved marinade, until internal temperature reaches 140 degrees F (60 degrees C) for medium or 150 degrees F (65 degrees C) for medium-well, at least 10 minutes per side. Slice steak thinly against the grain.
  • Combine remaining marinade, snow peas, broccoli florets, and mirin in the skillet. Cook and stir over medium-high heat until snow peas are tender, about 2 minutes. Add drained noodles; mix well to combine.
  • Divide noodle mixture among large bowls. Top with steak slices.

This is a quick-and-easy marinade recipe for steaks.

2 (8 ounce) boneless rib-eye steaks
salt and ground black pepper to taste
1 pinch garlic powder, or to taste
1 pinch Montreal steak seasoning, or to taste
⅓ cup extra virgin olive oil
⅓ cup Worcestershire sauce
⅓ cup soy sauce
⅓ cup balsamic vinegar
3 tablespoons Dijon mustard
3 cloves garlic, chopped
1 dash liquid smoke flavoring

Steps:

  • Place steaks in a flat baking dish or container. Cut slits at 1-inch intervals in the fat around the edges of the steaks. Gently pierce both sides of each steak a few times with a fork.
  • Sprinkle each steak with salt, pepper, garlic powder, and Montreal steak seasoning. Pat seasonings into steaks.
  • Whisk olive oil, Worcestershire sauce, soy sauce, balsamic vinegar, Dijon mustard, garlic, and liquid smoke together in a bowl. Pour marinade over steaks to coat. Cover container or baking dish with plastic wrap and marinate steaks in the refrigerator for 2 hours. Turn steaks over and marinate for another 2 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Cook the steaks on the preheated grill until they start to firm, and are reddish-pink and juicy in the center, 8 to 10 minutes per side for medium-rare. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).

1/4 cup soy sauce (low sodium)
2 tablespoon molasses
1 tablespoon ginger (minced)
3 cloves garlic (minced)
1 Thai red chili pepper (chopped)
1 tablespoon lime juice
8 ounce sirloin steak
2 tablespoon coconut oil
3 tablespoon soy sauce (low sodium)
1 teaspoon fish sauce
1 tablespoon brown sugar
1 Thai red chili pepper (chopped)
2 teaspoon lime zest (or from 1 lime)
1 tablespoon lime juice
4 cups lettuce (chopped)
1 red bell pepper (sliced in long strips)
1/2 English cucumber (sliced)
1/2 cup cilantro (chopped)
1/4 cup mint (chopped)
2 tablespoon peanuts (chopped (optional))

Steps:

  • In a small bowl add all the marinade ingredients (minus steak) and whisk well. Pour the marinade in a ziploc bag, add steak and close the bag and toss around a bit. Place in the fridge and let the steak marinate for 4 hours or overnight. The longer it marinates the better it will taste.
  • Prepare the dressing, by mixing all dressing ingredients in a small bowl and whisking well.
  • Grill the steak to your preferred doneness, I prefer mine medium, so for medium I usually leave it 7 minutes per side. Let the steak rest for 10 minutes after you grilled, then slice the steak across the grain.
  • In a large bowl toss the lettuce, pepper, cucumber, mint and cilantro together then pour the dressing over and toss well. Arrange the salad on a platter and place the sliced steak over the salad, then top with chopped peanuts.

3 tablespoons canola oil
2 tablespoons sesame oil
2 tablespoons rice wine vinegar
1 tablespoon grated ginger
1 teaspoon honey
3 cloves garlic (, minced or pressed)
1/4 teaspoon crushed red chili flakes ((optional))
1 1/2 to 2 pounds hanger steak ((or flap steak or flank steak))

Steps:

  • Add the steak to a zippered gallon freezer bag with 3/4 cup of the marinade and let sit for at least 15 minutes or up to overnight in the fridge.
  • Heat a grill pan or large skillet over medium high heat with 1 tablespoon of the oil until shimmering.
  • Take the steak from the bag and pour off the marinade then add the steak to the pan and cook, turning once, until browned on both sides and cooked to medium rare, about 8-12 minutes.
  • Transfer the steak to a cutting board to rest for 5-10 minutes before slicing.

Steps:

  • Place a large ziploc bag in a large mixing bowl. Fold edges of ziploc bag over. Add all ingredients to ziploc bag. Add your choice of beef. Seal the ziploc bag removing any air. Move the ziploc bag around making sure all beef is coated in the marinade. Refrigerate for 30 minutes to 2 hours.
  • Remove meat from ziploc bag and cook according to your recipe. Discard marinade.

My Asian Style Grilled and Marinated Flank Steak is full of flavor, texture and that mmmmmm savory umami balance on your palate that makes you beg for more and more.

3 pounds flank steak
1/4 cup vegetable oil or peanut oil
1/2 cup LOW sodium soy sauce (I always use Kikkoman)
1/2 cup balsamic vinegar
1/4 cup teriyaki sauce
1/4 cup honey
juice of 1 lime
a few squirts of siracha (depending on how spicy you like it)
Thumb sized piece of ginger (minced on a microplaner)
5 garlic cloves minced on a micro planer.
4 scallions sliced thinly

Steps:

  • Combine soy sauce, balsamic vinegar (this is what gives that tangy, savory flavor) honey, teriyaki sauce, ginger, lime, garlic, a few squirts of siracha, vegetable oil and scallions into a bowl and mix to combine all the flavors.
  • Then throw all the ingredients in a zip lock bag along with the steak. Shake, shake, shake. Make sure it's all covered.
  • Place in the fridge for at least an hour and up to 24 hours.
  • If you live in the not so warm parts...like me... you can cheat a bit. Take a large oven proof frying pan and place it into a 500-degree oven for about 10 minutes. Or you can place it in there as the oven preheats.
  • Remove your steak out of the bag and place it on a paper towel, dabbing the moisture off of the steak.
  • Once the pan is heated, place the steak directly onto the pan. You will see it shrink up immediately from the high heat. Close the oven and allow to cook for 5 minutes then flip it and cook it for 2 minutes.
  • For me, this is the ultimate way to sear a steak nicely without clouding my house up with smoke.
  • Place the steak on a sheet pan and cover with foil. Let the meat rest for 10 minutes.
  • Slice into it on a bias, against the grain, as we previously discussed.
  • Sprinkle with scallions and grab some chop sticks! Dinner is served.

TERIYAKI STEAK MARINADE

Steps:

  • Trim any fat and cube steak if desired. Place the meat in a glass bowl or zip top bag. Set aside.
  • Combine the soy sauce, water, oil, honey, Worcestershire sauce, garlic and ginger in a small bowl. Whisk until combined.
  • Pour sauce over the steak. Seal bowl or bag and place the in the refrigerator and allow to marinate for at least 30 minutes. Best when marinated for 4-6 hours, or overnight.
  • Cook steak as desired (notes below for cooking on grill). Let rest for 5 minutes, before serving. Slice against the grain. Serve while warm.
