This is a pretty easy recipe for a classic pesto sauce. It can be served with pasta for "Pasta & Pesto" or spread on toasted Italian bread or on sandwiches and salads... You can blend it into bread or muffin mix. You can make Pesto Pizza. You can even add heavy cream if you desire a "creamy pesto sauce". The key is to use only FRESH BASIL. Note: Pine nuts are AKA Pignoli Nuts

2 cups basil leaves (fresh leaves only & firmly packed 2 cups)
3/4 cup parmesan cheese (grated)
3/4 cup olive oil (I use Extra-Virgin)
3 garlic cloves
1/4 cup pine nuts

Steps:

  • Combine all ingredients in blender or food processor & cover.
  • Blend on medium speed about 3 minutes, stopping occasionally to scrape sides, until smooth.

1 clove of garlic
1 large bunch of fresh basil, (40g)
50 g pine nuts
3 tablespoons extra virgin olive oil
50 g Parmesan
optional:
1 cooked Jersey Royal or new potato

Steps:

  • Peel and bash the garlic in a pestle and mortar with a pinch of sea salt.
  • Pick the basil leaves and add with the pine nuts, and pound to a coarse paste.
  • Muddle in the extra virgin olive oil and finely grate and stir in the Parmesan, adding a splash of water if you like it a little runnier, then continue bashing and pounding until smooth.
  • Have a taste and season with salt and black pepper, if needed. For a lovely creamy finish, try crumbling in and stirring through a cooked Jersey Royal. Serve with grilled meat or fish, or simply stirred through pasta - delicious!

Lately pesto has become one of my favorite condiments to keep. Basil Pesto is an Italian delicacy. It is super easy to make, and you can use it in so many ways, making variations of dishes. My grandkids enjoy pesto pasta, my son's favorite is making pesto sandwiches, and I like salad and roasted vegetables with pesto. Pesto has a vibrant color and brightens up any dish you make. Basil is a very aromatic herb. I have basil plants in my backyard. Because basil is the main ingredient for this recipe, I am always prepared. This is also vegan and gluten free recipe.This recipe will make about 8 oz of Pesto.

½ cup toasted pine nuts
2 cup fresh basil leaves
½ cup spinach
1 tsp lemon juice
½ tsp salt
¼ tsp fresh black pepper
¼ cup olive oil

Steps:

  • In a food processor, pulse the basil, spinach, pine nuts, black pepper, lemon juice, and salt.
  • Blend until the mixture is well blended but still has some texture, pausing to scrape down the sides, as necessary.
  • Now add the olive oil in the food processor and pulse for a few seconds, scrape the sides, and pulse it again.
  • I like to use a rubber spatula to scrape the sides. Pesto is now ready.
  • Adjust the ingredients to your taste.

1/4-1/3 cup extra virgin olive oil, to taste
1/3 cup grated parmesan cheese OR 1/4 cup nutritional yeast. See Note 2
1/2 tsp salt, skip if using parmesan cheese
1/8 tsp ground black pepper
1 clove of garlic or more to taste. See note 3
The zest of one medium lemon and 2 tsp of freshly squeezed lemon juice (optional)

Steps:

  • Combine all the ingredients, except the olive oil, in the food processor. Pulse while drizzling the olive oil until you obtain a chunky sauce (do not over process. You don't want a smooth paste, pesto should have some texture)
  • Taste the pesto and add more olive oil, salt or cheese to your taste
